VEGAN BLT SANDWICH

Think you can't have a BLT on a vegan diet? Think again! Tempeh "bacon" makes this recipe healthy and completely vegan.

8 oz tempeh (thinly sliced into ¼" thick strips)
1/4 cup soy sauce (or coconut aminos)
1 tsp liquid smoke
1 tbsp avocado oil (or other neutral oil)
1 tsp maple syrup
freshly cracked black pepper
4 slices sourdough bread
avocado mayo
4 leaves Romaine lettuce
1 beefsteak tomato (sliced)
4 large fresh basil leaves (chopped)

Steps:

  • In a shallow pan, combine the soy sauce, liquid smoke, oil, maple syrup, and pepper. Mix to combine then submerge the tempeh strips into the marinade. Let marinate for 30 minutes.
  • Preheat the oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper. Place the marinated tempeh onto the baking sheet and pour the marinade on top.
  • Bake for about 10-15 minutes until crispy on the outside but soft on the inside.
  • To make the sandwich, generously mayo one side of the bread and place into a hot pan over medium-high heat. Let cook for about 2-3 minutes until golden brown. Remove from the pan.
  • Spread another layer of mayo on the non-toasted side of the bread and layer with lettuce, cooked tempeh bacon, tomatoes, and sprinkle of basil. Place the second piece of bread on top, slice, and serve!

6-8 slices Smoky Tempeh Bacon ((Or store-bought. I like the Lightlife brand.))
4 pieces whole-grain bread (toasted)
1 tomato (sliced)
2 leaves lettuce (washed and drained)
homemade mayonnaise* (or mashed avocado. Use store-bought in a pinch.)
avocado (slices, optional)

Steps:

  • In a non-stick pan over medium-high, heat 3-4 slices per sandwich of the tempeh bacon until lightly browned on each side. Watch carefully so they don't burn.
  • Add mayonnaise to your toasted bread and top with bacon, lettuce, and tomato.
  • Optional: add sliced or mashed avocado.

A healthy and kind twist on a classic, this Vegan BLT is made with smoky-sweet baked tempeh bacon. It's so easy to make, just marinate, and bake for 20 minutes or less.

8 ounces tempeh ((*not all brands are GF))
1/4 cup vegan mayo (, more to taste)
8 slices bread ((GF if preferred))
4 lettuce leaves
2 medium tomatoes (, sliced)
1 tablespoon grapeseed oil ((or preferred oil))
3 tablespoons low sodium tamari (GF if preferred (sub soy))
2 tablespoons pure maple syrup
1 1/2 teaspoons liquid smoke
1.5 teaspoons apple cider vinegar
1 1/2 tablespoons nutritional yeast
1 teaspoon granulated garlic
3/4 teaspoon smoked paprika
1/2 teaspoon granulated onion

Steps:

  • Preheat oven to 350° F (176° C). Line a large baking sheet with parchment paper. Set aside.
  • In a small bowl, add all marinade ingredients and whisk to combine well. Pour marinade into an 8 " rimmed shallow dish or baking dish.
  • Cut tempeh into 1/4 " slices. * If you cut them thinner, the tempeh falls apart easily in the marinade.
  • Now place the tempeh slices into your marinade. Gently flip to coat all sides well. Let the pieces marinate in the fridge for 15-20 minutes or longer if preferred.
  • Place the marinated strips on your prepared baking sheet, leaving a little room in between each piece (*save leftover marinade). Bake for 8-10 minutes until lightly browned. *If the tempeh seems dry, you can lightly brush on some leftover marinade.
  • Now gently flip each slice with tongs and bake 8-10 minutes more, until lightly browned and the surface is slightly crisp (*The inside remains soft). Watch closely to prevent burning. Remove from oven.
  • To assemble your BLT, coat each bread slice with mayo and top with tomato slices, lettuce, and tempeh bacon. Close sandwich and cut if desired. Enjoy!

4 oz tempeh, half a package
olive oil, to taste
2 tablespoons soy sauce
1 tablespoon maple syrup
½ teaspoon liquid smoke, optional
½ teaspoon garlic powder
black pepper, to taste

Steps:

  • On a cutting board, cut tempeh ¼-inch (6 mm) thick slices.
  • Add olive oil to a pan over medium heat and add the tempeh. Cook for 5 minutes on each side until brown and crispy.
  • Add 1 tablespoon of water to the pan and stir.
  • Add soy sauce, maple syrup, liquid smoke, garlic powder, and black pepper, and stir until tempeh is evenly coated.
  • Let brown for 2-3 minutes.
  • Enjoy!

This modern take on the classic B.L.T. uses protein-packed marinated tempeh as a vegetarian substitute for bacon, grills the bread for charred flavor, and adds roasted cherry tomatoes for a sweet finish.

1 batch Tempeh Bacon
2 cups cherry tomatoes (about 10 ounces), halved
2 tablespoons regular or vegan mayonnaise
4 slices sourdough bread, grilled or toasted
1/2 large avocado, thinly sliced just before serving
1/4 cup basil leaves, coarsely torn
2 crisp romaine leaves

Steps:

  • Prepare marinade for Tempeh Bacon in a shallow dish, adding tomatoes along with tempeh. Cover and chill at least 2 hours or up to 4.
  • Preheat oven to 400°F and line a rimmed baking sheet with parchment paper. Arrange tempeh on one-half of sheet and tomatoes on remaining half in a single layer. Bake, tossing tempeh and basting with marinade after 10 minutes, until tempeh is crispy and tomatoes are shrunken and sweet, 30-33 minutes.
  • Divide mayonnaise between 2 slices of bread. Top with tempeh and roasted tomatoes. Arrange avocado slices, basil, and romaine over, then top with remaining slices to close sandwich.

16 ounces tempeh, cut into about 50 (1/4"-thick) strips

Steps:

  • Whisk oil, maple syrup, soy sauce, paprika, salt, cayenne, and black pepper in a shallow dish. Add tempeh and gently toss to coat. Cover and chill at least 2 hours or up to 4.
  • Preheat oven to 400°F and line a rimmed baking sheet with parchment paper. Arrange tempeh in a single layer and bake, tossing and basting with marinade after 10 minutes, until tempeh is crispy, 30-33 minutes.
