Time 1h45m

Yield 25

Number Of Ingredients 12

5 cups chopped green tomatoes
4 cups fresh tomatillos, husked, rinsed, and chopped
1 ½ cups golden raisins
1 ½ cups chopped onion
2 ¼ cups packed brown sugar
½ teaspoon salt
1 ¾ cups apple cider vinegar
1 ½ tablespoons pickling spice
1 ½ teaspoons chili powder
2 tablespoons finely chopped crystallized ginger
1 tablespoon brown mustard seed
5 (1 pint) canning jars with lids and rings

Steps:

  • Place the green tomatoes, tomatillos, raisins, onion, brown sugar, salt, apple cider vinegar, pickling spice, chili powder, crystallized ginger, and brown mustard seed into a large pot over medium heat. Bring to a boil, and stir until the brown sugar has dissolved. Reduce heat, and simmer the chutney until thickened, 1 to 2 hours, stirring occasionally to keep chutney from burning on the bottom.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the chutney into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 15 to 20 minutes, or the time recommended by your county Extension office.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area. Any uncanned chutney can be refrigerated or frozen.

MANGO-TAMARIND CHUTNEY

Mango-Tamarind Chutney image

This chutney is sweet, hot and a little sour. You could use green mango in place of the ripe mango. Try this chutney with these spicy corn pakoras.

Provided by David Tanis

Categories     easy, quick, condiments

Time 20m

Yield 2 1/2 cups

Number Of Ingredients 9

4 ounces seedless tamarind pulp, about 1/4 cup (or substitute 1/2 cup prepared tamarind juice)
6 tablespoons brown sugar
1/2 teaspoon kosher salt
1/2 cup finely diced red onion
1/2 teaspoon finely chopped fresh red or green chile or 1/4 teaspoon cayenne
2 teaspoons grated ginger
2 medium mangos diced 1/2-inch, about 2 cups
2 tablespoons chopped mint, optional
2 tablespoons chopped cilantro, optional

Steps:

  • To make tamarind juice, put the pulp in a bowl and cover with 1 cup boiling water. Stir well and let soak for 10 to 15 minutes. Set a fine-meshed strainer over another bowl, add soaked tamarind and press hard with a wooden spoon to extract the juice. This should yield 1/2 cup tamarind juice. Discard the solids left in the strainer. (If using prepared tamarind juice, skip this step.)
  • Add brown sugar and salt and stir to dissolve, then add onion, chile, ginger and diced mango and toss gently to combine. (Chutney may be prepared several hours in advance.) Just before serving, add mint and cilantro, if using.

TAMARIND CHUTNEY

Tamarind Chutney image

There is nothing quite like the tangy, sweet and sour sensation of tamarind, the main ingredient in this essential Indian chutney. In chaat, a category of spicy, savory, tangy and crunchy Indian snacks, tamarind chutney provides the pungent, pucker-inducing element that makes those dishes so craveable. In this recipe, from Maneet Chauhan's cookbook, "Chaat" (Clarkson Potter, 2020), the tamarind flavor is sweetened with jaggery, dates and raisins, and brightened up with ginger, with deep umami coming from the chaat masala. It's possible to find high-quality store-bought tamarind chutney, but nothing beats the vibrant flavors of a fresh batch made at home. -Priya Krishna

Provided by Maneet Chauhan

Categories     easy, snack, condiments, dips and spreads

Time 20m

Yield 4 servings

Number Of Ingredients 14

1 tablespoon vegetable oil
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon fennel seeds
1 teaspoon red-pepper flakes
1 (16-ounce) block seedless tamarind pulp, coarsely chopped (see Note)
1 cup jaggery or dark brown sugar
1/4 cup golden raisins
1/4 cup pitted dates, coarsely chopped
1 tablespoon finely chopped fresh ginger (from a 1-inch piece)
1 teaspoon chaat masala
1 teaspoon ground ginger
1/2 teaspoon kala namak (black salt)
Kosher salt

Steps:

  • In a medium sauté pan, heat the oil over medium until it glistens, about 1 minute. Add the cumin, coriander, fennel and red-pepper flakes, and sauté until aromatic and lightly browned, about 2 minutes.
  • Add the tamarind, jaggery, raisins, dates and fresh ginger, increase the heat to medium-high and bring to a boil. Reduce the heat to medium, and cook until the sauce is thick and coats the back of a spoon, about 10 minutes, stirring occasionally with a wooden spoon to prevent scorching and to encourage the flavors to mingle.
  • Remove the pan from the heat and stir in the chaat masala, ground ginger and kala namak. Transfer the chutney to a food processor or blender and blend on high speed until smooth, adding a little water if needed to create a thick but pourable consistency.
  • Taste and season with kosher salt. The chutney will keep in a covered container in the refrigerator for up to 2 weeks.

  • Make a small shallow cross, with a sharp knife, at the pointed end of each Tamarillo. Drop them in a pot of boiling water and turn the heat off. Cover the pot and let them sit in the water for 5 minutes. Take them out and let them cool. You will be able to easily peel the Tamarillos. Peel and roughly chop them and put them into a thick bottomed pot.
  • Peel, core and dice the apple and add to the tamarillo in the pot. Grate the onion and add this to the pot as well.
  • Now also add the brown sugar, vinegar, salt, red chilli powder, raisins and the allspice. Mix and bring to a boil. Turn down the heat and allow the mixture to cook. Stir occasionally to make sure the chutney doesn’t catch at the bottom of the pot. Let it thicken to desired consistency.
  • Take it off the heat and let it cool completely. Transfer to sterilized and airtight glass jars. The flavor will improve if left for a couple of days before using. I would suggest refrigerating the chutney once you open the jars.

  • Blanch tamarillos in boiling water for one minute. Refresh in iced water and remove skin. Roughly chop and place in a heavy-based saucepan with remaining ingredients. Stir to dissolve sugar and bring to the boil. Simmer, stirring regularly, until chutney has thickened, about 30 minutes.
  • While still really hot, place chutney in sterilised jars. Secure lids firmly and turn jars upside down - this creates a seal. Leave upside down until cool. Store in the cupboard for three months before using as gifts.
  • Tip To sterilise jars, put through the dishwasher on a hot cycle or wash well in hot soapy water, rinse then place in a pre-heated oven on 150C for 10 minutes.
