Fresh Green Bean Salad image

I had a green bean salad at a local deli and enjoyed it so much, I tried to re-create it at home. The result was yummy! It lasts for several days in the fridge, and the taste keeps getting better. -Allison Brooks, Fort Collins, Colorado

4 cups fresh green beans, trimmed and halved
2 cups cherry tomatoes, halved
1 large English cucumber, seeded and chopped
1 cup fresh baby carrots, cut in half lengthwise
1 cup coarsely chopped fresh parsley
DRESSING:
1/2 cup olive oil
2 tablespoons lemon juice
1 tablespoon white wine vinegar
1 tablespoon grated lemon zest
1 teaspoon Dijon mustard
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a large saucepan, bring 4 cups water to a boil. Add beans; cook, uncovered, for 3 minutes. Drain and immediately place beans in ice water. Drain and pat dry., In a large bowl, combine the beans, tomatoes, cucumber, carrots and parsley. In a small bowl, whisk the dressing ingredients. Pour over salad; toss to coat. Refrigerate until serving. Serve with a slotted spoon.

1 1/2 lbs fresh green beans, cleaned and trimmed
2 large garlic cloves, minced
1/4 cup extra virgin olive oil
1 teaspoon dried tarragon
1 teaspoon dried dill
black pepper, to taste
2 teaspoons Dijon mustard
3 -4 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
1/2 cup fresh parsley, minced
1/3 lb swiss cheese, cut in thin strips
1/2 cup chopped ripe olives
1 small green pepper, cut in thin strips
1 small red pepper, cut in thin strips
1/2 cup chopped toasted almonds or 1/2 cup slivered toasted almond

Steps:

  • Blanch the green beans until tender-crisp. Cool them under cold water.
  • Slice the cheese and veggies.
  • Prepare the dressing by whisking oil, vinegar, mustard, garlic, and herbs together.
  • Toss green beans, veggies and cheese with dressing.

This is a family favorite of green beans, cheese, sour cream, and cereal crumbs.

5 tablespoons butter, melted
2 tablespoons all-purpose flour
2 teaspoons grated onion
1 teaspoon white sugar
1 teaspoon salt
¼ teaspoon ground black pepper, or to taste
1 cup sour cream
8 ounces Swiss cheese, grated
2 (15 ounce) cans cut green beans, drained
1 cup cornflakes cereal crumbs

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a 3 quart saucepan combine 2 tablespoons melted butter, flour, onion, sugar, salt, pepper, sour cream and 4 ounces of the cheese. Cook over low heat and stir constantly until thickened. Fold in green beans. Pour into a 2 quart casserole dish and sprinkle the rest of the cheese on top.
  • In a small bowl combine cereal crumbs and melted butter; sprinkle over beans.
  • Bake in preheated oven for 20 minutes.

In the past, I'd can about 50 quarts of green beans every year, but now my husband suggests I can only enough to keep making this salad. -Lorraine Mix, Remer, Minnesota

2 tablespoons sour cream
1 tablespoon prepared Italian salad dressing
1 can (8 ounces) cut green beans, drained
1 medium tomato, chopped and drained
2 tablespoons finely chopped onion

Steps:

  • In a bowl, combine sour cream and salad dressing; mix well. Stir in beans, tomato and onion. Cover and refrigerate for 1 hour. Serve on lettuce.

1 1/2 pounds fresh, whole green beans
1/3 pound premium Swiss cheese, cut into thin strips
1/2 cup chopped ripe olives
1/2 cup thinly sliced red bell pepper
1/2 - 3/4 cup chopped, toasted almonds
Dressing:
5 tablespoons fresh lemon juice
2 large cloves garlic, crushed
1/2 cup olive oil
1 tablespoon red wine vinegar
1/2 teaspoon crushed tarragon
1/2 teaspoon dried dill weed
1/2 teaspoon salt, or to taste
freshly ground black pepper to taste
2 teaspoons prepared dark or Dijon style mustard
1/2 cup packed minced fresh parsley

Steps:

  • Wash and string green beans. Steam beans until just tender. Remove from heat; immediately rinse in cold water. Drain well; set aside. For Dressing: In large bowl, whisk together all ingredients for Dressing. Add beans and cheese; toss until Dressing is well distributed. Cover tightly and marinate 2-3 hours, stirring once an hour, at room temperature. Add olives and sliced pepper. Mix well; re-cover and marinate another 5 hours or overnight in refrigerator. Serve topped with almonds. Fun Fact: The borough and the region of Indiana, Pennsylvania, as a whole promotes itself as the "Christmas Tree Capital of the World" because the national Christmas Tree Grower's Association was founded there. 1/2 cup chopped onion
1/2 cup chopped celery
1 tablespoon flour
1 teaspoon sugar
3/4 teaspoon seasoning salt
1/4 teaspoon white pepper
1 cup half-and-half cream
3 (15 ounce) cans French style green beans, drained
3/4 cup crushed corn flakes
1 cup shredded swiss cheese

Steps:

  • Melt two tablespoons margarine in skillet and saute onion and celery.
  • Stir in flour, sugar, salt, and pepper. Cook 1 minute on medium heat, stirring constantly.
  • Reduce heat and slowly add cream and stir until smooth.
  • Cook and stir over low heat for 2 minutes until mixture is thick. DO NOT BOIL.
  • Fold in green beans, and spread into greased 9x13 inch baking dish.
  • Melt remaining margarine and toss with cornflake crumbs, mix in cheese, and sprinkle over the top of casserole.
  • Bake uncovered at 325 degrees for 25 minutes or until heated thoroughly.
