1 dried shiitake mushroom*
1 small cluster woodear mushroom* or black fungus (or use any mushroom of choice)
200 g firm tofu (cut into 1.5-cm [1/2-inch] cubes [7 oz] )
1 medium carrot (thinly sliced into half moons [115g])
1 medium courgette (zucchini, sliced into half moons [175g] )
1 yellow or red bell pepper (cut into 2.5cm [1-inch] cubes)
3 - 4 spring onions (scallions)
1 ½ cups bean sprouts ([100 g])
1 large fresh tomato (cut and blended to a puree (or 150 ml canned tomato puree))
4 - 5 cloves (ground (or 1/2 teaspoon Sichuan peppercorn*, ground))
1 star anise*
1 tablespoon ginger-garlic paste (make your own homemade minced ginger and garlic, see notes below)
1 - 2 teaspoons ground chilli paste (like Sambal Oelek* or chilli bean paste like gochujang)
1 dried red chilli
2 tablespoons Chinese Shaoxing rice wine* ((or dry Sherry))
1 teaspoon balsamic vinegar (or Chinese black rice vinegar*)
1 tablespoon potato starch (or cornstarch)
3 - 5 tablespoons soy sauce (or tamari or use our homemade soy-free gluten-free soy sauce, see notes below)
1 teaspoon sugar (or other sweetener)
2 tablespoons coconut oil or cooking oil
Salt to taste
Swap the Chinese rice wine with a gluten-free cooking white wine or dry Sherry.
Substitute the Chinese black vinegar with balsamic vinegar.
Replace the soy sauce with tamari or our homemade soy-free gluten-free soy sauce.
Omit the tofu. Replace it with some chickpea tempeh
Substitute the soy sauce with our soy-free soy sauce recipe (see notes below.)

Steps:

  • Place the shiitake and the woodear mushrooms in a small bowl. Cover with hot water and let soak.
  • Once rehydrated, cut the woodear mushrooms into small pieces.
  • Leave the shiitake to continue soaking in the water. We will use this water later in the sauce.
  • Chop the spring onions. Separate the white and green part.
  • In a wok or sauté pan, heat 2 tablespoons of oil on medium temperature.
  • Add the ground cloves (or Szechuan peppercorns), the star anise and the dried red chilli. Roast for about 20 seconds. This will flavour the oil.
  • Next add the ginger-garlic paste, chilli paste and white part of the spring onions. Stir fry for another minute.
  • Add in the tofu pieces. Stir fry until tofu is slightly crispy on all sides (about 10 minutes).
  • Add a little of the shiitake water if the tofu is sticking to the pan.
  • Add the carrots and stir fry for about 3 minutes. Add the tomato puree and continue to sauté for 2 - 3 minutes.
  • Next add the courgette and bell peppers. Stir fry for another minute.
  • Add the Shaoxing wine, balsamic vinegar, a little of the shiitake water and the sugar.
  • Dilute the potato starch in the rest of the shiitake water. Add this mixture to the pan and stir immediately. The sauce will thicken quickly.
  • Add more water if required to make more sauce.
  • Add the soy sauce (3 - 5 tablespoons depending on taste and colour).
  • Add the bean sprouts and the rehydrated chopped woodear mushrooms.
  • Lastly adjust salt to taste if necessary (or use more soy sauce).
  • Garnish with the remaining green spring onions and serve over rice or noodles.

1 red bell pepper, julienned
1 green bell pepper, julienned
1 yellow bell pepper, julienned
1/2 cup red onion, julienned
1 cup thickly cut yellow squash (half-moon slices)

1 baby eggplant, cut into chunks
1 clove garlic, minced
1 to 2 tablespoons peeled and minced ginger
1/4 cup sesame oil
1/2 cup teriyaki sauce (average 2 grams sugar per serving)
1/2 cup canned straw mushrooms
3 cups sliced bok choy
2 cups fresh bean sprouts
1/3 cup sliced bamboo shoots
1 teaspoon garlic powder
1/2 teaspoon fresh ground black pepper
1/2 teaspoon kosher salt
1/8 teaspoon cayenne pepper, optional
1/2 cup snow peas
1/2 cup kimchee, optional, for garnish (spicy hot Chinese marinated cabbage)

Steps:

  • Start by preparing and cutting all the vegetables and measuring your ingredients so that they are ready to go. Once you begin stir-frying, it goes very quickly.
  • In a wok or large saute pan, heat canola oil over high heat to almost smoking. While stirring constantly, 1 at a time, add in the peppers and onions, followed by the squash, zucchini, eggplant, garlic, ginger, sesame oil, and teriyaki sauce. Cook for about 2 minutes and then add in the remaining ingredients and seasonings, except for the snow peas. Cook about 2 minutes more. Stir in snow peas when done and remove from heat. Serve immediately garnished with kimchee, if desired.

Szechuan Tofu and Veggies! A flavorful vegan stir-fry with crispy tofu, szechuan sauce and loaded up with healthy vegetables! Quick, easy and flavorful!!!

