  • Cook 3 slices diced bacon until crisp; remove and reserve. Add 2 sliced onions to the pan. Season with salt and pepper and cook over low heat, covered, 10 minutes. Uncover and cook until golden, 30 more minutes. Stir in 1/4 cup each mayonnaise and grated Swiss cheese, 2 tablespoons chopped parsley and the bacon.

8 slices center cut bacon, chopped
8 ounces softened cream cheese
1/2 cup mayonnaise
2 rounded teaspoons prepared Dijon style mustard
1 1/2 cups shredded Swiss cheese, available on dairy aisle
3 scallions, chopped
1/2 cup smoked almonds, coarsely chopped
Baby carrots and a selection of spiced flat breads, cocktail sized pumpernickel or rye breads, or sliced whole grain baguettes, for dipping

Steps:

  • Preheat oven to 400 degrees F.
  • Brown bacon in nonstick skillet over medium high heat. Drain crisp bacon bits on paper towels.
  • In a mixing bowl, combine cream cheese, mayonnaise, Dijon, Swiss and scallions with cooked bacon. Transfer to a shallow small casserole or baking dish and bake until golden and bubbly at edges, 15 to 18 minutes. Top with chopped smoked almonds. Place dip on a platter and surround warm casserole with breads and carrots for dipping.

1 package (28 ounces) frozen O'Brien potatoes, thawed
1 pound bacon strips, cooked and crumbled
2 cups shredded Swiss cheese
12 large eggs
2 cups 2% milk
1 teaspoon seasoned salt
1 teaspoon pepper
Minced chives, optional

Steps:

  • In a greased 4- or 5-qt. slow cooker, layer potatoes, bacon and cheese. In a large bowl, whisk eggs, milk, seasoned salt and pepper; pour over top. Cook, covered, on low until eggs are set, 4-5 hours. Turn off slow cooker. Remove crock insert to a wire rack; let stand, uncovered, 30 minutes before serving. Garnish with minced chives, if desired.

1 bacon strip, cooked and crumbled
1/4 teaspoon salt
1/8 teaspoon coarsely ground pepper
1/2 pound ground beef
2 slices Swiss cheese
Mayonnaise
2 sourdough rolls, split
Tomato slices, optional

Steps:

  • In a large bowl, combine the jalapeno pepper, bacon, salt and pepper. Crumble beef over mixture and mix well. Shape into two patties. , Grill, covered, over medium heat or broil 4 in. from heat for 6 minutes on each side or until a thermometer reads 160° and meat is no longer pink. Top with cheese. Spread mayonnaise on rolls. Serve hamburgers on rolls with tomato slices if desired.

2 cups biscuit mix or 2 cups baking mix
1/2 cup cold water
8 ounces sliced swiss cheese
1 lb sliced bacon, cooked and crumbled
4 eggs, lightly beaten
1/4 cup milk
1/2 teaspoon onion powder

Steps:

  • Cook bacon on stovetop or microwave; crumble.
  • Mix biscuit mix and water in a bowl for 20 strokes, or until just combined.
  • Knead 10 times and place into the bottom of a greased 13x9x2 inch baking dish.
  • Spread dough evenly into bottom of dish and slighty up the sides.
  • Place Swiss cheese in 1 layer over the dough, then top with crumbled bacon.
  • In a bowl, whisk together the eggs, milk and onion powder and pour evenly over bacon.
  • Bake at 425*, for 15-18 minutes or until tests done in center. Cut into squares and serve while hot.

12 ounces uncooked penne pasta
13 bacon strips
1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
3 tablespoons butter
6 green onions, chopped
3 tablespoons all-purpose flour
4 cups 2% milk
3 cups shredded cheddar cheese
1-1/2 cups shredded Swiss cheese
1-1/2 cups frozen peas, thawed
3/4 teaspoon pepper
1/2 teaspoon dried thyme
TOPPING:
3/4 cup dry bread crumbs
2 tablespoons butter, melted

Steps:

  • Cook penne according to package directions., Meanwhile, in a large skillet, cook bacon in batches over medium heat until crisp. Remove to paper towels; drain, reserving 4 teaspoons drippings. Crumble bacon and set aside., Saute chicken in butter and drippings until no longer pink. Add onions; cook 1 minute longer. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the cheeses, peas, pepper, thyme and bacon., Drain penne; add to chicken mixture and toss to coat.
