First Prize Strawberry Rhubarb Crisp image

I came across this recipe in a magazine, and with a few adjustments I was able to make it into a delicious crisp. It goes great with vanilla ice cream and one can also alter the recipe to make a mango raspberry crisp which is just as delightful! Optional: sprinkle the top with a handful of rolled oats and brown sugar.

1 cup rolled oats
1 cup all-purpose flour
½ cup brown sugar
½ cup butter, melted
2 cups chopped strawberries
2 cups chopped rhubarb
1 cup cold water
½ cup white sugar
1 tablespoon cornstarch

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix oats, flour, brown sugar, and butter together in a bowl; press mixture into the bottom of a 9-inch pie pan. Top with strawberries and rhubarb.
  • Stir water, white sugar, and cornstarch together in a saucepan. Bring to simmer, constantly whisking, until mixture bubbles and thickens; pour over fruit layer.
  • Bake in the preheated oven until bubbling, about 1 hour.

This easy strawberry rhubarb crisp with a coconut and oatmeal topping is the BEST healthy strawberry rhubarb recipe for spring and summer.

1 pound strawberries (hulled and quartered)
1 pound rhubarb (cut into 1/2-inch dice (about 4 or 5 stalks))
2 tablespoons all purpose flour
1/3 cup honey
1/2 orange (zested and juiced)
1 tablespoon vanilla extract
3/4 cup old-fashioned rolled oats
2/3 cup white whole wheat flour (or all purpose flour)
1/4 cup shredded sweetened coconut
1/4 cup light brown sugar
1 teaspoon cinnamon
1/4 teaspoon kosher salt
1/4 cup plain yogurt ((I use non-fat Greek))
1/4 cup cold unsalted butter (cut into small, thin pieces)
Vanilla ice cream (or yogurt for serving)

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees. Place the strawberries and rhubarb into a 9x9-inch or other similarly sized baking dish, then sprinkle the flour over the top. Add the honey, orange zest, orange juice, and vanilla extract. Stir gently to combine and evenly coat the strawberries and rhubarb.
  • In a large bowl, stir together the oats, white whole wheat flour, coconut, brown sugar, cinnamon, and salt.
  • Add the Greek yogurt and stir until the ingredients are somewhat moistened, then add the butter. Working quickly with your fingers, rub in the butter, until it is in small pieces about the size of your thumbnail (some pieces will be larger than others).
  • Break the topping mixture over the fruit, placing it so that the fruit is lightly and evenly covered (some fruit may show through).
  • Bake the crisp for 50 to 55 minutes, until the filling is bubbly at the edges and the top is light golden brown. Let rest for 5 to 10 minutes, the crisp will thicken as it cools. Serve warm, topped with vanilla ice cream or yogurt as desired.

This is a recipe I made using the bits of fruit I had in my fridge - about a pint of strawberries, a few stalks of rhubarb and a couple cups of sweet cherries. I weighed the total all of the fruit together, and it was about 1.75 lb. And then I (roughly) measured the amounts, once they were sliced. You can use any type of summer fruits or berries you want - cherries, raspberries, rhubarb, strawberries, blueberries even. I think the only thing is to be sure you don't have more than 1/2 lb of Strawberries, or you may end up with liquid-y fruit. If you do put more strawberries in, maybe increase the cornstarch by a couple extra teaspoons.

3 c chopped rhubarb, 1/2" pieces
2 c Sweet Cherries, halved and pitted
2 c hulled and quartered Strawberries, around 1 pint container
1/2 c Granulated Sugar
2 Tbls. Cornstarch
1 1/2 Tbls. Lemon Juice (about 1/2 lemon)
2/3 c AP Flour
1/2 c Brown Sugar (light or dark is fine)
2 Tbls. Granulated Sugar
1/2 tsp Kosher Salt
1/2 c (1 stick) Unsalted Butter, cut into 1/2" cubes
3/4 c Rolled Oats
1/2 c Sliced Almonds

Steps:

  • Preheat oven to 350F (Standard) or 335F (Convection, fan).
  • Place the cut fruits in a large bowl, then add the sugar, cornstarch and lemon juice. Stir until all of the sugar is dissolved. Set aside while you make the crisp.
  • In a medium bowl, whisk together the flour, brown sugar, white sugar, and salt.
  • Using a pastry cutter, 2 knives, or your fingertips, cut in the butter pieces until the largest are about pea-sized.
  • Add the oats and almonds, stir.
  • Pour the fruit into a 2-qt. Baking dish - I used a ceramic pie pan, but you could use an 8×8 or 9×9 baking dish instead.
  • Sprinkle crisp mixture over the top, covering all of the fruit.
  • Place crisp on a baking sheet (to catch any drips), and into the oven for 45-55 minutes, until fruit is bubbly and top is golden brown.
  • Cool at least 20 minutes prior to serving. Top with Ice cream or whipped cream, if desired.

In a measuring cup, dissolve the cornstarch in the orange juice and then mix it into the fruit. Pour the mixture into an 8 by 11-inch baking dish and place it on a sheet pan lined with parchment paper.
  • For the topping, in the bowl of an electric mixer fitted with the paddle attachment, combine the flour, the remaining 1/2 cup granulated sugar, the brown sugar, salt, and oatmeal. With the mixer on low speed, add the butter and mix until the dry ingredients are moist and the mixture is in crumbles. For the Topping:
1 cup unbleached all-purpose flour
½ cup packed light brown sugar
¾ cup old-fashioned rolled oats
2 tablespoons yellow cornmeal
2 teaspoons ground cinnamon
¼ teaspoon fine sea salt
8 tablespoons (1 stick) cold unsalted butter, cut into ½-inch cubes
1 tablespoon canola oil
For the Filling:
2 cups strawberries
4 cups 1-inch pieces peeled rhubarb
1 ¼ cups turbinado sugar
3 tablespoons unbleached all-purpose flour
1 tablespoon cornstarch

Steps:

  • Position a rack in the lower third of the oven and preheat the oven to 350°F. Butter a 9-inch deep-dish pie plate and line a baking sheet with parchment.
  • To make the topping: In a medium mixing bowl, stir together the flour, brown sugar, rolled oats, cornmeal, cinnamon, salt, butter, and oil with a fork until completely blended. Set aside. To make the filling: In another medium bowl, combine the strawberries and rhubarb with the turbinado sugar, flour, and cornstarch, stirring to coat the fruit.
  • Pour the fruit mixture into the prepared pie plate. Sprinkle the topping evenly over the fruit mixture. Place the pie plate on the prepared baking sheet. Bake for 40 to 45 minutes, until the fruit is bubbling around the edges and the top is golden brown and crispy. Let cool slightly.
  • Serve the crisp warm. It is best served the same day, but it can be covered with plastic wrap and refrigerated for up to 3 days.

3 tablespoons cornstarch
1 cup cold water
1 (21 ounce) can cherry pie filling
½ teaspoon almond extract
4 cups chopped fresh rhubarb
1 cup all-purpose flour
1 cup rolled oats

¼ teaspoon salt
½ cup margarine or butter
¼ cup finely chopped pecans or walnuts

Steps:

  • In a saucepan over medium heat, stir together the cornstarch and sugar. Stir in the water. Cook, stirring constantly, until thick and bubbly. Stir in the cherry pie filling and almond extract. Set aside to cool.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the flour, oats, brown sugar and salt. Cut in margarine until the mixture is evenly crumbly.
