Delicious muffins that are a little bit different than you'd expect.

1 ⅛ cups packed brown sugar
½ cup canola oil
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon freshly grated nutmeg
½ teaspoon ground allspice
½ teaspoon salt
4 cups peeled, shredded sweet potato
½ cup raisins
1 cup walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease muffin tins to hold 12 muffins.
  • Whisk together brown sugar, oil, vanilla and eggs in a small bowl.
  • Mix together the flour, baking powder, spices, salt, and grated sweet potatoes in a large bowl. Make a well in the center, and pour in the egg mixture. Stir the egg mixture, gradually incorporating it with the flour mixture. Stir in the raisins and walnuts
  • Spoon the batter into the tins. I like to fill each tin to the rim to make a large cap. Bake the muffins for 25 to 30 minutes or until a toothpick inserted into the middle comes out clean. Take the muffins out of the oven and run a paring knife carefully around each muffin, then invert the pan, and knock one edge against your work surface to release the muffins. Serve the muffins right away.

1 cup all-purpose flour
3/4 brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon clove
1 1/2 cups sweet potato puree
2 eggs
1/2 cup milk
1 teaspoon vanilla
1 cup chopped pecans

Steps:

  • Beat eggs, brown sugar, vanilla, sweet potato puree, and milk.
  • Stir in dry ingredients until incorporated. Fold in chocolate chips.
  • Bake at 375F in lined or greased muffin tin for 15-18 minutes or until done.

1/4 teaspoon ground nutmeg
1 can (16 oz) sweet potatoes, drained, mashed
1/3 cup butter or margarine, melted
2 teaspoons vanilla
1 egg
1/2 cup candied pecans, coarsely chopped

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 12 regular-size muffin cups; spray paper cups with cooking spray.
  • In large bowl, mix flour, sugar, baking powder, baking soda, orange peel, ginger, salt and nutmeg. Stir in mashed sweet potatoes, butter, vanilla and egg. Divide batter among muffin cups. Sprinkle evenly with pecans.
  • Bake 24 to 26 minutes or until toothpick inserted in center comes out clean. Remove from pan to cooling rack. Serve warm.

I adapted a pumpkin muffin recipe to come up with this delectable sweet potato concoction that is a true muffin, and not a cake! I think the sweet potato lends even more flavor than pumpkin. Added bonus: this recipe just happens to be dairy free, a plus for those who are intolerant to dairy.

1 cup white sugar
1 cup cooked, mashed sweet potato
½ cup olive oil
⅓ cup water
2 eggs, beaten
1 ⅔ cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin pan or line with paper liners.
  • Combine sugar, sweet potato, olive oil, water, and eggs in a bowl. Combine flour, cinnamon, baking soda, baking powder, and salt in a second bowl. Add flour mixture and pecans to the sweet potato mixture. Fold gently until just moistened, being careful not to overmix. Spoon batter into the prepared muffin cups, filling each 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Do not overbake. Remove from oven and cool on wire rack.

Steps:

  • Heat oven to 400°F
  • Spray muffin tin with spray.
  • In medium bowl combine flour, sugar, baking powder, cinnamon, salt and nutmeg.
  • In large bowl with mixer at medium speed, beat potatoes, corn syrup, oil, eggs and vanilla.
  • Stir into flour mixture till well blended.
  • Stir in nuts.
