NANA'S MASHED TURNIP
This was my grandmother's famous dish that my whole family just loved. She never wrote it down for me, so after she passed away I recreated it perfectly. This one's for you, Bubby!

Steps:
- Spread the turnips in a single layer in a large skillet with a lid. Add enough water to cover the turnips halfway and then add the butter and sugar. Bring to a boil and then reduce the heat to maintain a simmer. Partially cover with the lid and simmer until the turnips are tender, 8 to 10 minutes. Uncover, increase the heat to high and continue to cook, stirring occasionally, until the liquid almost completely evaporates and the turnips are glazed. Remove from the heat and stir in the vinegar and chives; season with salt and pepper.

TANGY SKILLET TURNIPS AND POTATOES
Turnips play an important role in Friulian cuisine, especially in the form called brovada-turnips that have fermented for several months, as a way to preserve them and to develop a pronounced and appetizing acidity. Brovada is incorporated in many dishes, grated and braised with sausages and other meats, in soups, or just as a tangy and healthful vegetable. This recipe, using fresh turnips, produces a side dish in the same vein as brovada, with distinctive acidity, well suited to accompany all sorts of cured and fresh meats. It is full of typical Friulian flavors, but you do not have to wait months for the turnip to ferment!

Steps:
- Pour 2 tablespoons of the olive oil in the big skillet, scatter in the bacon pieces, and set over medium-high heat. When the bacon starts to render fat, toss in the onion slices and garlic cloves. Cook, stirring and tossing, until the bacon is starting to crisp and the onion is just beginning to color.
- Pile all the turnip and potato chunks in the pan, sprinkle with salt, and toss everything together well for a couple of minutes. Lower the heat, cover the pan, and cook for about 15 minutes, occasionally turning the turnips and potatoes over as they soften and start to color.
- Stir together the vinegar, sugar, and 1/4 cup water. Push aside the vegetables to clear a space on the skillet bottom. Pour the vinegar into the hot spot, and as it sizzles, toss and turn the vegetables to moisten them. Spread the chunks in a layer filling the pan, cover, and cook for several minutes, until they've crisped on the bottom, then toss well and spread out again.
- Cook, covered, tossing and spreading every 4 minutes or so, until the potatoes and turnips are tender to the bite and caramelized all over, about 15 minutes. Season with more salt and freshly ground black pepper to taste. Serve right from the skillet, or heap the chunks in a warm bowl. Drizzle over the remaining 2 tablespoons olive oil, toss in the chopped parsley, and serve hot.

TURNIP MASHED POTATOES
This is a recipe that I saw Paula Deen make on the Food Network. I love turnips but know of very few ways to cook them. This is super easy and tastes really rich and good! (NOTE: This is the original recipe, but when I make this I peel the potatoes instead of leaving the skins on...)

- Lemony Lentil Turnip Chowder. I’ve never before come across a chowder quite like this. But I’m so happy I did! It’s a zippy, creamy bowl that’s surprisingly vegan.
- Parmesan Crusted Crushed Turnips. The concept of this dish is similar to smashed potatoes. You’ll boil, smash, and bake like you would with potatoes. However, these are a little extra special because they get a sprinkle of garlic and parmesan cheese.
- Roasted Turnips with Honey. Another terrific holiday side is this roasted turnip recipe. They’ll get a sweet kiss of honey and more depth from the thyme.
- Ice Water Salad. Get crafty with your salads and try this ice water recipe. Veggies like turnips, beets, and carrots take a long, cold bath. Once they’re done and dry, you’ll dress them up with a citrusy anchovy paste.
- Easy Turnip Green Soup (Swamp Soup) I admit swamp soup might not sound all that appealing. But if you love home-style southern cooking, you’ll want to give it a whirl.
