Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Saute chicken in bacon grease, with salt and pepper, until browned. Discard bacon and set chicken aside.
- To the pan add butter and melt; saute onion, garlic and mushrooms until onions are transparent. Stir in 1 cup wine, brown sugar and vinegar. Cook, stirring, until hot and bubbly; add chicken and carrots.
- Reduce heat to medium and cook 30 minutes, until chicken is well cooked and carrots are tender crisp.
- Blend together 1 tablespoon wine and cornstarch. Stir into chicken and mix well to thicken.

- Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Dredge the chicken pieces in the flour to coat lightly.
- In a large heavy saute pan, heat the oil over a medium-high flame. Add the chicken pieces to the pan and saute just until brown, about 5 minutes per side. If all the chicken does not fit in the pan, saute it in 2 batches. Transfer the chicken to a plate and set aside. Add the bell pepper, onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes. Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, broth, capers and oregano. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken is just cooked through, about 30 minutes for the breast pieces, and 20 minutes for the thighs.
- Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce. Spoon the sauce over the chicken, then sprinkle with the basil and serve.

- Preheat oven to 375F.
- Butterfly chicken breasts (some stores will do this for you at the meat counter) and set aside. Butterflying is cutting the piece of meat in half but leaving the end portion uncut (making it look like an open book). You can pound the chicken between plastic to make it flatter if you need/want to. Check out Eat Simple Food's video showing you how to butterfly chicken. Season the chicken with salt and pepper and set aside open faced.
- Bring a medium sized pan to medium high heat and add olive oil to lightly coat the pan. Add the chopped onions and cook ~ 3-4 minutes or until onions are translucent.
- Add minced garlic and cook an additional 1-2 minutes or until fragrant.
- Add spinach and cook an additional 2-3 minutes or until wilted.
- Spoon inside the butterflied chicken and lightly fold over. You will not need string or toothpicks to hold this together - just a gentle touch.
- Bring a medium sized pan to medium high heat and add olive oil to lightly coat the pan. Add the chopped onions and cook ~ 3-4 minutes or until onions are translucent.
- Add minced garlic and cook an additional 1-2 minutes or until fragrant.
- Add the crushed tomatoes and seasoning.
- Bring to a boil, reduce heat, and simmer uncovered on low for ~ 20 minutes. Taste and add more seasoning, salt, and pepper as desired.
- Transfer the sauce to a large baking dish and place the chicken on top of the sauce.
- Top chicken with fresh Mozzarella slices.
- Bake for ~25-30 minutes or until internal temperature of chicken reaches 165F and juices run clear. The sauce should be hot and bubbling. Turn the oven to broil for 2-3 minutes (watching carefully) if your cheese is not browning.
- Add spaghetti to boiling salted water and cook ~ 10-12 minutes or until desired doneness. Serve over spaghetti and garnish with basil. Happy Eating! Beckie

- Coat a large, wide pot with oil and set over high heat. Sprinkle the chicken with salt and cook to brown, working in batches if needed. Remove the chicken to a plate and discard most of the excess fat in the pan.
- Reduce the heat to low and add 1 tablespoon oil, if needed, to coat the bottom of the pan. Add the onions and crushed red pepper, then season with salt, and cook to sweat the onions, 8 to 10 minutes. Add the garlic and sweat for 1 to 2 minutes. Add the red and yellow peppers, and cook until soft, 2 to 3 minutes. Add the mushrooms, season with salt and cook until soft. Add the white wine and cook to reduce by half.
- Return the chicken to the pan and add the tomatoes; taste for seasoning and adjust if needed. Add the bay leaves and thyme. Bring to a boil and reduce to a simmer. Partially cover the pot and simmer for 20 to 30 minutes. Check the sauce periodically and add water as needed; the level of liquid should be about even with the chicken.
- Remove the chicken from the pot and place on a pretty serving platter. Taste the sauce for seasoning, and adjust if needed. Skim the surface of the sauce if excessively greasy, and remove the thyme bundle and bay leaves. Spoon the sauce over the chicken to serve .

- Need Ziplock gallon freezer bag, toothpicks, large oven proof skillet and lid.
- Peal and crush garlic, dice, place into small bowl, salt and cover with olive oil.
- Start the pasta water.
- Place chicken breasts one at a time into a gallon Ziplock bag with a little water, use smooth head of meat mallet and pound chicken into rectangles about 1/8 in thick.
- With flattened chicken breasts arranged in a row, add dried tomatoes, basil, garlic, and Parmesan to each breast. Roll up each breast and use toothpicks to secure each roll.
- In a small covered bowl, microwave mushrooms for 1-1/2 minutes, pour off water.
- Preheat oven to 375°F.
- In large skillet over medium heat, heat olive oil, add chicken rolls, add chardonnay, cook chicken rolls about 6 minutes per side. Remove chicken rolls.
- Add onion rings, crushed red pepper, and red pepper slices to skillet and cook until tender. Add canned tomatoes, mushrooms, merlot, and Italian seasoning and simmer for 5 minutes.
- Add chicken rolls to skillet, cover, and place into oven for about 20 minutes.
- Cook pasta.
- Remove skillet from oven and remove toothpicks from chicken rolls.

- Liberally season chicken thighs with salt and pepper.
- In a 4-quart jumbo cooker, heat 1 tablespoon of olive oil over medium-high heat. Add chicken and cook 3-4 minutes a side, until lightly browned. Transfer to a plate.
- Add another tablespoon of olive oil to the skillet before adding the mushrooms. Lightly season with salt and pepper, and cook until mushrooms begin to brown, about 5 minutes.
- Once browned, remove mushrooms to the same dish with the reserved chicken thighs.
- Add the final tablespoon of olive oil followed by the sliced onion and pepper. Season with salt and pepper, and cook over medium heat until they begin to brown, about 5-7 minutes.
- Create a well in the middle of the onion-pepper mixture and add the tomato paste. Cook out the tomato paste for about 1 minute before mixing it together with the onions and peppers.
- Add garlic, oregano, red pepper flakes, and rosemary. Mix them into the onion and peppers before adding the red wine. Use the moisture from the red wine to scrape off any stuck-on bits from the bottom of the pan.
- Let wine reduce by half before adding the diced tomatoes and chicken stock. Return to a simmer.
- Place chicken and mushrooms on top of the simmering sauce, being sure to also add any accumulated juices that may have collected. Sprinkle with chopped parsley.
- Cook while covered for 12 minutes or until chicken's internal temperature reaches 165˚F (75˚C).
- Serve chicken and sauce with a side of pasta or bread.

- Rinse and pat the chicken pieces dry with paper towels, then coat with flour in a bowl or a resealable plastic zipper bag. Heat the peanut oil in a large skillet over medium heat, and brown the chicken on all sides until golden brown, about 15 minutes. Remove the chicken, and set aside in a bowl.

- Heat olive oil in a large skillet over medium heat. Add mushrooms, onion, and garlic; sauté until onions are translucent, about 5 minutes.
- Add sherry, capers, oregano, and basil; cook until 1/2 of the sherry has cooked out. Add marinara sauce. Stir in chicken and cook until sauce has reduced by a third, 5 to 7 minutes.
- While the sauce is reducing, set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Place split hoagie rolls on a baking sheet and top each with a slice of provolone cheese.
- Broil until cheese is melted and rolls are toasted, 1 to 2 minutes.
