4 cups uncooked bow tie pasta
2 cups cubed cooked turkey breast
3/4 cup sliced celery
1 can (11 ounces) mandarin oranges, drained
1/2 cup reduced-fat mayonnaise
1 tablespoon orange juice
1 tablespoon Dijon mustard
2 teaspoons minced fresh tarragon or 3/4 teaspoon dried tarragon
1 teaspoon grated orange zest
3/4 teaspoon salt
1/8 teaspoon white pepper
Lettuce leaves

Steps:

  • Cook pasta according to package directions; rinse with cold water and drain. Place in a large bowl; add turkey, celery and oranges. In a small bowl, combine the mayonnaise, orange juice, mustard, tarragon, orange zest, salt and pepper. Pour over pasta mixture and toss to coat. Cover and refrigerate for 1 hour. Serve over lettuce.

2 stalks celery (minced)
1/2 red onion (minced)
1 tablespoon fresh or dried tarragon
1/2 cup mayonnaise (more as desired)
1 teaspoon Dijon mustard
Salt and pepper (to taste)

Steps:

  • Prep the ingredients. Chop the turkey, celery, and red onion and place in a medium bowl.
  • Mix the turkey salad. Add the mayonnaise, mustard, and tarragon and mix well.
  • Season the turkey salad. Sprinkle over salt and pepper, then taste and add more mayonnaise, tarragon, salt, and pepper to taste.
  • Serve the turkey salad. Serve on crackers, on top of lettuce, or inside leftover dinner rolls. Store in the refrigerator for up to three days.

1 orange, zested and juiced
1 tablespoon fresh tarragon, chopped
1 tablespoon olive oil
1/2 tablespoon sherry wine vinegar
1 lb cooked turkey, cut into thin strips
7 ounces mixed salad greens
2 grapefruits, peeled and diced
fresh tarragon, for garnish

Steps:

  • In a saucepan, heat stock, orange zest, orange juice, tarragon, oil, and vinegar; simmer 2 to 3 minutes, then chill in the refrigerator at least 2 hours.
  • Just before serving, arrange salad greens, turkey, and grapefruit in a serving dish; pour dressing on salad and toss well.

1 ripe tomato, quartered and thinly sliced
1 small red onion or 1/2 medium red onion, thinly sliced
1 large or 2 medium romaine hearts, washed and chopped
3 to 4 tablespoons chopped fresh tarragon leaves or 2 teaspoons dried
2 tablespoons white balsamic vinegar or white wine

1/2 cup honey
1/2 cup tarragon vinegar
1/2 cup packed dark brown sugar
2 tablespoons black peppercorns
1/2 cup salt
6 tablespoons dried tarragon
1 onion, peeled and quartered
1 large or two small garlic cloves, bruised and peeled
1 lemon, cut into 1/4-inch slices
1 5 1/2-pound rolled turkey breast, tied at intervals to shape it like a sausage (ask your butcher to do this)
1/4 cup olive oil
1/4 cup fresh tarragon leaves

Steps:

  • In a very large casserole, roasting pan or plastic tub, combine honey, vinegar, sugar, peppercorns, salt and dried tarragon. Add onion, garlic, lemon and five quarts of water. Submerge rolled turkey breast in mixture, adding 1 to 2 more quarts as needed to cover breast with liquid. Refrigerate overnight, preferably for 24 hours.
  • Remove turkey from brine, and place on a rack for 30 minutes to drain and come to room temperature. Meanwhile, heat oven to 400 degrees. In a saucepan combine olive oil and fresh tarragon, and place over medium-low heat until oil begins to sizzle. Remove from heat, and allow to sit for 10 minutes.
  • Transfer tarragon from oil to a clean roasting pan. Pat turkey dry with paper towels, and place on top of tarragon. Pour oil over turkey, and rub by hand until meat is completely covered with oil. Roast for two hours. No basting is necessary.
  • Remove pan from oven. Transfer turkey to a sheet of foil, and allow it to cool for 20 minutes. Remove, and discard strings, wrap turkey in foil, and refrigerate until chilled, at least one hour. To serve, cut into slices.

2 pounds red-skinned potatoes
2 egg yolks
1 to 2 tablespoons tarragon vinegar (or more to taste)
1/2 teaspoon Dijon mustard
1/2 cup safflower oil
1/2 to 3/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper to taste
2 tablespoons chopped tarragon
4 to 6 tablespoons chopped red onion

Steps:

  • Boil the potatoes until they are cooked. Meanwhile, make the mayonnaise.
  • Beat the egg yolks in a bowl with a whisk until they are thick and sticky. Add the vinegar and mustard and beat some more.
  • Gradually add a few drops of safflower oil and whisk them in. Continue adding safflower and olive oils, increasing the amount as you go, until you have a smooth emulsion. (If you add the oil too quickly and the mayonnaise curdles, add another egg yolk.) Season with salt and pepper.
  • Drain the potatoes and cut them in slices or quarters. Place them in a large serving bowl and coat with the mayonnaise. Add the herbs and onion and toss gently, taking care not to break the potatoes. Season to taste with salt and pepper. Serve at room temperature (do not refrigerate unless the weather is very hot and the salad has to be made way ahead of serving time).

1 pound ground turkey
½ cup diced onion
¼ cup diced green bell pepper
1 (48 fluid ounce) can chicken broth
2 tablespoons dried tarragon

salt and pepper to taste
¾ cup quick-cooking barley

Steps:

  • Heat olive oil in a large pot over medium-high heat. Add ground turkey; cook and stir until the turkey has crumbled and begun to brown, 3 to 4 minutes. Stir in the onion and green pepper, and continue cooking until the onion softens and turns translucent, about 3 minutes.

2 teaspoon(s) kosher salt

Steps:
