SWEET BAKED CARROTS



Sweet Baked Carrots image

Sweetened carrots are a perfect vegetable addition to any meal. Kids love them!!

1 (16 ounce) package frozen whole baby carrots
½ cup white sugar
⅓ cup butter
⅓ cup boiling water
1 teaspoon salt
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange carrots in an 8-inch square pan. Combine sugar, butter, boiling water, salt, and cinnamon in a bowl; pour over carrots. Cover pan with aluminum foil.
  • Bake in preheated oven until carrots are tender, about 1 1/2 hours.

THIS IS one of my favorite ways to prepare carrots-simple but flavorful. I devised this recipe since we always seem to have carrots on hand, and the dish has drawn quite a few compliments. Sometimes I'll make extra and add them to my "soup jar" in the freezer-they make a great addition to a batch of homemade soup! -Donna Smith Palisade, Colorado

4 medium carrots, cut into 1-1/2 inch pieces
1 tablespoon butter
1 to 2 teaspoons lemon juice
1/4 teaspoon dried basil
1/8 teaspoon garlic salt
Dash pepper

Steps:

  • Place carrots in a small saucepan; add water to cover. Cook for 10 minutes or until tender; drain and return to pan. Add the remaining ingredients. Cook over low heat until butter is melted.

1 (16 ounce) package baby carrots
½ cup butter
3 tablespoons honey
½ cup brown sugar

Steps:

  • Place the carrots into a large pot and cover with salted water. Bring to a boil over high heat until tender, about 15 minutes. Drain and allow to steam dry for a minute or two.
  • Return the pot to the stove; reduce the heat to medium-low. Melt the butter in the pot. Stir in the honey and brown sugar; add the carrots and stir until evenly coated; cook another 5 minutes

  • Slice carrots.
  • Simmer, covered, in salted water until tender, about 10 to 15 minutes; drain.
  • Combine remaining ingredients; toss with carrots.

  • Add the maple syrup, basil and sea salt.
  • Stir to coat the carrots thoroughly.

  • Heat a nonstick skillet over medium heat, add the onion and cook until translucent, about 5 minutes. Combine the tomato paste and wine and add to the onion along with the carrots. Stir to combine, cover and cook over medium-low heat, stirring occasionally, until the carrots are tender, about 20 minutes.
