SWEET, STICKY AND SPICY CHICKEN
This chicken dish uses skinless boneless chicken breasts and tastes delicious. It's great as an appetizer or as a main dish served with rice and a veggie.

Steps:
- Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl.
- Lightly salt and pepper the chicken strips.
- Heat oil in a large skillet over medium heat. Add chicken strips and brown on both sides, about 1 minute per side. Pour the sauce over the chicken. Simmer uncovered until the sauce thickens, 8 to 10 minutes.

SWEET SALSA DUMP CHICKEN - OAMC
The theory is you dump this in a bag and freeze to pull out later. There are many variations which I will post separately but it's amazingly easy to make these up and have a different "dump" chicken every week!

Steps:
- For immediate cooking: Pre-heat oven to 350°F Place all ingredients into a large baking dish, turn chicken to coat.
- Bake until chicken juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).
- For freezing: Place all ingredients into a 1 Gallon freezer bag.
- Lay flat in freezer.
- To thaw and cook: Take the bag out of the freezer the night before, make sure the baggie is completely closed.
- Place the Bag on a refrigerator shelf to thaw.
- Preheat the oven to 350°F Empty the contents of the bag into a large baking dish and bake until the juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).
SWEET AND SPICY TOMATO DUMP CHICKEN - OAMC
This is a variation of the fabulous Recipe #107570. My boys like their food a bit on the tame side. Makes 4 bags. Tip: I remove the skin from all the chicken at once. I wear disposable plastic gloves and grab the skin with a paper towel. It is much easier to pull off and the gloves keep your hands from freezing.

SWEET AND SPICY LIME CHICKEN
This was an 'on-the-fly' recipe I came up with while trying to avoid the same-old chicken dinner. If you prefer more heat, leave the seeds and ribs of the jalapeno in before pureeing.

Steps:
- Puree jalapeno pepper, garlic, shallot, and 1 tablespoon olive oil, salt, and black pepper in a food processor. Add parsley and thyme; process again to integrate.
- Rub the jalapeno pepper mixture evenly onto the chicken thighs, place onto a platter and cover with plastic wrap; marinate in refrigerator at least 1 hour, up to 24 hours.
- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 tablespoons olive oil in an oven-safe skillet over medium-low heat. Cook chicken thighs in hot oil until golden brown, about 5 minutes per side. Transfer chicken to a platter, retaining drippings in the skillet.
- Reduce heat under the skillet to low. Pour wine into the pan; bring to a boil while scraping the browned bits of food from the bottom of the pan with a flat-edged wooden spoon. Stir lime juice and honey into the wine; bring to a simmer and cook until the volume of the liquid reduces slightly, about 5 minutes. Return chicken to the skillet. Pour broth over the chicken.
- Transfer skillet to preheated oven and bake until the sauce has thickened and the chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

JUST-LIKE-THANKSGIVING-CHICKEN (OAMC DUMP)
Every time I make this, my husband swears it smells and tastes like Thanksgiving dinner. I suppose it could be made with Turkey cutletts to be even closer, but I've always used chicken.

- TO MAKE IN A PAN:
- Place the chicken breasts (still frozen) on the bottom of the pan.
- Layer the apples, sweet potatoes, and onion on top.
- Sprinkle on the nuts and craisins.
- Place one pat of butter on each breast.
- Mix the maple syrup and poultry seasoning together and drizzle on top.
- TO MAKE IN A BAG:
- Put everything except the maple syrup, poultry seasoning, and butter into a ziplock bag.
- Melt the butter and combine with poultry seasoning and maple syrup.
- Put these in a little bowl and freeze separately (in the bag).
- When ready to cook, dump the bag out and then pour the (thawed) syrup butter mix on top.
- To cook: Thaw. Cook covered in a 350 oven for 30-45 minutes. I confess I normally skip the thaw step and put it in the oven.
SWEET & SOUR CHICKEN (OR PORK) OAMC
This is one of my daughter's favorite meals. We use chicken, the original recipe called for pork shoulder. This freezes very well. For an even quicker dinner, precook and freeze the rice in a separate baggie. If making and serving on the same night. Allow 45 minutes for the meat to marinate.

- Cut chicken into bite sized pieces. Place in a large zipper baggie.
- Add garlic, reserved pineapple juice and ginger root. Seat bag and squish it around to coat the chicken with the marinade.
- Place the bag in the fridge and allow chicken to marinate for 45 minutes. (this can be done in the morning).
- While chicken is marinating, chop bell pepper and onion.
- Heat oil in a large skillet or wok.
- Add green pepper and onion and saute for 3-4 minutes.
- Add chicken and marinade and cook and stir for about 10 minutes or until chicken is cooked through.
- In a small bowl, mix together cornstarch, brown sugar, vinegar, and soy sauce. STir to make sure there are no lumps. Add this mixture to the skillet. Stir.
- Add the pineapple chunks to the skillet.
- Stir until the mixture has thickened slightly.
- Serve over cooked rice.
- To freeze: Allow to cool. Package in a rigid container or in a large freezer bag.
- To serve: Thaw overnight in fridge and reheat on stovetop over medium low heat OR heat in microwave until bubbly.
