I love Latin food so I created this recipe that combines wonderful spices and fresh ingredients. This is a traditional turkey recipe with a healthier twist because it uses chicken sausage instead of chorizo. -Melissa Lauer, San Antonio, Texas

1 medium green pepper, finely chopped
1 medium onion, finely chopped
2 garlic cloves, minced
2 teaspoons ground coriander
1 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1 pound uncooked chicken sausage links, casings removed
1 fresh boneless turkey breast (4 pounds)
1/4 teaspoon salt
1/4 teaspoon pepper
MOJO SAUCE:
1 cup orange juice
1/2 cup fresh cilantro leaves
1/4 cup minced fresh oregano or 4 teaspoons dried oregano
1/4 cup lime juice
4 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1 cup olive oil

Steps:

  • In a bowl, combine the first 6 ingredients. Crumble sausage over mixture and mix well., With skin side down, pound turkey breast with a meat mallet to 1/2-in. thickness. Sprinkle with salt and pepper. Spread sausage mixture over turkey to within 1 in. of edges. Roll up jelly-roll style, starting with a short side; tie at 1-1/2-in. to 2-in. intervals with kitchen string. Place in a 5-qt. oval slow cooker., In a blender, combine the first 9 sauce ingredients; cover and process until blended. While processing, gradually add oil in a steady stream. Pour over turkey., Cover and cook on low for 5 hours or until a thermometer inserted in center reads 165°. Remove from slow cooker; cover and let stand for 10 minutes before slicing. Discard string., Meanwhile, skim fat from cooking juices; transfer juices to a small saucepan. Bring to a boil; cook until liquid is reduced by half. Serve with turkey.

1 (10 to 12-pound) turkey, with giblets removed
1 quart chicken broth
2 ounces dried mushrooms
1 cup chopped onion
1 cup chopped celery
1 cup chopped green pepper
1 tablespoon vegetable oil, plus extra for rubbing on turkey
1 tablespoon kosher salt, plus extra for seasoning turkey
3 cups Challah bread, cut into 1/2-inch cubes (from approximately 4 to 5 slices)
4 ounces unsweetened dried cherries, approximately 1 cup
2 ounces chopped pecans, approximately 1/2 cup
2 whole eggs, beaten
2 teaspoons dried rubbed sage
2 teaspoons dried parsley
1/2 teaspoon freshly ground black pepper, plus extra for seasoning chicken

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the turkey into a deep, high-sided bowl on its end with the stuffing end up. Set aside.
  • Heat the chicken broth in the microwave in a large microwave-proof container. Place mushrooms in a glass bowl and pour heated broth over them. Cover and allow to sit for 35 minutes.
  • In a large mixing bowl toss the onion, celery, and green pepper with the oil and salt. Place the vegetables on a sheet pan and roast for 35 minutes. During the last 10 minutes of cooking, spread the cubed bread over the vegetables, return to the oven, and continue cooking.
  • Drain mushrooms, reserving 1 cup of liquid. Chop the mushrooms and place in a large
  • microwave-proof bowl with the vegetables and bread, reserved chicken stock, cherries, pecans, eggs, sage, parsley and black pepper. Stir well in order to break up pieces of bread. Use your hands to combine, if necessary. Heat the stuffing in a microwave on high power for 6 minutes.
  • While the stuffing is heating, rub the bird with oil. Working quickly, place the stuffing into the cavity of the turkey to avoid losing heat. Place the turkey into a roasting pan, on a rack, and season with salt and pepper. Place the roasting pan on the middle rack of the oven. Roast for 45 minutes and then reduce the heat to 350 degrees F and cook for another 60 to 75 minutes or until the bird reaches an internal temperature of 170 degrees F. Serve immediately.

Mojo Turkey image

This recipe nods to what happened when Cuban culture drifted onto the Thanksgiving tables of South Florida, with a bird dressed in a marinade of sour oranges (a mixture of orange and lime juice works as well) mixed with a lot of garlic and oregano. Serve the bird with black beans and white rice on the side - and a Key lime pie for dessert.

1 12- to -14- pound turkey, giblets and neck removed
2 heads of garlic, peeled and chopped
2 tablespoons ground cumin
2 tablespoons kosher salt, plus more to taste
2 tablespoons black pepper, plus more to taste
2 cups sour orange juice, or 1 cup fresh orange juice and 1 cup fresh lime juice
1/4 cup extra-virgin olive oil
1/4 cup fresh oregano leaves, roughly chopped
1 orange, cut into quarters
1 lime, cut into quarters
1 small yellow onion, peeled and cut into quarters

Steps:

  • Rinse turkey well in cold water and pat very dry with paper towels.
  • Make the marinade: Combine garlic, cumin, salt and pepper in a large mixing bowl and mash the mixture together with the back of a kitchen spoon to make a kind of paste. Stir sour orange juice (or orange and lime juices) and oil into the paste and whisk to combine. Add oregano leaves and mix again. Reserve 1/2 cup of marinade and put aside.
  • Put turkey in a roasting pan that can fit in the refrigerator and cover with remaining marinade, making sure to get a lot of it into the turkey's open cavity. Cover and refrigerate overnight, or for at least a few hours. Baste a few times with marinade.
  • When ready to cook, heat oven to 450 degrees. Remove turkey from marinade and place on a clean cutting board. Discard marinade and clean roasting pan well. Return turkey to roasting pan, tuck the tips of the wings under the bird and shower it with salt and pepper. Place orange, lime and onion quarters in the turkey's cavity, then truss its legs together with cotton string. Roast turkey, uncovered, in the oven for 30 minutes.
  • Reduce oven heat to 325 degrees. Baste turkey with pan juices, and add remaining marinade to the pan. Continue roasting turkey, basting every 30 minutes and tenting it with foil if the skin is turning too dark, until an instant-read thermometer inserted into the thickest part of the thigh without touching bone registers 165 degrees, approximately 2 hours 45 minutes to 3 hours more. Transfer to a cutting board or platter and allow to rest at least 30 minutes before carving.

