1-1/2 pounds lamb stew meat
2 tablespoons olive oil, divided
3 large onions, quartered
3 medium carrots, cut into 1-inch pieces
4 small potatoes, peeled and cubed
1 can (14-1/2 ounces) beef broth
3/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
1 tablespoon all-purpose flour
1-1/2 teaspoons minced fresh parsley
1-1/2 teaspoons minced chives
1/2 teaspoon minced fresh thyme

Steps:

  • In a Dutch oven, brown meat in 1 tablespoon oil over medium heat until meat is no longer pink. Remove with a slotted spoon; set aside. Add the onions, carrots and remaining oil to pan. Cook for 5 minutes or until onions are tender, stirring occasionally. Add the potatoes, broth, salt, pepper and lamb; bring to a boil. , Remove from the heat. Cover and bake at 350° for 50-60 minutes or until meat and vegetables are tender., With a slotted spoon, remove meat and vegetables to a large bowl; set aside and keep warm. Pour pan juices into another bowl; set aside. , In the Dutch oven, melt butter over medium heat. Stir in flour until smooth. Gradually whisk in pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the parsley, chives, thyme, and meat and vegetables; heat through.

1 ½ pounds thickly sliced bacon, diced
6 pounds boneless lamb shoulder, cut into 2 inch pieces
½ teaspoon salt
½ teaspoon ground black pepper
½ cup all-purpose flour
3 cloves garlic, minced
1 large onion, chopped
½ cup water
4 cups beef stock
2 teaspoons white sugar
4 cups diced carrots
2 large onions, cut into bite-size pieces
3 potatoes
1 teaspoon dried thyme
2 bay leaves
1 cup white wine

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside.
  • Put lamb, salt, pepper, and flour in large mixing bowl. Toss to coat meat evenly. Brown meat in frying pan with bacon fat.
  • Place meat into stock pot (leave 1/4 cup of fat in frying pan). Add the garlic and yellow onion and saute till onion begins to become golden. Deglaze frying pan with 1/2 cup water and add the garlic-onion mixture to the stock pot with bacon pieces, beef stock, and sugar. Cover and simmer for 1 1/2 hours.
  • Add carrots, onions, potatoes, thyme, bay leaves, and wine to pot. Reduce heat, and simmer covered for 20 minutes until vegetables are tender.

3 pounds boneless lamb shoulder
Salt and freshly ground black pepper
3 medium onions, peeled and quartered, or 12 baby onions
1 leek, white and light green, coarsely chopped
5 swedes (rutabagas), peeled and quartered
2 turnips, peeled and cut into eighths
2 1/2 cups lamb stock or water
12 baby red-skinned potatoes
4 tablespoons unsalted butter
4 tablespoons flour
1/4 cup freshly chopped parsley
1 tablespoon chopped fresh chives

Steps:

  • Cut the shoulder meat into 1 1/4-inch cubes and trim off the large chunks of fat. Place the fat in a heavy pan or Dutch oven over medium low heat and cook until the fat runs out, about 5 minutes. Discard any solid bits of fat that remain.
  • Season the meat with salt and pepper and add to the hot fat. Brown meat on all sides, working in batches if necessary, about 5 minutes per batch. Transfer browned meat to a casserole. Add the onions, leeks, swedes, and turnips to the pot, season with salt and pepper, and brown lightly in the fat. Add the vegetables to the casserole. Pour the stock into the pan, bring to a boil, and stir to dissolve the caramelized bits. Pour into the casserole. Lay the potatoes over the vegetables in the casserole, season with salt and pepper, and bring to a boil over the stove.
  • Cover the casserole, reduce heat to medium-low, and simmer until the lamb is tender and vegetables are cooked, stirring occasionally, about 1 hour.
  • When stew is cooked, pour off cooking liquid into a clean saucepan. Skim off any excess fat and bring liquid to a simmer. In another saucepan, make a roux by melting the butter, then whisking in the flour until it forms a smooth paste. Cook roux over low heat for 2 minutes. Add roux to cooking liquid, whisking until thickened slightly. Add parsley and chives, taste for seasoning, and pour back over casserole. Bring casserole back up to a simmer and serve immediately.

