Steps:

  • Preheat oven to 450; heat a nonstick ovenproof skillet over medium.
  • Combine 2 tablespoons brown sugar, pepper, and salt in a bowl. Press sugar mixture onto both sides of steak, then sear meat on one side until browned, about 5 minutes. Flip steak and brown second side for 2 minutes. Transfer skillet to oven to finish cooking (about 8 minutes for medium rare). Remove steak, tent with foil, and let meat rest 5 minutes.

Steps:

  • Apply the olive oil to the entire steak and then sprinkle the rub onto the meat. Allow the flavors to develop for 2 hours.
  • Heat coals on a grill. When the coals are hot, move them to one side of the grill. Sear the steak for 2 minutes on each side over the coals. Move the steak to the cool part of the grill and cook with the lid on for 20 minutes.

8 baby red beets, peeled and cut in half through the root
3 tablespoons olive oil
1 tablespoon balsamic vinegar
2 teaspoons fresh thyme leaves
Kosher salt and freshly ground black pepper
1 tablespoon cocoa powder
1 teaspoon ancho chile powder
1 teaspoon Hungarian paprika
One 20-ounce New York strip steak, at room temperature
3 tablespoons canola oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the beets in a bowl with the olive oil, vinegar and thyme; season with salt and pepper. Lay the beets cut-side down on a baking sheet. Roast until the beets are slightly tender and a little crispy on the edges, 35 to 40 minutes.
  • Meanwhile, combine the cocoa powder, chile powder and paprika in a small bowl. Season the steak with salt and pepper, then rub with the cocoa mixture.
  • Heat a heavy-bottomed ovenproof saute pan or cast-iron skillet over medium-high heat. Add the canola oil and heat until it begins to smoke. Add the steak and sear on one side until heavily caramelized, 6 to 7 minutes. Flip the steak, transfer the pan to the oven and roast until the internal temperature reaches 125 degrees F for medium rare, about 10 minutes. Allow the steak to rest for 15 minutes before slicing. Serve with the roasted beets.

Flip the steak and brown the second side for 2 minutes, then transfer pan to the oven to finish (about 8 minutes). Remove steak and let rest on a cutting board. Saute bacon in a small skillet over medium-high heat until crisp; add shallots and cook until soft, about 2 mins. Deglaze with vinegar, then whisk in sugar, mustard, salt and pepper. Steps:

  • Gently tenderize steaks with a meat mallet. With a sharp knife, lightly score the meat on one side diagonally. Place steaks in a casserole dish, scored side up, and pour bourbon over them. Rub the brown sugar evenly over each steak. Marinate in refrigerator for 1 to 3 hours.

  • In a medium bowl, whisk together olive oil, lemon juice, Worcestershire sauce, apple cider vinegar, salt, minced garlic, and liquid smoke. Place the steaks in a large refrigerator bag and pour the marinade over the steaks. Slightly shake the bag to ensure the marinade is completely covering the steak. Place in the refrigerator for, at least, 30 minutes. However, I prefer you allow the steaks to marinate as long as possible.
  • After the steaks have marinated, remove from the refrigerator and allow to sit at room temperature for 15 minutes on a cooling rack. Season on both sides with a little salt and pepper. While the steaks are sitting, heat the grill pan to medium-high heat and drizzle with olive oil. It won’t take long for the pan to get hot and you do not want that olive oil to burn, so when ready, place the steaks on the grill pan for 5-7 minutes on each side. Note: When you put the steaks on the grill don’t continuously flip them or press them against the pan with a spatula thinking they will get done faster. You want to let the steaks cook evenly and retain the flavor.
  • Once the steaks are finished cooking on each side, set aside and let rest for about 5 minutes. If you cut the steaks too soon, you will lose a lot of flavors. You have to let those juices settle in the meat. Serve with your desired side items.
