SWEET POTATO SALAD WITH ORANGE-MAPLE DRESSING



Sweet Potato Salad with Orange-Maple Dressing image

3 pounds red-skinned sweet potatoes, peeled and cut into 3/4-inch cubes
1/2 cup extra-virgin olive oil
2 tablespoons pure maple syrup
1/4 cup orange juice
2 tablespoons balsamic vinegar
2 tablespoons minced peeled fresh ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon salt, plus more to taste
1/2 cup chopped green onions
1/2 cup chopped fresh parsley
1/4 cup coarsely chopped toasted pecans
1/4 cup golden raisins
1/4 cup brown raisins
Freshly ground black pepper, to taste

Steps:

  • In a large pot fitted with a steamer basket, steam the sweet potatoes in batches until just tender, 12 to 15 minutes per batch. Transfer them to a large bowl and let cool to room temperature.
  • Meanwhile, in a small bowl, make the Orange-Maple Dressing by whisking the olive oil, maple syrup, orange juice, vinegar, ginger, nutmeg and salt.
  • Add the green onions, parsley, pecans and raisins to the cooled sweet potatoes. Pour the Orange-Maple Dressing over the potato mixture and toss gently to combine. Season to taste with salt and pepper. This salad can be made several hours ahead of time; cover and refrigerate until ready to serve.

My mom began making this salad a few years ago and, as soon as I tried it, I just had to get the recipe. This is my version, but can be varied in many different ways because it's all about the dressing! So simple, yet so delicious that you are sure to get requests for the recipe whenever you make it! You can use pecans, almonds, or pine nuts in place of the walnuts.

½ cup blueberries
¼ cup dried cranberries
¼ cup sunflower seeds
¼ cup walnut pieces
¼ cup crumbled feta cheese
¼ cup crumbled goat cheese
¼ cup white balsamic vinegar, or to taste
¼ cup maple syrup, or to taste
¼ cup grapeseed oil, or to taste
salt, to taste

Steps:

  • Toss the romaine lettuce, blueberries, dried cranberries, sunflower seeds, walnut pieces, feta cheese, and goat cheese in a large bowl. Pour the vinegar, syrup, and grapeseed oil over the salad one at a time; toss until evenly coated. Season with salt.

Steps:

4 tbsp Coconut Oil
1 tbsp Olive Oil
2 tbsp Maple Syrup
Juice from 1/2 Lemon
1-2 tsp Whole Grain Dijon Mustard
3 tsp Sesame Seeds
1/2 tsp salt
Pepper to taste

Steps:

  • -Warm coconut oil in a pyrex measuring cup. Doesn't need to be hot, just warm enough to melt. With the addition of the olive oil and syrup it will stay liquid for quite some time! -After all coconut oil is melted, add olive oil, maple syrup (For a more summery/fruity version, try substituting 1 tbsp of syrup for 1tbsp of raspberry jam!) -Add the rest of the ingredients and whisk together. -Transfer mixture to a glass jar or salad dressing bottle and shake for a minute. The dressing will need to be shaken before it is put on salad too. -This dressing keeps in the fridge for a very long time, it just needs to be heated slightly before use. I usually just run the bottle under hot water in the sink and then let it sit in a bowl or pot of hot tap water for 15min. Once liquid again, shake and enjoy!!
