TENNESSEE WHISKEY SWEET POTATO CASSEROLE

Tennessee Whiskey Sweet Potato Casserole image

Sweet potato casserole flavored with Tennessee whiskey, brown sugar, and topped with candied pecans. A rich and comforting take on a classic holiday dish that has been in my family for years. We've had it at Thanksgiving for as long as I can remember. For best results make sure potatoes are drained of as much water as possible.

SWEET POTATO CASSEROLE RECIPE

Sweet Potato Casserole Recipe image

Creamy sweet potato casserole with a crunchy candied pecan topping and toasted marshmallows.

Provided by Tiffany

Categories     Side Dish

Time 1h

Number Of Ingredients 13

5 pounds sweet potatoes (peeled and cut into 2 inch pieces)
1 cup water
2 eggs
1 teaspoon vanilla extract
½ cup butter (melted)
1 cup brown sugar
2-3 teaspoons salt ((or to taste))
½ cup heavy cream (or milk)
½ cup brown sugar
½ cup flour
⅓ cup melted butter
1 cup chopped pecans
3-4 cups mini marshmallows

Steps:

  • Potatoes can be boiled, drained, and then mashed OR cooked in a slow cooker or Instant Pot (my favorite method - see note for directions!).
  • Preheat oven to 375 and mash your cooked sweet potatoes.
  • Add eggs, vanilla, 1/2 cup melted butter, brown sugar, salt, and milk (or heavy cream) and mix until smooth. (I like my potatoes to have a bit of texture so I don't whip them for too long).
  • Spread potato mixture in the bottom of a greased 9x13 baking dish.
  • In a bowl combine brown sugar, flour, 1/3 cup melted butter, and pecans and mix well (with a spoon, not a mixer). Sprinkle mixture over potatoes (it's okay if potatoes aren't completely covered).
  • Bake uncovered for about 20-25 minutes until pecans are caramelized.
  • Sprinkle marshmallows evenly over pecan mixture. Return to oven for another 5-7 minutes or until marshmallows are puffy and lightly browned. Serve and enjoy!

CANDIED SWEET POTATOES WITH PECANS

Candied Sweet Potatoes with Pecans image

This is my favorite style of a Thanksgiving or Christmas time sweet potato side dish, since I'm not really a big fan of whipped sweet potatoes with marshmallow toppings. This is a very sweet dish (candied) but more to my liking. The spice and pecans add a whole new level of taste and texture.

Categories     Side Dish     Vegetables     Sweet Potatoes

Time 2h20m

Yield 12

Number Of Ingredients 6

4 pounds orange-fleshed sweet potatoes
1 cup packed dark brown sugar
½ cup unsalted butter, softened
½ cup chopped pecans
1 teaspoon pumpkin pie spice
2 teaspoons unsalted butter, softened

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Prick potatoes several times with a fork and place on a baking sheet.
  • Bake potatoes in the preheated oven until you can easily pierce them halfway through with a sharp knife, about 1 1/2 hours. Remove from the oven and allow to cool until easily handled, at least 20 minutes. Leave the oven on.
  • Meanwhile, mix brown sugar, 1/2 cup butter, pecans, and pumpkin pie spice for topping in a bowl until thoroughly combined.
  • Peel the cooled sweet potatoes and cut crosswise into 3/4-inch thick slices.
  • Lightly grease a 9x13-inch ceramic or glass baking dish with 2 teaspoons butter. Spread potato slices in a single layer in the dish and spoon a bit of topping over each slice. Add remaining potato slices in a second layer and sprinkle with remaining topping.
  • Bake, uncovered, in the preheated oven until bubbly and browned, about 20 minutes. Use a serving spoon to dish this out, making sure to get to some of the sauce from the bottom for each serving.

THE BEST SWEET POTATO CASSEROLE

The Best Sweet Potato Casserole image

We opted for a nutty crumb topping over marshmallows to create a pleasantly crunchy contrast to the creamy and soft mashed sweet potatoes. The filling gets a pumpkin pie-like treatment, with brown sugar and vanilla for a deep caramel flavor and butter and eggs for richness. This recipe is bound to become a holiday staple.

  • Place the diced sweet potatoes in a large, heavy-bottomed Dutch oven and cover with 8 cups cold water, or enough to completely submerge the sweet potatoes. Season with 2 tablespoons Kosher salt. Place the pot over medium-high heat and bring to a boil. Reduce to a simmer and cover, cooking for 20 minutes, or until the sweet potatoes are fork-tender. Carefully strain, then return to the pot.
  • Mash the sweet potatoes to your desired consistency. For extra creamy mashed sweet potatoes, add the boiled sweet potatoes to a food processor & puree. As you mash or puree, slowly add in the butter, one tablespoon at a time, and the milk. Alternate as you go – a little butter, then a little milk. Once the sweet potatoes have reached your desired consistency, stir in the maple syrup and ground cinnamon. Taste and season with additional salt, to taste. I add ½ teaspoon, taste, go from there.
  • Transfer the potatoes to a casserole dish or a serving dish. At this point, you can serve them immediately or transfer to a 200 degree F oven to keep them warm until you’re ready to serve. Just before serving, top with a drizzle of pure maple syrup, extra pats of butter, and a sprinkling of candied nuts. Enjoy!
