SWORDFISH BAKED WITH HERBS



Swordfish baked with herbs image

This is a beautiful dish that works equally well with tuna, Spanish mackerel or swordfish. Rosemary is an unusual herb to use with fish but in this case adds a subtle, savoury character.

400g swordfish, cut into 2 steaks
Sea salt and freshly ground pepper
2 ripe tomatoes, halved, juice and seeds removed, and chopped
3 tbsp chopped parsley
1 tbsp chopped mint
2 sprigs fresh thyme leaves
1 tsp rosemary leaves, finely chopped
1/2 clove garlic, finely chopped
Splash of white wine
Juice of half a lemon
Extra virgin olive oil

Steps:

  • Preheat oven to 180C. Season fish with salt and pepper and place in an ovenproof dish. Combine the tomatoes, herbs and garlic in a bowl, then sprinkle over the fish. Add the white wine, lemon juice and a good drizzle of extra virgin olive oil. Bake in the oven for 12-15 minutes or until just cooked through. To serve Serve immediately.

1/2 cup mayonnaise
2 tablespoons fresh lemon juice
1 small garlic clove, pressed
1/2 teaspoon dried basil, crumbled
1/2 teaspoon dried thyme, crumbled
1/2 teaspoon dried tarragon, crumbled
1/2 teaspoon dried dillweed
2 6-ounce swordfish steaks
1/4 cup dry white wine

Steps:

  • Combine mayonnaise, lemon juice, garlic, basil, thyme, tarragon and dill in a small bowl. Season with salt and pepper. (Herb sauce can be prepared 2 days ahead. Cover and refrigerate.)
  • Butter 8-inch square baking dish. Spread each side of swordfish steaks with 1 tablespoon herb sauce. Place in prepared dish and chill 30 minutes.
  • Preheat oven to 400°F. Pour wine over swordfish. Bake until fish is just cooked through, about 17 minutes. Transfer to plates. Serve, passing remaining herb sauce separately.

I got this recipe from Food Network's Tyler Florence. I used Black Grouper instead of swordfish and it came out great. Hope you enjoy as much as we did.

4 fresh baby artichokes, trimmed and quartered
2 tomatoes, coarsely chopped
1 lemon, thinly sliced
1/2 cup black olives
1/2 bunch fresh basil
8 sprigs fresh thyme
4 teaspoons extra virgin olive oil
4 (6 ounce) fish fillets, about
kosher salt
fresh ground black pepper

Steps:

  • Preheat oven to 350°F.
  • In large bowl combine the artichokes, tomatoes, lemon, olives, and herbs.
  • Drizzle with olive oil, season with salt and pepper, and toss together.
  • Take an 18-inch piece of aluminum foil and fold in half crosswise.
  • Fold a 1-inch strip on each side over twice, once to close and once to seal; you should now have a pouch.
  • Repeat for 3 more pouches.
  • Season the fillets with salt and pepper and place 1 into each pouch.
  • Add 1/4 artichoke mixture to each pouch.
  • Fold over a 1-inch strip of the top twice to seal.
  • Place the packets onto a sheet pan and bake for 20 to 25 minutes, depending on thickness of your fish.
  • Carefully open the pouches and place fish and vegetables onto warm plates.
  • Spoon any juices that have accumulated over the fish.
  • Serve immediately.

This is one of my and my husband's favorite recipes. The swordfish is so flavorful and colorful it will brighten your whole day!

½ (12 ounce) bottle olive oil
¼ cup lemon juice
¼ cup soy sauce
2 tablespoons chopped fresh parsley
2 teaspoons minced garlic
1 teaspoon dried dill
ground black pepper to taste
2 pounds swordfish steaks

Steps:

  • Whisk olive oil, lemon juice, soy sauce, parsley, garlic, dill, and pepper together in a large glass or ceramic bowl. Add swordfish and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 to 4 hours; the longer you marinate the fish, the stronger the flavor will be.
  • When ready to cook, preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove swordfish from the marinade and shake off excess. Discard the remaining marinade.
  • Cook swordfish on the preheated grill until fish is tender and flakes easily with a fork, about 4 minutes per side. Swordfish cooks very quickly and your grill will flare up with this marinade!
