Tender and Juicy Chicken that is wrapped in bacon and coated in a blend of spices. It bakes in brown sugar which caramelizes when it cooks. You are going to love the sweet and spicy flavor!

1 1/2 pounds boneless skinless chicken thighs*
6-8 slices of bacon
1 tablespoon chili powder
1 teaspoon paprika
½ teaspoon garlic powder
salt and pepper
1/2 cup brown sugar
optional garnish: chopped parsley

Steps:

  • Preheat oven to 400 degrees. Combine chili powder, paprika, and garlic powder in a bowl. Roll each chicken piece into the spices and wrap in bacon. Place in a 10 inch skillet or a 9x13 inch baking dish. Sprinkle the tops with brown sugar.
  • Bake for 30-35 minutes or until chicken reads 165 degrees and is no longer pink. I like to broil the tops of my chicken for 1-2 minutes to crisp the bacon at the end.

1 teaspoon salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
2 teaspoons garlic powder, plus more to taste
1 teaspoon chili powder, plus more to taste
1 cup brown sugar
2 or 3 tablespoons olive oil

Steps:

  • Cut each breast into 3 pieces, season the chicken with the spices, salt, and black pepper. Wrap a bacon slice around each piece of chicken. Roll in brown sugar. Place into an ovenproof dish greased with the olive oil. Bake at 400°F for 30 to 40 minutes or until chicken is cooked through and bacon is brown and crispy. Delicious served with mashed potatoes with some of the gravy from the chicken drizzled on top.

  • Arrange bacon slices in l layer on a large broiler pan and bake in middle of oven (or upper third of oven if baking with eggs) 20 minutes. Turn slices over and sprinkle evenly with spiced sugar. Continue baking until bacon is crisp and brown, 15 to 20 minutes more, then transfer to paper towels to drain.

Steps:

  • Cut each breast into 3 pieces, season all the chicken with the spices, then wrap a bacon slice around each piece, roll in brown sugar and place into an oven proof dish....make sure you have some olive oil in the dish too, like 2 or 3 tablespoons is fine {I skipped this since I grilled them. I honestly think you could coat your dish with nonstick cooking spray instead to save a few calories}.
  • Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy. Delicious served with mashed potatoes with some of the gravy from the chicken drizzled on top.

Steps:

  • Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
  • In a medium bowl, mix together Frank's RedHot® and brown sugar together until fully incorporated.

1/8 teaspoon cayenne pepper

Blue cheese salad dressing and barbecue sauce

Steps:

  • Preheat oven to 350°. Cut bacon strips crosswise into thirds. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. (Note: Watch the bird closely during baking; the sugar in the jelly makes it a beautiful rich, brown color but can also burn it! If the bird is browning too quickly, cover with an aluminum foil tent and continue baking. Test for doneness by cutting into the thigh or wiggling the leg to see if the bone moves easily.)

1 (4 pound) whole chicken

½ cup hot pepper jelly
1 cup butter

Steps:

  • To Prepare Chicken: Remove giblets and set aside for another use. Rinse chicken in cold water and pat dry with paper towels. Pull front skin down over neck cavity and tuck under chicken. Fold wings under breast, and tie legs and tail together securely with kitchen twine or string.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Place chicken on rack in roasting pan. Season with salt and pepper to taste. Melt jelly and 1/2 cup butter or margarine together in a small saucepan or in the microwave. Melt the remaining 1/2 cup butter or margarine separately.
  • Bake chicken in preheated oven for 15 minutes. Reduce heat to 375 degrees F (190 degrees C) and baste with melted plain butter or margarine. Bake for another 30 minutes, basting often with the plain butter or margarine. Then baste liberally with the melted jelly/butter mixture and bake for another 15 minutes.
