Sweet Chili Thai Salad Dressing image

Sweet chili Thai salad dressing is a fantastic way to boost your salads and to marinate chicken and pork for roasting or grilling.

1 cup sweet chili sauce
½ cup rice wine vinegar
½ cup canned coconut milk
6 tbsp light brown sugar
4 garlic cloves, finely minced
1 tbsp grated fresh ginger
3 tbsp peanut butter
1 tbsp low-sodium soy sauce
2 limes, juiced

Steps:

  • Whisk all of the ingredients together in a small saucepan over medium heat until smooth. Allow the mixture to come to a simmer and cook for 3 to 4 minutes until thickened.
  • Remove the pan from the heat and let the dressing cool for 10 minutes. Pour the dressing into a resealable container and refrigerate for up to 2 weeks.

1/2 teaspoon / 2.5 ml ground ginger - or 1-1/2 teaspoons / 7.5 ml fresh grated ginger

Steps:

  • Place all ingredients in a jar. Put on the lid and shake until blended.
  • Store in the fridge for up to two weeks.

3/4 c mayo
milk to thin
1/2 t fresh ground black pepper
1/4 c grated parmesan
1 t onion powder or grated onion (yes grate the onion, and make sure to do it over the bowl so you catch the juices)
1 t granulated garlic or 2 cloves grated garlic (same as the onion folks)

Steps:

  • Whisk this all together until it is well blended, and use the milk to thin to your desired consistency. This stuff only gets better with time, developing a great bite by the next morning. Make sure to refrigerate!
