My father, Garfield Freih, is an avid fisherman and frequently acts as the chef on fishing trips he takes with his buddies. To please that group - and to get us kids to eat fish at home - he created this pleasantly mild crispy coating. -Tammi Freih, Lakewood, California

1 egg
1 cup milk
1 cup crisp rice cereal, crushed
1/4 cup all-purpose flour
1/4 cup cornmeal
1-1/2 teaspoons lemon-pepper seasoning
1/4 teaspoon seasoned salt
1/8 teaspoon onion salt
1/8 teaspoon garlic salt
4 walleye or other whitefish fillets (1-3/4 to 2 pounds)
Oil for frying

Steps:

  • In a shallow bowl, whisk together the egg and milk. In a large resealable plastic bag, combine the cereal, flour, cornmeal and seasonings. Dip the fish fillets into egg mixture, then coat with cereal mixture., In a large skillet, heat 1/4 in. of oil over medium-high heat. Fry the fillets for 5-7 minutes on each side or until fish flakes easily with a fork.

1 tablespoon lemon juice
4 (3 ounce) fillets cod
1 cup oil for frying
⅓ cup cornmeal
⅓ cup all-purpose flour
1 teaspoon paprika
½ teaspoon ground black pepper
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon dried thyme
⅛ teaspoon cayenne pepper

Steps:

  • In a medium bowl, combine milk and lemon juice. Add cod fillets, and marinate 5 minutes. Heat oil in large heavy skillet over medium heat.
  • In a shallow bowl, mix together cornmeal and flour. Season with paprika, black pepper, salt, garlic powder, thyme and cayenne pepper. Dredge fish in cornmeal mixture.
  • Fry cod fillets in hot oil until golden brown.

1 ½ cups beer
1 cup all-purpose flour
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
1 pound cod fillets
2 cups crushed cornflake crumbs
1 teaspoon Cajun seasoning
1 quart oil for frying

Steps:

  • In a medium bowl, beat together egg, beer, flour, garlic powder, salt, and pepper. Place cod in the bowl, and thoroughly coat with the mixture.
  • In a separate medium bowl, mix the cornflake crumbs and Cajun seasoning. Dip the cod in the crumb mixture, and thoroughly coat all sides.
  • In a large, heavy skillet or deep fryer, heat the oil to 365 degrees F (185 degrees C). Fry the fish until golden brown, and flesh is easily flaked with a fork.

This is the best fish coating I have made and my husband says that it is the best he's eaten. I substituted the first three ingredients for 1/2 cup of milk because I didn't want to go to the store and couldn't find another recipe that doesn't call for milk. It turned out to be an awesome combination that hardly leaves a single crumb in the grease.

1/4 cup melted unsalted butter
1/4 cup warm water
1 tablespoon all-purpose flour
1 egg
1 cup yellow cornmeal
2 teaspoons paprika
2 teaspoons garlic powder
salt and pepper
fish or vegetables, you want to fry
shortening, for frying

Steps:

  • Heat shortening in Dutch oven or deep fryer.
  • Beat together first four ingredients in a small bowl.
  • Mix the remaining ingredients in a pie pan.
  • Dip your fish or veggies in the wet mixture then dredge through dry mixture. (for thicker coating, do this step twice.).
  • Place coated pieces into hot grease and cook until done. I used a fry basket in a stew pot.
  • When thoroughly cooked, remove pieces to a wire rack to drain before serving.

12 crappies, cleaned and Fileted
1 cup corn flakes
1/2 cup Cap'n Crunch cereal
1/2 teaspoon clove, ground
16 ounces golden dry ginger ale or 16 ounces pale dry ginger ale
1 egg
3 tablespoons flour
to taste peanut oil (Enough to cover fish 1/2 way in heavy frying pan)

Steps:

  • Presoak Fish in a large baggie in the ginger ale. ( about 4 hours), then drain and wash.
  • Crush corn flakes and Capt'n Crunch into a fine mixture. Add clove, and flour stir.
  • Dip fish in beaten egg and then roll in the dry mix.
  • Place fish in a Hot skillet cook each side until lightly golden brown.
  • Turning only once. Place on paper towel, drain and serve with your favorite tartar sauce.
