SUNCHOKE AND SPLIT PEA SOUP
Steps:
- In a large Dutch oven over medium heat, saute the pancetta until just starting to brown. Remove from the pot, and drain on a paper towel lined plate. Increase the heat to medium-high and add the leeks, sunchokes, pasilla pepper, onion and carrots. Let cook for 5 to 6 minutes, then add in the garlic and cook for 2 to 3 minutes more. Make a well in the middle of the veggies, add the olive oil, and cook for 1 minute, then add the ham hocks. Cook the ham hocks, turning every 2 minutes, until all sides are warm and starting to lightly brown. Add the chicken stock and the peas. Bring to a simmer and cook for 30 to 45 minutes, stirring occasionally. Stir in freshly cracked pepper, to taste, and remove the ham hocks from the pot to a cutting board. Let them cool for a few minutes and with a fork, shred the meat and add to the soup. Stir in the heavy cream and the vinegar. Ladle the soup into serving bowls and serve with the goat cheese croutons. Sprinkle with rendered pancetta and a crack of black pepper and serve.
- Combine all the ingredients, except the panko, in a small bowl.
- Form into a log shape and wrap in plastic wrap. Freeze for 30 minutes or until firm. While in freezer, preheat the oven to 375 degrees F.
- Remove the cheese from the freezer and slice into 1/4-inch rounds. Flatten each slice with your palm or hand, and press into the panko crumbs. Arrange on a silicone baking mat or parchment lined baking sheet. Bake for 8 minutes, then turn over and continue to bake for 6 to 8 minutes more. Cool and store in airtight container in the refrigerator.
SPLIT PEA SOUP WITH SUN-DRIED TOMATO GREMOLATA
This recipe, which appeared in Allrecipes magazine's Dec/Jan 2020 issue, comes from Ellie's new cookbook, "Whole in One: Complete, Healthy Meals in a Single Pot, Sheet Pan, or Skillet". Soup keeps up to 4 days, chilled in an airtight container, or frozen up to 3 months. Gremolata can be made up to 4 days ahead and chilled in a separate airtight container.

- Heat oil in a large pot over medium heat. Add onion, carrot, and celery; cook until softened, about 6 minutes. Stir in garlic; cook 30 seconds more. Stir in broth, split peas, thyme, bay leaf, salt, and pepper; bring to a boil. Reduce heat to low; simmer, partially covered, until peas are falling apart, about 1 1/4 hours.
- Meanwhile, stir together parsley, sun-dried tomatoes, garlic, paprika, and salt in a small bowl.
- Remove thyme sprigs and bay leaf from soup; discard. Add more broth or water to thin as desired, and more salt to taste. Serve topped with gremolata.

SUN OVEN® SPLIT PEA SOUP

- Set the Sun Oven out to preheat while chopping the vegetables. Place all the ingredients in a large pot. If you like you can lightly sauté the vegetables in the oil before adding the peas and water. Cover and place in the Sun Oven. When the peas are tender, after 1 1/2 - 2 hours, puree the soup in the pot with an immersion blender. Season to taste with salt and pepper. A bowl of this soup, paired with a grilled cheese sandwich, is one of the best lunches in the world.

- preheat the oven to 350*.
- rinse the split peas in cold water, then place in a large kettle with all the remaining ingredients except the sausage and bitters,.
- bake, covered for 2 hours.
- remove from oven and cool.
- discard bay leaf and puree the soup in food processor, working in batches, until smooth.
- return to kettle.
- add the chopped sausage and bitters.
- bake 30 minutes longer or until the sausage is heated thoroughly.
SPLIT PEA SOUP
This is Megan's version of split pea soup, my version skips the croutons and includes ham. But, because we occasionally have to make something she will eat, I just add the ham to my bowl. If you don't have a vegetarian in your house, putting ham or a ham bone in the soup while it is cooking adds a great flavor.

- To prepare the soup: Pour the peas into a stockpot and carefully check them for any foreign objects. (I know it sounds weird, but occasionally small stones will slip through during processing.)
- Peel the carrots and onion and dice them into about 1/2-inch pieces. Place the carrots, onion, bay leaves, and water into the stockpot and bring to a boil over medium-high heat. Decrease the heat to low and simmer, stirring occasionally, for 1 1/2 to 2 hours, or until the peas have broken down. Season to taste with salt and pepper.
- Preheat the oven to 350°F.
- Cut the bread into 1/2-inch cubes and place them on a baking sheet. Combine the butter and garlic powder in a small bowl and pour over the bread cubes. Toss the bread cubes until they are evenly coated and bake them for 10 minutes, or until they are golden brown.
- Ladle the soup into bowls and top with the croutons.
- It's time to pull out that math you learned in third grade:
- 2 cups = 1 pint
- 2 pints = 1 quart
- 4 quarts = 1 gallon
- If you remember this, then you won't panic when a recipe calls for 2 quarts of water and you only have a 1-cup measure. You will know:
- 2 quarts = 4 pints = 8 cups
SUN OVEN CHICKEN SOUP

- Prepare the stock. Using a slotted spoon remove the chicken thighs from the stock before straining. Remove the meat from the bones and cut it into bite sized pieces. Combine the chicken meat, carrots, celery, and garlic in a pot. Cover and cook in the Sun Oven until the vegetables are soft, about 30 minutes. Stir in the peas and let simmer in the Sun Oven another 5 minutes. Ladle into bowls and garnish with parsley.

- Place dried split peas, ham hock, and bacon into slow cooker; pour in chicken broth and 3 1/2 cups water.
- Cover cooker and cook on High until peas are tender and broken apart, 3 to 4 hours. Stir in more water as needed to prevent soup from burning on the bottom. Stir occasionally throughout cooking.
- Stir potatoes, carrots, leek, onion, celery, and garlic into soup; mix in more water, if needed. Cover and cook soup on High for 2 more hours.
- Season with salt, black pepper, thyme, nutmeg, and cloves; mix sausage slices into soup. Cover and cook 2 more hours to blend the flavors.

SUN OVEN FAVA BEAN SOUP

- Set Sun Oven out to preheat. Put the soaked fava beans in a large pot and add enough water to cover by about 1 inch. Cover and place in the Sun Oven. Cook until the beans are very soft, about 1 hour. While the beans are cooking heat the olive oil in a heavy saucepan over medium heat. Add the onions and saute, stirring often until softened, 5 to 10 minutes. Stir in the garlic and the pancetta. Continue cooking, stirring often until the pancetta begins to brown, about 10 minutes. Stir in the tomato concentrate and 1/2 cup hot water. Add the onion mixture to the fava beans in the Sun Oven and continue cooking until the beans have completely fallen apart, 30 to 40 more minutes. Remove from the Sun Oven, stir well and season to taste with salt and pepper. Ladle soup into bowls. Drizzle a little olive oil on each serving. Sprinkle each serving with the parsley and Parmesan cheese.
