SUGAR COOKIES WITH ROYAL ICING

Sugar Cookies with Royal Icing image

Upgrading your holiday cookie game has never been more delicious thanks to this classic sugar cookie and royal icing recipe. Recipe developed by Food Network Kitchen.

Provided by Food Network Kitchen

Categories     dessert

Time 2h30m

Yield 24 to 36 cookies and about 2 1/4 cups of icing

Number Of Ingredients 8

2 1/2 cups cake flour (not self-rising), plus more for dusting
1 teaspoon baking powder
1/4 teaspoon salt
2 sticks unsalted butter, at room temperature
3/4 cup sugar
1 large egg
1 teaspoon pure vanilla extract
Royal icing, for decorating, recipe follows

Steps:

  • Sift the cake flour, baking powder and salt onto a piece of parchment paper or into a medium bowl; set aside. Beat the butter and sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 5 minutes. Add the egg and vanilla and beat until incorporated. Reduce the mixer speed to low and beat in the flour mixture in 2 batches until just incorporated. Divide between 2 pieces of plastic wrap; shape into disks. Wrap and refrigerate until firm, at least 1 hour. (The dough can be frozen for up to 1 month; thaw overnight in the refrigerator before rolling.)
  • Line 2 baking sheets with parchment paper. Working with 1 disk at a time, roll out the dough on a floured surface, dusting with flour as needed, until about 1/8 inch thick. Cut out shapes with 2-to-4-inch cookie cutters; arrange 2 inches apart on the prepared baking sheets. (If the dough becomes too soft as you work, return to the refrigerator until firm.) Gather the scraps and refrigerate until firm; reroll once to cut out more cookies. Chill the cutouts 30 minutes.
  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Bake, switching the pans halfway through, until the cookies are slightly puffed and just golden, 13 to 15 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely before icing.
  • Whisk one 1-pound box confectioners' sugar and 2 tablespoons meringue powder in a large bowl. Add 5 tablespoons water and beat with a mixer on medium-high speed until soft glossy peaks form, adding up to 1 more tablespoon water if necessary. Cover the bowl with a damp paper towel and plastic wrap until ready to use to prevent the icing from drying out.

BUTTER ICING FOR SUGAR COOKIES

Butter Icing for Sugar Cookies image

Here's a terrific recipe for icing sugar cookies, no raw egg whites. For any recipes that require egg whites, you can purchase dried, powdered egg whites at cake-decorating supply stores that can be substituted in most recipes calling for the regular raw egg whites, then you can still lick the bowl!

BASIC SUGAR COOKIES

Basic Sugar Cookies image

Sugar cookies are a buttery classic that make a delicious anytime treat. Enjoy your sugar cookies plain, or decorate them with icing to make them festive. This recipe is a favorite of Martha's, who likes to add one tablespoon cognac alongside the egg and vanilla, after creaming together the butter and sugar.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Time 2h

Yield Makes 32

Number Of Ingredients 10

2 cups all-purpose flour, plus more for rolling
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Assorted candies, sprinkles, or colored sugars, for decorating (optional)
1 1/2 cup confectioners' sugar
3-4 tablespoons milk, water, or lemon juice

Steps:

  • In large bowl, whisk flour, baking powder, and salt. With an electric mixer, cream butter and sugar until light and fluffy. Beat in egg and vanilla. With mixer on low, gradually add flour mixture; beat until combined. Divide dough in half; flatten into disks. Wrap each in plastic; freeze until firm, at least 20 minutes, or place in a resealable plastic bag, and freeze up to 3 months (thaw in refrigerator overnight).
  • Preheat oven to 325 degrees. Line baking sheets with parchment. Remove one dough disk; let stand 5 to 10 minutes. Roll out 1/8 inch thick between two sheets of floured parchment, dusting dough with flour as needed. Cut shapes with cookie cutters. Using a spatula, transfer to prepared baking sheets. (If dough gets soft, chill 10 minutes.) Reroll scraps; cut shapes. Repeat with remaining dough.
  • Bake, rotating halfway through, until edges are golden, 10 to 18 minutes (depending on size). Cool completely on wire racks. To ice cookies, spread with the back of a spoon. Let the icing harden, about 20 minutes. Decorate as desired.
  • For the icing, sift confectioners' sugar into a small bowl. Whisk in milk, water, or lemon juice, 1 tablespoon at a time, until smooth and thick enough to coat the back of a spoon. If too thin, whisk in more sugar; if too thick, add more liquid. Spread over cookies with back of a spoon. Add other decorations, if desired. Let the icing harden, about 20 minutes.

ROYAL ICING FOR SUGAR COOKIES

Royal Icing for Sugar Cookies image

If you're decorating cookies using our royal icing for sugar cookies and have a compromised immune system, we recommend instead using meringue powder, found in the baking aisle of most markets, instead of raw egg whites.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Yield Makes 2 1/3 cups

Number Of Ingredients 2

1 box confectioners' sugar (1 pound)
5 tablespoons meringue powder, or 2 large egg whites

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, combine sugar and meringue powder. Mixing on low speed, add a scant 1/2 cup water. For a thinner consistency, usually used for flooding, add more water. A thicker consistency is generally used for outlining and adding details. Mix until icing holds a ribbonlike trail on the surface of the mixture for 5 seconds when you raise the paddle.

EASY SUGAR COOKIE ICING

Easy Sugar Cookie Icing image

Of all the types of cookie icing, our thinned royal icing recipe is perfect for covering and decorating cut-out sugar cookies. Also known as flow-in icing or flood icing, this recipe dries icing to a smooth finish. Unlike softer cookie icings, thinned royal icing is durable once it sets, making it ideal for flooding and decorating sugar cookies. This recipe makes for the perfect Christmas cookie icing and is easy enough for bakers of all ages.

Provided by Erika

Categories     Dessert

Time 20m

Number Of Ingredients 4

3 Tablepoons Meringue Powder
4 Cups Powdered Sugar ((Confectioners' Sugar))
5 Tablespoons Warm Water
Gel Food Coloring ((Optional))

Steps:

  • Beat all ingredients together until the icing becomes thick, shiny and smooth. 5-8 minutes at low speed with a heavy-duty mixer, 8-10 minutes at high speed with a handheld mixer.
  • Use medium consistency icing to make outlines. Add 1/8 tsp water for every 1/2 cup of stiff icing base. Use a flat utensil such as a small silicone spatula, angled spatula or straight spatula to mix. Stir slowly using a figure 8 motion until reaching soft or medium peaks. Avoid beating or mixing vigorously. Ice the outline of each cookie using a piping bag. This consistency is also great for detailed cookie decorating.
  • Use thin consistency icing for covering a cookie. Add 1/2 teaspoon of water for every 1/2 cup of base icing. Use the same mixing instructions for a medium consistency. Flood the inside of each cookie using a piping bag.
  • To check for correct thin consistency, take some icing on a spatula and drop it back down into the bowl. If it sinks after a full count of 10, then the thin consistency icing is correct. If not, add a couple drops of water at a time to your icing until reaching the proper consistency.
  • Add food coloring using a toothpick. It's best to color your icing before diluting it to flooding consistency, as liquid coloring may contribute to watering down the consistency.
  • Add additional flavor with liquid flavorings like vanilla extract or almond extract with 1/4 teaspoon at a time. Taste as you go until you reach the desired flavor. Like coloring, add these flavors before thinning the icing.
