2 small bunch scallions, chopped
2 small garlic cloves, finely chopped
1/2 lb mushroom, sliced
1 lb fresh chard leaves, finely shredded
1 tablespoon Dijon mustard

Steps:

  • Heat oil in a large skillet or wok.
  • Sauté the scallions and garlic for 2 minutes until softened and tender.
  • Add mushrooms and cook 4-5 minutes more.
  • Add chard, cover and cook over low heat for about 5 minutes or until chard is tender, but still crisp.
  • Mix in mustard and heat 1-2 minutes more. Serve.

1/2 pound bacon slices, roughly chopped
4 garlic cloves, thinly sliced
2 cups chicken stock
1/3 cup cider vinegar
2 tablespoons sugar
1 bunch collard greens, ribs removed
1 bunch mustard greens, ribs removed
1 bunch red Swiss chard, ribs removed
Salt and freshly ground black pepper

Steps:

  • In a large pot heat oil and bacon over high heat until bacon is well browned. Stir in garlic and cook 45 seconds. Deglaze with chicken stock and vinegar. Add sugar and greens and partially cover. Lower heat to medium and cook for 30 minutes. Season with salt and pepper, to taste.

  • Rinse Swiss chard well. Trim tough ends; slice stalks about 3/4 inch thick. Slice leaves about 1 inch thick.
  • In a Dutch oven over medium heat, warm olive oil. Cook garlic until fragrant, 1 to 2 minutes.
  • Stir in stalks; cook, stirring, until slightly soft, 5 to 6 minutes. Add half the leaves; sprinkle with 1 teaspoon sugar. Cover; cook until wilted, about 4 minutes. Steps:

  • Remove ribs and stems from Swiss chard leaves. Cut in half lengthwise, then slice crosswise into 2" pieces; set aside. Tear leaves into large pieces; set aside.
  • Combine vinegar, hot sauce, and brown sugar in a small bowl, stirring until sugar is dissolved. Set sauce aside.
  • Heat oil in a large pot over medium. Cook bacon, stirring often, until lightly browned and crisp, 7-10 minutes. Add onion and cook, stirring occasionally, until softened, 5-8 minutes. 2 tablespoons butter
1/4 cup diced onion
1 garlic clove, minced
1/4 cup all-purpose flour

1 pinch salt, pepper, ground nutmeg
1/3 cup gruyere cheese, shredded
3 tablespoons parmesan cheese, grated
2 1/2 cups swiss chard, shredded

Steps:

  • In a small saucepan of boiling salted water, cook potato until tender, 10-12 minutes. Alternatively, cook potato in microwave until tender. Let cool for 5 minutes. Slice thinly and overlap in a greased small shallow gratin (casserole) dish.
  • In a small saucepan, heat butter over medium heat; cook onion and garlic until softened, about 3 minutes. Stir in the flour; cook for 1 minute. Whisking constantly, add milk, 1/2 cup at a time. Whisk in cayenne pepper, mustard, salt, pepper and nutmeg to taste. Reduce heat to low; simmer, whisking occasionally, until thickened, 5-7 minutes. Stir in Gruyere and Parmesan cheeses.
  • Pour 1/2 cup of sauce over potato. Top with Swiss chard, pressing to compact. Pour remaining sauce over top. Bake in a 400 F oven for 20-25 minutes or until bubbly and browned.

3 cups sorrel leaves
1/2 cup Greek yogurt
1 garlic clove, crushed
3 tablespoons olive oil
1/2 teaspoon Dijon mustard

1 1/4 pounds Swiss chard
1/3 cup pine nuts
4 ounces kashkaval cheese (or pecorino, coarsely grated
1 egg
6 tablespoons dried white bread crumbs
Mixture of vegetable oil and olive oil, for frying

Steps:

