STRAWBERRY MARGARITA ICE POPS

Strawberry Margarita Ice Pops image

If pressed for an answer, strawberries would be my favorite fruit, and I'd almost always choose a boozy beverage made with strawberry over, well...anything else. I'm also a huge tequila lover, which makes these pops a no brainer. Studded with lime slices and strawberries, these pops are the most refreshing thing ever on a hot sunny day. You know, this is one of those times when being a grownup is really awesome.

Provided by Jessica Merchant

Categories     dessert

Time 6h20m

Yield 10 ice pops

Number Of Ingredients 8

2 cups strawberries
1 cup sugar
1 cup fruit punch
1/2 cup fresh lime juice
1/3 cup silver tequila
2 tablespoons Grand Marnier
10 lime slices
Sea salt for sprinkling

Steps:

  • To make the fresh strawberry puree, puree the strawberries in a blender or food processor with a few tablespoons of water. Pour through a fine-mesh sieve and press with a spoon to release all the juice.
  • Combine the sugar and 1 cup of the strawberry puree in a saucepan over medium heat. Bring to a simmer, whisking so the sugar dissolves. Simmer for 1 to 2 minutes, then turn off the heat. Stir in the fruit punch, lime juice, tequila and Grand Marnier.
  • Fill each ice-pop mold with a lime slice. Pour the strawberry mixture over top. Freeze according to your ice-pop maker's directions, for at least 4 to 6 hours. Serve with a sprinkle of sea salt.

MOJITO ICE LOLLIES

Mojito ice lollies image

Wow your guests with these refreshing and zesty frozen cocktails, complete with a hint of mint and dash of rum...

Provided by Katy Gilhooly

Categories     Snack, Treat

Time 15m

Yield Makes 8 x 80ml lollies

Number Of Ingredients 5

100g caster sugar
small pack mint , leaves picked and torn
6-7 limes juiced and 2 zested (you need 150ml lime juice)
50ml white rum
300ml soda water

Steps:

  • Pour 100ml water in a small saucepan and bring to the boil. Remove from the heat, tip in the sugar and stir until dissolved. Add the mint leaves, return to the heat and simmer for 5 mins then remove and leave to infuse for 30 mins. (This can be made the day before and left in the fridge overnight to infuse).
  • Pour through a sieve into a jug, squashing the mint leaves with the back of a spoon to squeeze out all the juices. Add the rum, 125ml lime juice, lime zest and stir. Add enough soda water to bring the total volume up to 600ml. Taste the mixture - it should be sharp and sweet. Add the remaining 25ml lime juice if needed.
  • Pour the mixture into lolly moulds and freeze for 1 hr until the mixture is solid enough to hold the lolly sticks upright. Push the sticks 3/4 of the way into the lollies and return to the freezer for 6-8 hrs to freeze completely. To unmould, dip the outside of the lolly mould into hot water for 10 secs then use the sticks to pull each lolly out. The lollies can be kept wrapped individually in baking parchment in airtight bags in the freezer for up to 1 week.
