STRAWBERRY MARGARITA POPSICLES

Steps:

• Evenly divide the mashed strawberries between the popsicle molds. Sprinkle a small pinch of salt over strawberries.
• Top with margarita mix to the popsicle molds fill line. Freeze according to product recommendations.
• Once frozen enjoy on it's own or in a small glass of tequila with a bit of salt for sprinkling.

Steps:

• Arrange popsicle molds in a popsicle mold stand if using a Zoku, or ice pops mold insert if using a traditional popsicle mold. If you're using the zipper bags like I did, no set up is needed.
• Muddle your strawberries. You can read about how to muddle fruit in this post.
• Pour 1 1/2 cups sparkling water, lime juice, and tequila into a bowl.
• Make a simple syrup by warming the remaining sparkling water, honey, and strawberries. If you'd rather not heat on the stove, replace the sparkling water with hot water.
• Combine tequila lime mixture with simple syrup mixture, stir well.
• If your mold requires it, add popsicle sticks and freeze for 3 - 4 hours or overnight.
• Pour 1 1/2 cups sparkling water, lime juice, and tequila into a bowl.
• Make a simple syrup by warming remaining sparkling water and honey.
• Combine tequila lime mixture with simple syrup mixture, stir well.
• Freeze for 3 - 4 hours or overnight.

STRAWBERRY MARGARITA ICE POPS

Steps:

• In a blender add the lime juice, water, triple sec, tequila, and sugar; blend until the sugar has dissolved. Set aside 8 strawberry quarters and put the remainder into the blender; blend until the strawberries are pureed. Skewer a piece of the reserved strawberries onto the end of each ice pop stick. Pour the margarita into the ice pop molds, insert the skewered sticks, and freeze at least 4 hours or overnight.
• Unmold the ice pops and serve.
