So easy to put together, and great for those of us who can't have sugar! A good friend of mine put this together for me since I can't have sugar, and I HAD to walk out with the recipe!

Steps:
- Spray your crock pot with cooking spray.
- Mix dry ingredients in a large bowl.
- Stir in peaches, then put the mixture in the crock pot.
- Cook low for 4-6 hours.

- Whisk together 1 cup flour, sugar, baking powder, cinnamon and salt. In another bowl, whisk together egg, milk and melted butter; add to dry ingredients, stirring just until moistened (batter will be thick). Spread onto bottom of a greased 5-qt. slow cooker., Combine peaches, the remaining 1/4 cup flour, brown sugar, lemon juice and vanilla; spoon over batter. Cook, covered, on high until peach mixture is bubbly, 1-3/4 to 2 hours. If desired, serve with vanilla ice cream.

- Lightly spray the inside of a slow cooker with cooking spray.
- Mix flour, oats, butter, brown sugar, white sugar, and cinnamon together in a large bowl.
- Layer peaches in the bottom of the prepared slow cooker. Sprinkle the flour mixture over the peaches.
- Cover and cook on Low until peaches are bubbly, 4 to 6 hours.

Steps:
- In a bowl, mix together peaches, cinnamon, and brown sugar, until all the peaches are coated.
- Dump peaches into slow cooker.
- Sprinkle yellow cake mix over peaches, covering all the peaches. Use the entire box of cake mix (make sure you are using the dry cake mix - don't follow the instructions on the box to make cake batter).
- Slice the butter into small pieces and lay over the cake mix. The entire dry cake mix should be covered in sliced butter.
- Cook on high for four hours, or until the cake turns golden brown.
- Serve warm with ice cream and enjoy!

SUGAR FREE FRESH PEACH COBBLER
I was trying to "calorie and sugar" down an old favorite and this is the result! Let me just add that hubby and I put a big dent in this dish tonight! Enjoy! Notes: You can substitute fresh/frozen/canned peaches, cherries, blueberries, pineapples, apples, etc. The list and combinations are endless. You can also substitute margarine as my mother always did too.

- - Put fruit in bottom of 9x13-inch pan.
- -Mix together flour, Splenda, and butter until it resembles a course meal (cut in with pastry knife or fork).
- -Sprinkle on top of fruit. Because whole wheat pastry flour can be grainier than all purpose, I melted 1/2 stick of butter and poured over topping for added moisture.

- Turn your oven to 100°C and put the assortment of jars in for 30 minutes to sterilise. The lids can be sterilised in a container filled with boiling water.
- In a saucepan, lightly stew peeled, sliced or, if they are freestone, halved peaches in enough water so that it comes to half-way up the level of fruit. Bring to a simmer, but be careful not to overcook them. They are ready when the fruit is heated all the way through, about 5-7 minutes.

- Now overflow the jar by adding more hot juices (or boiling water if you need it) and screw the lids on tightly. Before long, you should hear a “pop” and the dome on the lid will have deflated slightly, which means the jar has sealed. Should the dome of the lid not deflate, it means there is air in the jar, it hasn’t sealed and it will not keep. If this happens to one of your jars, simply keep it in the fridge and enjoy eating peaches over the next few days.