1 tablespoon olive oil
1 1/2 cups lamb stock or 1 1/2 cups beef stock
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup white wine
1/4 cup turnip (Cut into 1/2 inch cubes)
8 white pearl onions (Peeled)
2 teaspoons cornstarch
1/4 g saffron
1/4 cup fresh cream
1 teaspoon chopped fresh parsley

Steps:

  • Cut lamb meat into 30gr cubes.
  • Pan-fry lamb over high heat for 2 minutes.
  • Add beef stock (or buillion), white wine and seasoning.
  • Cover and simmer for 40 minutes.
  • Add turnips and pearl onions and simmer until tender, about 5 minutes.
  • Add cornstarch (diluted with a little water) to thicken the sauce.
  • Add about a pinch of saffron, then the cream, then adjust seasoning (salt and pepper) to taste.
  • Garnish with chopped parsley.

1 boneless leg of lamb (about 6 pounds), cubed into 1 1/2-inch pieces
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1 large onion, chopped
6 large carrots, unpeeled and cut into 2-inch pieces
6 cloves garlic, peeled and left whole
2 tablespoons tomato paste
2/3 cup red wine
2 cups beef stock
3 sprigs fresh rosemary
3 sprigs fresh thyme
2 bay leaves
1/4 cup chopped fresh parsley

Steps:

  • Preheat the oven to 300 degrees F.
  • Generously sprinkle the leg of lamb with salt and pepper.
  • Heat the oil in a large pot or Dutch oven over a medium-high heat. In two batches, brown the lamb all over and remove to a plate, 4 to 6 minutes per batch.
  • Add the onions, carrots and garlic. Season with a pinch of salt and pepper, then cook for a minute or two. Add the tomato paste and stir. Deglaze with the red wine and beef stock, scraping the bottom of the pot. Stir in the rosemary, thyme and bay leaves. Return the lamb to the pot and bring to a simmer.
  • Place the lid on the pot and roast until the meat is very tender, 2 to 2 1/2 hours. Sprinkle over the parsley and serve.

3 tablespoons olive oil
4 slices center-cut bacon
2 pounds lamb stew meat
4 cups mushrooms, quartered
6 large carrots, roughly chopped
5 cloves garlic, smashed
2 Vidalia onions, roughly chopped
1/4 cup all-purpose flour
4 cups beef stock
1/2 cup sherry
3 bay leaves
Salt and freshly ground black pepper
1 cup heavy cream
3 tablespoons chopped fresh parsley
3 tablespoons fresh tarragon leaves
1 bag petit frozen peas
Buttered noodles, for serving

Steps:

  • In a large pot over medium-high heat, add the olive oil and bacon. When the bacon begins to lightly brown, remove it from the pot with a slotted spoon and set aside. Add the lamb and let the meat brown on all sides, about 3 minutes per side. Remove the meat with a slotted spoon and set aside. Chop the bacon into 1/4-inch pieces.
  • Add the mushrooms, carrots, garlic, onions and bacon to the pot and stir. Mix in the flour. Add the beef stock, sherry, bay leaves and lamb. Add salt and pepper and cover the pot but leave a vent for the steam to escape. Bring the mixture to a simmer and simmer until the meat is tender and falling apart, about 2 hours.
  • Slowly stir in the heavy cream, parsley, tarragon and peas. Serve the stew in shallow bowls over buttered egg noodles.

EASY LAMB STEW



Easy lamb stew image

Let the oven do the work with this easy and flavourful lamb stew. The amounts are easily doubled, so you can freeze half to enjoy another day

2 tbsp vegetable oil
800g diced lamb shoulder
1 large onion, roughly chopped
4 large carrots, cut into large chunks
1 tbsp plain flour
1 tbsp tomato purée
750ml lamb stock
2 bay leaves
rosemary sprig or a pinch of dried rosemary
mash and greens, to serve

Steps:

  • Heat the oven to 160C/140C fan/gas 3. Meanwhile, heat the oil in a large flameproof casserole dish. Add the meat in batches and brown over a high heat for 5 mins, then lift onto a plate. Tip in the onions and carrots, and cook for 8-10 mins until starting to colour. Scatter over the flour and stir for a few minutes, then stir in the tomato purée and cook for a few minutes more. Tip the meat and any resting juices back into the dish and stir well. Pour over the stock, tuck in the herbs and season well. Bring to a simmer, then remove from the heat.
  • Cover with a lid and put in the oven for about 2 hrs 30 mins until the meat is tender. Once cooled, the stew can be chilled and frozen for up to three months - defrost completely before reheating on the hob for 5 mins over a medium heat, until piping hot. Leave to settle for a minute or two, then serve with mash and greens.

