SWEDISH CHEESE PIE
No need to travel to Sweden on Midsummer to enjoy this traditional dish. You can enjoy Västerbottenostpaj (Cheese Pie), in the comfort of your home. Creamy, nutty, delicious, and so easy to prepare!

Steps:
- Combine the flour, chilled butter, and 1 tbsp of cold water in a food processor. Mix until they're barely combined, do not over mix. You can also do this manually.
- Form a disc with the dough and wrap it in plastic. Place the disc in the refrigerator for 30 minutes.
- Take the dough out of the refrigerator. Using a rolling pin, flatten the dough and place it in an 8-inch pie form.
- Trim the sides and place the pie form in the freezer for 30 minutes.
- While the dough is still in the freezer, preheat the oven to 220°C (425 °F).
- Make holes in the dough by pricking it randomly with a fork.
- Place dough in the oven for 12 to 15 minutes.
- Set aside to cool.
- Adjust oven temperature to 200°C (375°F).
- In a large bowl, combine cheese, pepper, eggs, and cream. Use a whisk to mix evenly.
- Pour cheese mixture into the prebaked pastry.
- Place pie form in the oven for 40 to 45 minutes, or until the mixture has solidified.
- Take cheese pie out of the oven and set aside for at least 20 minutes.
- Garnish with chopped chives and serve.

- Mix the butter and flour in a food processor to a crumbly texture. Add the water and mix into a smooth dough. Press the pie dough into a pie dish (24 cm or 9 inches in diameter). Prick the bottom of the shell and place in the oven for about 10 minutes.
- Whisk the eggs and cream, add the cheese. Season with salt and pepper.
- Pour the cheese filling into the pie shell and bake for about 20 minutes until the pie has set. Allow to cool.

This is a Swedish (Scandinavian) dessert that is traditionally served during the holidays, specifically at Christmas. But you can eat it whenever if you like, because it is just that good. Getting the rennet may be a bit difficult, but can be an adventure to acquire. If you're traditional serve with lingonberries. If you're not, raspberries, blueberries, and strawberries work just the same. You can even make a berry sauce to drip over it too and/or top it with whipped cream. You can also add a graham cracker crust to the bottom.

- Mix 1 cup of cold milk with 3/4 cup of flour and stir to make a soft paste. Set it aside.
- Dissolve the 1/2 tablet of rennet in water. Set it aside.
- Heat the rest of the gallon of milk to lukewarm, 98 to 102 degrees F (36 to 39 degrees C). Remove from heat. Add the soft paste mixture and stir in the dissolved rennet. Stir often until milk begins to set; cover and let stand until firm, about 1 hour.
- Break up the milk mixture and remove the whey. Do not make the curd too dry and treat with gentle hands so as not to break up the curds too much.
- Preheat the oven to 400 degrees F (200 degrees C). Coat a 9x13-inch baking dish with 1 teaspoon butter.
- Mix together eggs, sugar, and whipping cream. Add this cream mixture to the strained curd and mix. Pour combined mixture into the prepared baking dish and softly spread it out so that the top of the dessert is flat.
- Bake in the preheated oven for 30 minutes. Reduce the heat to 325 degrees F (165 degrees C). Continue to cook until set and browned on top, about 30 minutes more. Let cool before serving and refrigerate when stored.

When I found this recipe I thought for sure it would be on food.com already, but I couldn't find it. This a very simple side dish or breakfast from Switzerland. It seems to be similar to quiche, but with more milk/cream. Posted for ZWT 7.

- Line pie dish with pastry. Dredge cheese with flour. Distribute cheese evenly in pie dish. Beat eggs well; mix with milk. Season lightly and pour over cheese.
- Bake 15 minutes in hot oven (400 degrees), then reduce to 300-325 degrees and bake an additional 30 minutes or until knife inserted in center of pie comes out clean. Serve hot or warmed over.

Steps:
- Combine flour and salt in medium bowl. Cut in shortening and butter until all the flour is blended to form pea-sized crumbs. Sprinkle with water one tablespoon at a time. Toss lightly with a fork until dough forms a ball. Chill dough 15 to 30 minutes.
- Roll dough between two sheets of wax paper into an 11 inch circle. Remove top sheet of wax paper and lay into 9 inch pie pan. Prick bottom and sides of pie shell thoroughly to prevent shrinkage.
- Bake at 425 degrees F (220 degrees C) for 10 to 15 minutes or until lightly browned. Cool to room temperature.
- Combine cream cheese and confectioner 's sugar in medium bowl. Beat with electric mixer at medium speed until smooth. Beat in vanilla and almond extracts. Fold in whipped cream and almonds by hand until well mixed. Pour into cooled crust. Refrigerate until firm.
- Decorate pie with strawberries fully or just around the edge. Heat jelly in microwave oven just until soft and brush carefully over strawberries until glazed. Refrigerate until serving.
