1/4 cup olive oil
1/4 cup apple cider vinegar ((or use red wine vinegar))
1 lime ((just the juice))
1 teaspoon cayenne powder
1 teaspoon ancho chili powder
1 teaspoon garlic powder ((or use fresh minced garlic))
1 teaspoon onion powder
1 teaspoon cumin
1 pinch sugar (to taste)
Salt, pepper, and chili flakes to taste
1 can black eyed peas (drained and rinsed (15 ounces))
1 can black beans (drained and rinsed (15 ounces))
2 jalapeno peppers (diced)
1 red bell pepper (diced)
2 Roma tomatoes (diced)
2 cups chopped red onion
2 ears fresh sweet corn (removed from husks)
1 avocado (diced)
1/2 cup fresh chopped cilantro

Steps:

  • Whisk the dressing/vinaigrette ingredients together in a small bowl until they thicken up.
  • Add all of the cowboy caviar ingredients to a large bowl and mix to combine.
  • Stir in the dressing/vinaigrette. Make sure everything gets nice and evenly coated.
  • Adjust for salt and pepper. Serve immediately with tortilla chips!

With bursts of corn, tomato and pepper, it's a salad that can be served cold or at room temperature, making it perfect for a picnic or tailgate party.

3 tablespoons cider vinegar
2 tablespoons finely chopped pickled jalapeno plus 1 tablespoon brine
1 teaspoon honey
Kosher salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil
One 15-ounce can black-eyed peas, rinsed and drained
One 15-ounce can black beans, rinsed and drained
1 cup frozen corn, thawed
1/2 cup roughly chopped fresh cilantro
4 scallions, chopped
2 plum tomatoes, seeded and chopped
1 red bell pepper, stemmed, seeded and chopped
Tortilla chips, for serving

Steps:

  • Whisk together the vinegar, pickled jalapeno brine, honey, 1/2 teaspoon salt and several grinds of pepper in a large bowl. Whisk in the oil to make a smooth dressing.
  • Add the black-eyed peas, black beans, corn, cilantro, pickled jalapeno, scallions, tomatoes and bell pepper. Toss to coat in the dressing. Season to taste with additional salt and pepper. Cover and refrigerate at least 1 hour to blend the flavors before serving. Serve with tortilla chips for scooping.

1 (15 ounce) can black-eyed peas, rinsed and drained
1 (15 ounce) can pinto beans, rinsed and drained
1 (11 ounce) can yellow shoepeg corn, drained
1 cup diced celery
1 small bunch cilantro leaves, chopped
½ red bell pepper, diced
½ yellow bell pepper, diced
½ cup chopped green onion
1 (2 ounce) jar chopped pimento peppers
2 tablespoons minced jalapeno pepper
1 tablespoon minced garlic
½ cup rice vinegar
½ cup extra virgin olive oil
⅓ cup white sugar
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Combine the black beans, black-eyed peas, pinto beans, shoepeg corn, celery, cilantro, red and yellow bell peppers, green onion, pimento peppers, jalapeno pepper, and garlic in a large bowl. Set aside.
  • Bring the rice vinegar, olive oil, sugar, salt, and black pepper to a boil in a saucepan over medium-high heat until sugar is dissolved, about 5 minutes. All to cool to room temperature, then pour over the bean mixture. Cover and refrigerate for 2 hours or overnight. Drain before serving.

1/2 cup diced fresh tomato
1/4 cup chopped fresh cilantro

Steps:

  • Pour pasta (from Suddenly Salad box) into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally. Drain pasta. Rinse with cold water; drain well.
  • In large bowl, stir together seasoning (from Suddenly Salad box), cold water, oil, lime juice, honey, cumin, pepper flakes and salt to make dressing.
  • Add pasta, chicken, bacon, beans, corn, bell pepper, tomato, cilantro and red onion to dressing mixture in bowl; toss to gently coat. Serve immediately, or cover and refrigerate until serving.

I got this recipe from a cookbook that came free in the mail (from a cigarette company of all things)!! I modified it slighty, and I've gotten nothing but compliments on it. I do tend to go heavier on the garlic & sometimes add a bit more vinegar than what's called for. It sets real nice if chilled overnight, but if time's an issue, chilling isn't totally necessary. I like to serve it in a bright colored bowl.

2 -4 garlic cloves, cut
1 medium onion, cut up
1/2 teaspoon salt

1 (7 ounce) can whole kernel corn (rinsed well)

Steps:
