EASY FRIED SPINACH
This is a dish I stumbled across while I was in China and tried to emulate. Of all my various original recipes, this is the one of my families favorites. It is simple, requires few ingredients and is easy and fast.

Steps:
- Melt the butter with the canola oil in a large skillet over medium heat until it stops bubbling. This allows the water from the butter to evaporate. Add the garlic; cook and stir for about 2 minutes, until it is just beginning to brown. Put in the spinach leaves and cook for about 5 minutes while stirring, until the leaves are dark and are about 1/4 of their original size.

SUAN RONG BO CAI (CHINESE GARLIC-FRIED SPINACH)
This simple vegetable dish is available in restaurants and homes across China. In spice-loving regions of China, several dried red chili pods are added with the garlic.

Steps:
- Wash spinach and chop into 5-cm segments.
- In wok, bring some water to a boil. Add spinach, blanch briefly, remove, and drain.
- Empty water from wok, heat to dry, add oil and swirl to heat well. Add garlic and toss just a moment until fragrant but not burned. Add spinach, salt, and MSG, tossing after each addition.
- Turn off heat, drizzle with sesame oil, transfer to platter, and serve as part of a Chinese meal. (For a Chinese meal, serve rice, a soup, and one dish per person, selecting a balanced variety of dishes.).

STIR-FRIED SPINACH WITH GARLIC

- In a large wok over medium heat, heat oil. Stir-fry salt and spinach for 1 minute. When spinach has wilted add sugar and garlic and stir-fry 2 to 3 minutes more. Plate spinach, serve warm or cold.
STIR-FRIED SPINACH WITH GARLIC
"Spinach has often been regarded with disdain in the west, probably because it is usually overcooked. This is a delicious, time-honored, southern Chinese recipe. The spinach is quickly stir-fried and then seasoned. It is very simple to prepare." Ken Hom from CHINESE COOKING. Steps:
- Wash the spinach thoroughly.
- Remove all stems leaving just the leaves.
- Heat the wok (or large frying pan) until it is VERY hot.
- Add the oil.
- When the oil it is very hot and slightly smoking, add the garlic and salt.
- Stir-fry both for 10 seconds.
- Add the spinach and stir-fry for about 2 minutes to coat the spinach leaves thoroughly with the oil, garlic and salt.
- When the spinach has wilted to about one-third of its original size, add the sugar.
- Continue to stir-fry for another 4 minutes.
- Transfer to a plate and pour off any excess liquid.
- Serve hot or cold.
SUAN RONG JIANG DOU (GARLIC-FRIED GREEN BEANS)
Taken from Ji Pin Su Shi (Best Vegetable Dishes), a 30-cent, 5-in-square, paperback cookbook from Wal-Mart in China. Simple, home-style Chinese fare. Chinese cooks are expected to determine the proportions of condiments and seasonings. Everything is "ge shi liang"--to taste. I've suggested amounts, but if they don't seem right, just trust your own tastebuds. China has several varieties of green beans, and they go by different names in different parts of China. I think 'jiang dou' may refer to the yard-long beans, but any variety should taste good in this recipe. The amount of garlic listed strikes me as over the top. Try it if you dare. I'll be using less.

STIR-FRIED SPINACH IN GARLIC SAUCE

- In a glass measure stir together the broth, the soy sauce, the Scotch, the vinegar, the cornstarch, and the sugar until the cornstarch is dissolved. In a wok or large deep heavy skillet heat the oil over high heat until it is hot but not smoking, in it stir-fry the garlic and the gingerroot for 30 seconds, or until the garlic is golden, and add the spinach in batches, stir-frying until each batch is wilted slightly before adding each new one. Stir the cornstarch mixture, add it to the wok, and stir-fry the mixture mixture for 1 to 2 minutes, or until the spinach is wilted evenly and the sauce is thickened. Serve the spinach with the rice.
FOREVERMAMA'S AUTHENTIC POT STICKERS (NORTHERN CHINESE)
This is an authentic recipe derived from the North of China. This was given to me by a culinary professor who studied cooking in China. They are Truly Delicious and abundant with flavor. I used to make them at least once a month. Because of a very busy life, I haven't made them in a while, but I'm placing it back on my "to do".

- Combine the pork (or chicken), cabbage, rice wine, soy sauce, salt, pepper, scallions, sesame oil, sugar and stock. Mix well and set aside.
- Once you remove wrappers from its packaging, keep them covered with a damp dish towel (this will prevent them from drying out -- they need to remain moist for a successful result).
- Place 4 wrappers at a time on a work surface. Place about 1 teaspoons of filling in the center of each wrapper and fold in half. Moisten the edges with water and pinch together with your fingers, making sure there are no open gaps. Pleat around edges, pinching to seal well.
- Transfer the dumplings to a floured sheet pan and keep covered with a damp towel until you have finished stuffing all the dumplings.
- Heat a large skillet over high heat until it is hot. Add the peanut oil (you may need to use more than 1 T) and place the dumplings, flat side down in the pan. Turn down the heat and cook about 2 minutes or until they are lightly browned (you do not need to turn these over). (You may need 2 skillets). Add the 2/3 cup of water; cover the pan tightly and cook for 10-15 minutes over low heat until most of the liquid has been absorbed. Uncover the pan and continue cooking another 2 minutes. Remove the dumplings to a serving platter and serve with the Dipping Sauce.
- Dipping Sauce:.
- Mix all ingredients together. Taste for seasoning and correct if necessary. (The amounts given are approximate, as I normally eye-ball it).
- NOTE: Though the authentic recipe uses pork, I have used chicken breast as well which I ran through the food processor.
- The serving size of 4-5 is approximate because it all depends if you serve this as an appetizer versus a main meal.
SUAN RONG HE LAN DOU (GARLIC-FRIED SNOW PEAS)
This recipe comes from 'Ji Pin Su Cai' (Best Vegetable Dishes), a 30-cent, 5-inch-square, paperback cookbook from Wal-Mart in China. It's simple home-style Chinese cooking. Chinese cookbooks assume you will know how much of each condiment and seasoning to add, so most of the ingredients are listed 'ge shi liang'--to taste. I've suggested amounts, but you can adjust according to your own preference.

- Cut onion and ginger lengthwise into tiny slivers. Mince garlic.
