CUCUMBER SALAD WITH THAI SWEET CHILI VINAIGRETTE

Steps:

• Whisk rice vinegar, chili sauce, sesame oil, sugar, and garlic together in a small bowl; season with salt.
• Combine cucumber and onion in a separate bowl. Pour vinegar mixture over cucumber and onion mixture and toss to coat. Refrigerate at least 1 hour. Toss before serving.

SWEET CHILLI DRESSING

Steps:

• Measure all ingredients into a jam jar. Shake well just before dressing salad.

THAI SALAD WITH SWEET CHILI VINAIGRETTE

Steps:

• In a large bowl, combine chopped romaine lettuce with shredded cabbage.
• Toss with green onions, cucumber, shredded carrots, green bell pepper, fresh cilantro and cashews.
• In a small bowl, combine white wine vinegar, olive oil, soy sauce, chili flakes and Truvia® Natural Sweetener
• Either toss salad with dressing or serve separately for individuals to pour themselves.
• Optional toppings: bean sprouts & shoots.

SWEET CHILI THAI SALAD DRESSING

Steps:

• Whisk all of the ingredients together in a small saucepan over medium heat until smooth. Allow the mixture to come to a simmer and cook for 3 to 4 minutes until thickened.
• Remove the pan from the heat and let the dressing cool for 10 minutes. Pour the dressing into a resealable container and refrigerate for up to 2 weeks.
