Superfood Energy Balls image

These energy balls are a spinoff of my superfood granola bars, brought to you in bite-size form. They're the perfect summer snack to tuck into your bag whenever you need a little fuel, whether that's on a hike or simply lounging by the pool.

Yield about 24 balls

Number Of Ingredients 8

1/2 cup almonds, raw or toasted
1/2 cup walnuts, raw or toasted
1/4 cup pepitas, raw or toasted
1 tablespoon maca powder or unsweetened cocoa powder
1 tablespoon chia seeds
Sea salt
10 Medjool dates, pitted
1/4 cup almond butter, or more as needed

Steps:

  • Place the almonds, walnuts and pepitas in a food processor and process until only small pieces remain. Add in the maca powder, chia seeds and 1/2 teaspoon sea salt and grind to a coarse consistency.
  • Add in the dates and continue to pulse 10 to 15 times until broken down. Add in the almond butter and pulse until a dough forms. (You should be able to pinch the dough between your fingers. If it's too crumbly, add it in a bit more almond butter.)
  • Place the dough in the fridge to firm up, 10 minutes. Pinch off about 1 tablespoon dough and roll into a ball. Repeat with the remaining dough. Place in the fridge to firm up for another 5 to 10 minutes.

Homemade No-Bake Protein Bars image

This is one of my favorite protein bar recipes. They are so much cheaper than commercial bars, very healthy, and better-tasting. Kids love them (provided they like peanut butter)! Plus you know what the ingredients are. You can add anything - raisins, cranberries, dark chocolate nibs, coconut, etc. Keep refrigerated.

1 ½ cups peanut butter
1 ½ cups protein powder
1 cup honey
½ cup goji berries
¼ cup flax seeds
3 cups rolled oats

Steps:

  • Line a 9x11-inch baking pan with parchment paper, leaving a 2-inch overhang on two sides.
  • Place peanut butter, protein powder, and honey in a large bowl; mix with a wooden spoon to combine. Add goji berries, flax seeds, and oats, stirring well to combine. Spread mixture evenly in baking pan.
  • Place baking pan in the refrigerator and chill until mixture is set, about 1 hour. Lift out of the baking pan; cut into 3-inch squares.

The combination of crunchy toasted seeds, creamy nut butter, chewy millet and dates make this protein bar both energizing and satisfying. There's no need to turn on the oven, this bar sets up in the freezer and can be stored there for up to 3 months, meaning you'll always have a healthy snack on hand.

Number Of Ingredients 16

2 cups puffed millet
1 cup mixed toasted seeds, such as sunflower, sesame and pumpkin seeds
1 cup mixed toasted seeds, such as sunflower, sesame and pumpkin seeds
1/2 cup ground flax seeds
1/2 cup quick-cooking oats
1/4 cup unsweetened shredded coconut
1/4 cup hemp seeds
2 tablespoons chia seeds
2 teaspoons maca root powder, optional
10 pitted medjool dates (about 1 cup)
3/4 cup almond or sunflower seed butter
1/4 cup raw cacao or cocoa powder
1/4 cup extra-virgin coconut oil
1/4 cup brown rice syrup
1 tablespoon vanilla extract
3/4 teaspoon sea salt

Steps:

  • Line a 13-by-9-inch pan with parchment paper and set aside. In a large bowl combine the millet, flax seeds, oats, coconut, hemp, chia and maca if using.
  • Roughly chop the dates and add to a food processor with the almond butter, cacao, coconut oil, brown rice syrup, 4 teaspoons water, the vanilla extract and salt, and blend until combined. Add to the dry mix and mix until completely combined. Press evenly into the prepared tray and freeze until completely cold and firm, 2 hours.
  • Remove and slice into 24 1-by-2-inch bars. Store in an airtight container in the freezer for up to 3 months.