1 tablespoon white wine vinegar
2 teaspoons sugar
1/4 cup chopped fresh dill
2 tablespoons whipping cream

Steps:

  • Place lamb, 4 cups water, onion, carrot, bunch of dill, peppercorns, and salt in heavy large pot. Bring to boil over medium-high heat, skimming off foam. Reduce heat to medium-low, cover and simmer until meat is tender, stirring occasionally, about 1 1/2 hours. Strain broth into medium saucepan. Boil until reduced to 21/3 cups, about 8 minutes. Meanwhile, remove lamb from vegetables; discard vegetables.
  • Melt butter in medium saucepan over medium heat. Add flour and whisk 1 minute. Whisk in 2 1/3 cups reduced broth. Cook until sauce thickens and boils, whisking occasionally, about 6 minutes. Whisk in white wine vinegar, sugar and 1/4 cup chopped fresh dill. Simmer 3 minutes to blend flavors. Stir in cream and lamb and simmer until heated through, about 2 minutes. Season to taste with salt and pepper. Transfer to serving bowl.

2 pounds lamb stewing meat, with bones
1 medium onion, sliced
2 cloves garlic, minced
3 pieces lemon peel
1 teaspoon turmeric
1 teaspoon Hungarian paprika
1 teaspoon cumin
1 cup water
1 bunch Swiss chard, stalks removed
1 1/2 pounds fava beans, shelled
6 medium leeks, cut in 1 1/2 inch slices
Coarse salt and freshly ground pepper to taste
Fresh coriander or parsley to garnish, chopped

Steps:

  • Remove excess fat from lamb and cut the meat into one-and-onehalf-inch pieces. Using a large casserole dish about 12 inches across, or an earthenware dish that can be used on top of a flame, brown the pieces of lamb. If there is a lot of fat pour off the excess.
  • Add the onions, lemon peel and garlic. Sprinkle with the turmeric, paprika and cumin. Add one cup water. Cover and simmer over low heat for one hour, stirring occasionally.
  • Meanwhile soak the leeks in cold water and rinse thoroughly, making sure there is no grit in the stalks. Carefully wash the Swiss chard and tear into large pieces.
  • Add the leeks, beans and Swiss chard in that order to the casserole. Season with salt and pepper. Cover and simmer for 20 minutes, stirring occasionally. If necessary, add a little more water (the chard should be provide some more liquid of its own). When the beans and leeks are tender, remove from the stove, sprinkle with parsley or coriander and serve.

1 tablespoon flour
Salt and freshly ground black pepper
2 pounds lamb shoulder cut into pieces about 1 by 2 inches (with some bone)
2 tablespoons cooking oil
1 medium onion, chopped
2 cloves garlic, minced
1/2 cup dry white wine
1/2 cup chicken stock
1/2 teaspoon rosemary
1/2 teaspoon grated lemon zest
1 tablespoon butter
12 small whole new potatoes, peeled
1 cup fresh green peas
1/3 cup chopped scallions
1 tablespoon minced parsley

Steps:

  • Season flour with salt and pepper. Lightly dust lamb with flour.
  • Heat 2 tablespoons of oil in large skillet equipped with cover and sear lamb over medium-high heat until golden. Do not crowd meat in skillet. Remove browned lamb to dish, lower heat and saute onion and garlic in skillet until soft but not browned.
  • Return lamb and any accumulated juices to skillet and add wine, chicken stock, rosemary and lemon zest. Cover and simmer over low heat for 20 minutes.
  • Melt butter in another skillet and toss potatoes in it over medium heat until they become golden. Remove potatoes, draining well and leaving as much of butter as possible in skillet. Add potatoes to skillet with lamb, season with salt and pepper to taste and continue cooking, covered, for 45 minutes until potatoes are tender. Lamb should also be tender by this time.
  • When potatoes are just tender, add peas to skillet and cook for 10 minutes longer. Meanwhile, toss scallions over medium heat in butter remaining in skillet from potatoes. Cook until scallions are tender but still bright green. Add to stew along with parsley, reseason with salt and pepper as necessary and serve.
