1 1/2 cups cheddar cheese, shredded, divided
1 (8 ounce) package cream cheese
1/4 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1 -2 teaspoon chili powder
1 teaspoon cumin

Steps:

  • Mix 1/2 cup cheddar cheese thoroughly with all remaining ingredients.
  • Form mixture into a ball.
  • Roll ball in remaining cheddar cheese to coat.

This Taco Cheese Ball could not be easier to make! It is loaded with Mexican cheese and taco seasoning for a simple and addictive appetizer recipe that's perfect for parties and beyond!

2 cups Mexican cheese (shredded)
16 ounces cream cheese (softened)
1 ½ tablespoon taco seasoning
2 tablespoons fresh cilantro (finely minced)
½ cup pecans (chopped)

Steps:

  • Add Mexican cheese to a food processor and pulse until crumbly.
  • Add the Mexican cheese, cream cheese, and taco seasoning to a large bowl and beat with a hand mixer until fully combined. Scrape down the sides of the bowl as needed.
  • Cover the mixture and chill in the refrigerator for at least 2 hours.
  • Mix together the minced cilantro and the chopped pecans in a medium bowl. Form the cheese mixture into a ball and roll it in the nut mixture until evenly coated. Plate and serve with tortilla chips or crackers.

The secret ingredient in these apps is a link of fresh chorizo-the spicy Mexican pork sausage (not to be confused with the cured Spanish kind). It does double duty here, adding a zesty taco kick and keeping the meatballs extra moist.

3/4 pound ground beef
1 link fresh chorizo (3 to 4 ounces), casing removed
1 large egg
1/4 cup fine yellow cornmeal
2 tablespoons tomato paste
1 tablespoon chili powder
1 tablespoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon granulated onion
Kosher salt and freshly ground black pepper
2 cups corn tortilla chips
2 ounces Cheddar, cut into 30 cubes just under 1/2 inch thick
Shredded iceberg lettuce, guacamole, pico de gallo and sour cream, for serving

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment.
  • Mix together the ground beef, chorizo, egg, cornmeal, tomato paste, chili powder, cumin, oregano, granulated onion, 1 teaspoon salt and a few grinds of pepper with your hands in a large bowl. Scoop the mixture into tablespoon-sized portions. For each, press 1 cube of cheese into the center, press the meat around it to seal, and roll into a smooth ball.
  • Put the chips in a plastic bag, seal and crush with a rolling pin. Drop 3 or 4 meatballs at a time into the bag, and roll them around to lightly coat with the crushed chips. Arrange the coated meatballs on the prepared baking sheet, and bake until the outsides are browned and the cheese is melted inside, 10 to 12 minutes.
  • Serve the meatballs on a platter over a bed of shredded lettuce with guacamole, pico de gallo and sour cream on the side.

It's fire hot and it's right up a man's alley for tailgating and parties. Best served with tortilla chips. Can store nicely for a week before serving.

¾ cup dried parsley
4 cups shredded Mexican cheese blend
1 (8 ounce) package cream cheese, softened
¼ cup mayonnaise
1 (1.25 ounce) package hot taco seasoning mix (such as McCormick®)
¼ cup pickled jalapeno peppers, chopped

Steps:

  • Sprinkle parsley in a shallow baking dish. Set aside.
  • Mix Mexican cheese blend, cream cheese, mayonnaise, taco seasoning, and jalapeno peppers in a large bowl until well blended. Divide the mixture into 3 portions, and roll each portion into a ball. Roll each ball in the parsley until completely covered. Wrap individually with plastic wrap, and refrigerate for at least 2 hours, or overnight.

2 (8-oz) packages cream cheese, softened
1 cup shredded Mexican cheese blend
1 (4-oz) can of Old El Paso™ diced green chiles, drained
1 (1-oz) package Old El Paso™ taco seasoning mix
1/4 cup sliced green onions (about 2 green onions)
1 teaspoon lime juice
1 cup crushed tortilla chips (about 3 cups whole)
Tortillas chips and sliced red and green bell pepper for serving

Steps:

  • In a food processor, add the cream cheese, shredded cheese, diced green chilies, taco seasoning, green onions, and lime juice. Pulse well until ingredients are completely combined.
  • Line a bowl with plastic wrap. Spoon the mixture on top of the plastic wrap and wrap completely forming a ball.
  • Chill in the fridge (or the freezer for faster chilling) for at least an hour until ball is firm.
  • In a food processor, crush chips until fine.
  • Unroll ball from plastic wrap and roll in the crushed chips. Cut slices with a knife and serve with chips and bell peppers.

8 ounces Monterey Jack cheese, shredded
½ (1 ounce) packet taco seasoning
1 bunch fresh cilantro, stems removed
4 stalks green onions, roughly chopped
1 (4 ounce) can diced green chile peppers
1 medium Roma tomato, cored and diced
2 tablespoons finely chopped white onion
1 medium jalapeno pepper, seeded and finely chopped

Steps:

  • Line a 16-ounce bowl with plastic wrap, allowing excess to hang over the sides.
  • Combine cream cheese, Monterey Jack cheese, and taco seasoning in a food processor; process until well combined. Add green onions, ½ of the cilantro leaves, and green chiles and pulse until well combined with flecks of green; do not fully process.
  • Transfer cheese mixture to the lined bowl and press to smooth. Cover and refrigerator for at least 4 hours or up to 8 hours or overnight.
  • Invert cheese onto a serving platter and remove plastic. Use a small shot glass or spoon to create a hole in the center of the cheese to form a wreath shape.
  • Finely chop remaining cilantro leaves and lightly cover the top of the cheese. Combine tomato, onion, and jalapeno in a small bowl and place over the cilantro in a 1-inch ring around the wreath.