  • Make the sauce: In a food processor or a blender, place sorrel, yogurt, garlic, 2 tablespoons olive oil, the mustard and salt to taste; process until it is bright green. Taste and add salt, if desired. Refrigerate until needed.
  • Cut woody white stalks from chard leaves. Bring a large pan of water to boil. Add the stalks and simmer for 4 minutes. Then add the leaves, stir and continue simmering for 3 minutes. Drain the chard and allow to cool slightly. Once cool enough to handle, squeeze out as much water as possible. Chop leaves and stalks roughly and put in a medium bowl.
  • In a small skillet, fry pine nuts in 1 tablespoon olive oil for 1 minute, or until light brown. Add nuts and oil to the chard, followed by the cheese, egg, bread crumbs, 1/4 teaspoon salt and pepper to taste. If mixture is very soft and sticky, add more crumbs.
  • Pour enough frying oil into a large skillet to come 1/4 inch up the sides. Shape chard mixture into eight patties roughly 2 inches in diameter and 5/8-inch thick. Fry them for about 3 minutes on each side, or until golden brown. Place on paper towels to absorb oil. Serve warm or at room temperature, with sauce on the side.

3 tablespoons butter, divided
½ onion, chopped
1 bunch red Swiss chard, stems trimmed and finely chopped, leaves coarsely chopped
1 clove garlic, minced
½ cup heavy cream, or as needed
3 teaspoons Dijon mustard, or more to taste
salt and pepper to taste
2 medium tomatoes, diced
1 pinch ground nutmeg
2 tablespoons grated Parmesan cheese, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • Melt 2 tablespoons butter in a deep frying pan over low heat. Cook onions, chard stalks, and garlic until soft while stirring, 5 to 10 minutes. Add chard leaves and the rest of the butter. Cover and cook until chard is soft and wilted, about 8 to 10 minutes.
  • Combine cream and mustard in a bowl; season with salt and pepper. Add to chard in pan and simmer for 3 to 5 minutes. Add tomatoes, cover, and cook until tomatoes are soft, about 5 minutes. Season with nutmeg, salt, and pepper.

1bunch Swiss chard (about 500g)
1 lemon , grated zest and squeezed juice
1 kohlrabi , peeled and halved
300ml vegetable stock
2 tbsp chopped fresh parsley
100ml olive oil
large sprigs fresh rosemary , tarragon, coriander and parsley
2-3 garlic cloves

Steps:

  • Cut the white chard stems from green leaves in a V shape, slice diagonally into 5mm strips. Slit the leaves in half, roll 3-4 at a time like a cigar, thinly slice. Put in a bowl and scatter with a little lemon zest. Thinly slice kohlrabi and sprinkle with zest also.
  • Boil the stock and lemon juice to reduce by half. Pour in a jug and mix in the chopped parsley. Cool, whisk in most of the oil.
  • Put the rosemary, tarragon and coriander into a steaming pan with the garlic. Cover with water and bring to the boil. Fit basket on top. Sprinkle base with salt and pepper and lay in the kohlrabi. Scatter over white chard and season again. Top with the sprigs of parsley. Drizzle with oil, cover and steam, 5 mins. Remove parsley and scatter over the green chard, lifting up the white vegetables lightly with a large fork. Cover and steam for 3-4 more mins.
  • Remove to a serving dish and pour over some sauce to serve. This tastes wonderful with grilled salmon or a chicken breast.

1 pound spaghetti
1/2 cup Kalamata olives, cut into slivers
6 ounces feta, crumbled (1 1/2 cups)

Steps:

  • Heat oil in a 12-inch heavy skillet over medium heat until it shimmers, then cook garlic, stirring, until golden, about 3 minutes. Transfer garlic with a slotted spoon to paper towels to drain.
  • Cook onion in oil remaining in skillet over medium heat, stirring occasionally, until softened, 3 to 5 minutes. Add currants and cook, stirring, until plumped, about 1 minute.
  • Stir chard stems into onion mixture with water and 3/4 teaspoon each of salt and pepper. Cook, covered, over medium-high heat until almost tender, about 5 minutes. Stir in chard leaves and cook, covered, until stems and leaves are tender, about 5 minutes.
  • Meanwhile, cook spaghetti in a pasta pot of boiling salted water (2 tablespoons salt for 5 quarts water) until al dente. Reserve 1 cup pasta-cooking water and drain spaghetti.
  • Toss spaghetti with chard, olives, and 1/2 cup cooking water, adding more cooking water if necessary. Season with salt and pepper. Serve sprinkled with feta and garlic chips.