8 Treasure Stuffed Turkey with Shiraz-Honey Jus image

Canola oil
15- to 20-pound free-range, and/or organic turkey
2 cups long grain rice
2 cups glutinous rice
1/4 cup dried scallops
2 Chinese sausage, lap cheong, 1/4-inch slices
1 large yellow onion, diced 1/4-inch
2 carrots, diced 1/4-inch
1/2 cup celery, diced 1/4-inch
1 tablespoon minced ginger
1 tablespoon minced garlic
2 cups sliced shiitakes
1 cup lotus seed (soaked in cold water for 3 to 4 hours), then drained
1/2 cup diced bamboo shoots (buy fresh or if canned, soak in cold water for 1 hour and rinse well)
1/2 cup fresh water chestnuts, diced 1/4-inch (substitute with jicama if not available)
1/3 cup small smoked oysters, drained
Salt and black pepper, to taste
4 minced shallots
2 cups shiraz wine
3 tablespoons honey
2 cups chicken stock

Steps:

  • Preheat oven to 550 degrees (max). Rub oil on the skin and season the inside and outside with salt and pepper. Place in large roasting pan and roast in oven until brown, about 30 minutes. Meanwhile, in a rice cooker, wash rice until clear, fill water to Mt. Fuji, add scallops, sausage and cook. When fully cooked (45 minutes), break up scallops and spread rice out to cool. In a large wok coated with oil, stir fry onions, carrots, celery, ginger and garlic for 1 minute. Add shiitakes, lotus, bamboo shoots and water chestnuts, and stir-fry for 3 to 4 minutes. Add oysters and mix in. Set aside to cool. Mix with rice and check for seasoning.
  • Turn oven down to 275 degrees. Pull turkey out and stuff with rice mixture. (There will be extra stuffing which should be heated separately in a covered dish.) Place turkey back in oven, cover loosely with foil to prevent burning, and roast 3 to 5 hours more 20 minutes per pound, until juices run clear and legs move around easily.
  • For jus: Add shallots to pan and deglaze pan with wine. Add honey, stock and check for seasoning, reduce by 20 percent and reserve warm.

1 (12 ounce) box jumbo pasta shells
2 pounds ground turkey
1 (7 ounce) can chopped green chiles
¾ cup water
1 (1.25 ounce) package taco seasoning
1 cup salsa
1 ½ cups shredded Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta shells in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine turkey, chopped green chiles, water, and taco seasoning in a large saucepan; cook and stir until turkey is cooked through and moisture is absorbed, 8 to 10 minutes. Remove from heat.
  • Spread salsa in the bottom of a 9x13-inch baking pan.
  • Stuff each pasta shell with some of the turkey mixture and arrange on top of the salsa in the baking dish. Sprinkle Cheddar cheese on top. Cover pan with aluminum foil.
  • Bake in the preheated oven until cheese is melted and bubbly, about 30 minutes.

Yucatán Stuffed Turkey Breast with White Sauce image

2 cups Yucatán White Sauce or 3 cups White Sauce with Tomatoes (see Salsas, Sauces, and Condiments)
5 pounds turkeys breast on the bone (1 turkey)
2 cloves garlic (large), mashed
1 1/2 teaspoons salt, or to taste
1/2 teaspoon white pepper
1 tablespoon white wine vinegar
STUFFING
1/2 pound fresh ground pork
1/2 teaspoon dried oregano (Mexican variety preferred), crumbled
1/2 cup chopped pimiento-stuffed green olives
1/2 cup currants
1/4 cup chopped slivered almonds
2 tablespoons drained capers
4 cups day-old baguette bread (1/2-inch cubes)
1 cup turkey or chicken broth
1 tablespoon vegetable oil

Steps:

  • 1. Prepare the preferred sauce for the turkey. Cover and refrigerate if made ahead. Trim excess fat from the turkey. Make a paste of the garlic, 1 teaspoon of the salt, pepper, and vinegar. Rub the mixture over the turkey and under the skin. Set aside. 2. Preheat the oven to 350°. Line a large roasting pan with aluminum foil. Set aside. To prepare the stuffing, in a medium skillet over medium heat, cook the pork and oregano, stirring to break up the lumps, until no longer pink, about 3 minutes. 3. Transfer to a large mixing bowl. Add the olives, currants, almonds, capers, bread, and remaining 1/2 teaspoon of salt. Mix well. Add the broth and gently toss together until moist. Mound the stuffing mixture in the center of the prepared baking pan. Place the turkey on top of the stuffing and brush with oil. Fold the foil around the outer edges of the stuffing to prevent over browning. Cover the pan completely with another sheet of aluminum foil. 4. Place in the oven and roast 1 hour. Remove the foil cover, reduce oven heat to 325° and roast about 45 minutes, or until golden brown and an instant-read thermometer registers 165° to 170° and juices run clear when the meat is pierced with the tip of a knife. 5. Transfer turkey to a cutting board. Reheat the reserved sauce. Put the stuffing on a large platter. Slice the turkey and arrange overlapping on the stuffing.