8-12 ounces tofu, patted dry and cubed (or sub shrimp or chicken cubes)
2 tablespoons peanut oil or high heat oil
generous pinch salt and pepper
½ cup thinly sliced onion
4 ounces sliced mushrooms (optional)
2 cups shredded cabbage (or shredded brussels, or shredded broccoli)
1 cup shredded carrots or matchstick
½ red bell pepper, thinly sliced
1 cup asparagus, snap peas, or green beans
optional: 6-8 small dried red Chinese or Arbol chilies
¼ cup Szechuan Sauce and more to taste! (please multiply if doubling or tripling the recipe)
garnish: scallions, sesame seeds, chili flakes

Steps:

  • Heat oil in a skillet. Season oil generously with salt and pepper. With tofu, I generally use ½ teaspoon kosher salt per ½ pound of tofu. Swirl the seasoned oil around until spread out uniformly. Add tofu and sear on at least two sides, until crispy and golden. Be patient here. Set aside.
  • To the same pan, add a little more oil if needed, onion, and mushrooms and sauté over medium-high heat - stirring constantly, until tender, about 3 minutes. Add the remaining veggies, add the dried red chilies if you like -and lower heat to medium, and sauté, tossing & stirring for 3-5 minutes until just tender or al dente. Tender, but vibrant and still slightly crisp!
  • Add the Szechuan Sauce, starting with ¼ cup and adding more to taste. If you are cooking more than one batch, you'll need to multiply the sauce accordingly. Cook the sauce 2 minutes, letting it thicken a bit. Toss in the crispy tofu ( or shrimp or chicken) right at the end, just to warm it up.
  • Divide among bowls. Sprinkle with sesame seeds and scallions. Add chili flakes for more heat.
  • Serve this just as it is, or over rice, or noodles... and remember, do not eat the dried chilis!

1 1/2 cups water
2/3 cup jasmine rice or 2/3 cup other aromatic rice
1/4 cup hoisin sauce
2 tablespoons sherry wine
2 tablespoons honey
1/4 teaspoon crushed red pepper flakes
2 teaspoons dark sesame oil
1/3 cup sliced scallion
3 garlic cloves, minced
1 tablespoon minced fresh ginger
1 large red bell pepper, diced
2 large carrots, shredded
6 ounces snow peas, sliced on the diagonal
1 cup canned baby corn, rinsed and drained
1 (8 ounce) can sliced water chestnuts, drained
1 lb firm tofu, cut into 2-inch squares
2 teaspoons cornstarch, blended with
1 tablespoon water

Steps:

  • In medium covered saucepan, bring water to a boil. Add rice, reduce heat and simmer until all of water is absorbed and rice is tender, about 20 minutes.
  • Meanwhile, in small bowl, stir together hoisin sauce, sherry, honey, red pepper flakes, and 1/2 cup water; set aside.
  • In large nonstick skillet, heat sesame oil over medium heat. Add scallions, garlic and ginger, and cook until softened, about 2 minutes. Stir in bell pepper and carrots, and saute until vegetables are crisp-tender, about 2 minutes.
  • Add snow peas, baby corn and water chestnuts, and cook, stirring frequently, until snow peas are crisp-tender, about 2 minutes.
  • Add hoisin mixture and tofu, bring to a boil and cook until tofu is hot, about 1 minute. Stir in cornstarch mixture, bring to a boil and boil until sauce is lightly thickened, about 1 minute. Serve stir-fry on top of jasmine rice.

½ -1 teaspoon Szechuan Peppercorns (or sub black peppercorns)
1/4 cup soy sauce ( of Gluten-Free Liquid Aminos) see notes.
3 tablespoons honey (or sub maple syrup, coconut sugar, brown sugar or sugar alternative)
1 tablespoon sesame oil
1 tablespoon rice wine vinegar (or black vinegar)
1 tablespoon Chinese cooking wine (shaoxing) or mirin (both optional)
3 garlic cloves, finely minced (use a garlic press)
2 teaspoons fresh ginger, finely minced ( or use ginger paste)
1 tablespoon garlic chili paste (or sambal oelek) more for more spicy or sub 1 teaspoon chili flakes
½ teaspoon Chinese Five Spice
optional- 2-3 teaspoons corn starch, to thicken, see notes.

Steps:

  • Toast szechuan peppercorns in a hot dry skillet over medium heat, until fragrant, about 1-2 minutes. Crush.
  • Place all ingredients in a medium bowl or small jar and whisk until well combined.
  • If using as a stir-fry sauce, and you would like to thicken it, whisk in 2 teaspoons cornstarch.
  • If using as a marinade, forgo the cornstarch and make sure to season what you are marinating ( chicken, tofu, beef) with salt. The marinade alone will probably not be salty enough.
  • If making a stir-fry, try adding a few dry Chinese or Arbol chilies (5-10) to the stir-fry, right before adding the Szechuan Sauce. Do not eat the chilis. ????

1/4 cup red bell pepper strips
1/2 cup vegetable broth
1/2 cup fresh or frozen broccoli florets
1/2 cup baby carrots
2 scallions (white and light green parts), slivered
2 Tbs. grated fresh ginger
1 tsp. red pepper flakes, or to taste
1/2 tsp. honey
2 1/2 Tbs. hoisin sauce
1 lb. firm or baked tofu, well drained and cut into strips

Steps:

  • In wok or large, heavy skillet, heat oil over medium-high heat. Add onion and bell pepper and stir-fry 1 minute. Add broth and bring to a boil. Add broccoli, carrots and scallions and stir-fry 2 minutes. Add ginger, red pepper flakes and honey; cover and cook until vegetables are crisp-tender, about 2 minutes. Meanwhile, in small bowl, mix hoisin sauce and 2 1/2 Tbs. water until well blended. Add to stir-fry and mix gently, then add tofu strips and toss gently. Cook, stirring occasionally, just until heated through. Serve right away.
