Steps:
- Bring a large pot of water to a boil. Salt the water. Add the pasta and cook according to the package instructions. Drain.
- In a large skillet, heat the butter, thyme and garlic over medium heat for 2 minutes. Add the mushrooms and cook until they release their water and begin to brown, about 7 minutes. Season generously with salt and freshly ground black pepper. Add the flour and cook 2 to 3 minutes. Whisk in the milk, cream and mustard. Season with salt and pepper. Bring to a low simmer. Continue whisking until the mixture thickens enough to coat the back of a spoon. Stir in the fontina and Parmesan until melted. Add the pasta and toss to coat.
- Serve in individual bowls with a slice of Taleggio on top.

Steps:
- Heat a small skillet over medium heat; add the bacon and cook, stirring, until lightly crisp, 7 to 8 minutes. Drain and set aside; reserve the bacon fat for another use.
- Bring a 2-quart pot of water to a boil. Salt the water generously; it should taste like light seawater. Add the pasta and cook, stirring occasionally, until just tender to the bite, or al dente. Before draining, use a heavy liquid measuring cup to pull out 3/4 cup of the pasta water; set aside. Drain the pasta and return the pot to the heat.
- Heat the butter in the pasta pot, then add the cooked pasta. Stir in 1/2 cup of the reserved pasta water. Add the American cheese and stir until smooth. Add the cheddar, milk, pepper and the cooked bacon and mix well. Dribble in extra pasta water as needed to make a soft, creamy sauce. Garnish with parsley if using. Serve immediately.
THE BEST STOVETOP MAC AND CHEESE
Our super creamy, quick and easy stovetop mac and cheese is better than the boxed stuff, but just as satisfying. The combo of mild American and sharp Cheddar with cream cheese creates a perfectly balanced sauce that will please even the pickiest of palates.

STOVE-TOP MACARONI AND CHEESE (WEIGHT WATCHERS)
We enjoyed this easy and delicious macaroni and cheese. If following the Weight Watchers plan it is only 6 pts/serving. When I made it I used whole wheat elbow macaroni and a combination of Kraft 2% sharp cheddar and some Weight Watcher Mexican blend cheese. If you start the cheese sauce while the pasta is cooking everything will be done at the same time --so quick and so easy! Recipe source: www.weightwatchers.com

STOVETOP MACARONI AND CHEESE
If you are in a hurry or prefer to sprinkle the dish with crumbled common crackers (saltines are not bad either), you can skip the bread crumb step.

STOVE TOP MACARONI AND CHEESE
A really good recipe that I tried from the Joy of Cooking 75th Anniversary Cookbook. Great for children who don't like baked mac and cheese!

Steps:
- Cook macaroni in a large pot of boiling salted water for recommended cooking time on box.
- Drain and return to pot and add butter.
- Stir macaroni and butter until well blended.
- Add the rest of the ingredients (evaporated milk through pepper) and stir well.
- Set pot over very low heat and cook macaroni mixture.
- Stir constantly until sauce is smooth and macaroni is steaming, 5-10 minutes. The sauce should thicken, if not, slightly raise the heat and cook another 5 minutes.
- DO NOT OVERHEAT OR SAUCE WILL CURDLE.
- If you have family members who like baked macaroni, you can put this into a baking dish and top with breadcrumbs, and then cook in a 350 degree over for 5-10 minutes. Macaroni will still be creamy, and there will be a nice crunchy topping.

STOVETOP MACARONI AND CHEESE
When I was a girl, Mama used Texas longhorn cheese in this recipe. After it melted all over the macaroni, I loved to dig in and see how many strings of cheese would follow my spoonful. -Imogene Hutton, Brownwood, Texas
