3 cups Corn Chex™ cereal
3 cups Rice Chex™ cereal
3 cups Wheat Chex™ cereal
1 cup dry-roasted peanuts
1 cup bite-size pretzel twists
1 cup crunchy toasted corn kernel nuts
1/3 cup butter or margarine
2 teaspoons crushed red pepper flakes
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon lemon-pepper seasoning
1/2 teaspoon chili powder
2 cups regular or nacho flavored tortilla chips, broken into 1-inch pieces

Steps:

In large microwavable bowl, mix cereals, peanuts, pretzels and corn kernel nuts.
In 2-cup microwavable measuring cup, microwave butter uncovered on High about 40 seconds or until melted. Stir in seasonings. Pour over cereal mixture; stir until evenly coated.
Microwave uncovered on High for 4 to 5 minutes, stirring after each minute. Stir in tortilla chips. Spread on waxed paper or foil to cool. Store in airtight container.

1 1/2 cups Corn Chex cereal
1 1/2 cups Rice Chex cereal
1 1/2 cups Wheat Chex cereal
1/2 cup pepitas (shelled pumpkin seeds)
1/2 cup shelled unsalted pistachios
1 cup small, thin, salted pretzel sticks
1 1/2 tablespoons unsalted butter, melted and slightly cooled
1/2 tablespoon Yucatan Sunshine hot sauce or your favorite hot sauce
1/2 tablespoon Tabasco sauce
1 tablespoon Worcestershire sauce
1/4 teaspoon ground cumin
1/4 teaspoon dried oregano
1/4 teaspoon garlic powder
Pinch of salt

Steps:

1. Preheat the oven to 250° F.
2. In a large bowl, combine the cereals, pepitas, pistachios, and pretzel sticks.
3. In a small bowl, stir together the remaining ingredients until well incorporated. Pour this mixture over the cereal mixture and toss well to coat but gently so as not to break the cereal and pretzels.
4. Spread the mixture out on a baking sheet in a single layer and bake for 45 minutes, stirring gently every 15 minutes. Remove the baking sheet from the oven, let the mixture cool, and serve, or serve in an airtight container at room temperature for up to 2 weeks.

I know there are many similar recipes on this site, but this one turned out so yummmmmily I couldn't resist posting. We'll be serving this along with other Southwestern-flavored appetizers at a cocktail gathering Easter Sunday afternoon.

3 cups Rice Chex
3 cups wheat Chex cereal
3 cups bite-sized shredded wheat
3 cups miniature pretzel twists
1 1/2 cups pecan halves
1 1/2 cups salted peanuts
1 cup butter
1 (1 1/4 ounce) packet mccormick's hot taco seasoning
2 tablespoons Worcestershire sauce

Steps:

Melt butter and mix with taco seasoning and Worcestershire. Combine dry ingredients, add butter mixture, and toss well. Bake at 275 for 1 hour, taking out to stir every 20 minutes.

Kosher salt
1 pound spaghetti
Two 10 3/4-ounce cans cream of chicken soup
2 generous cups pulled rotisserie chicken (from about 1 large chicken)
1 cup chicken stock
1 tablespoon adobo sauce from canned chipotles
1 teaspoon seasoned salt
1 poblano pepper, finely diced
1 small red bell pepper, finely diced
1 medium onion, finely diced
2 1/2 cups shredded sharp pepper jack cheese
Freshly ground black pepper
Fresh cilantro leaves, for garnish

Steps:

Preheat the oven to 350 degrees F.
Bring a large pot of salted water to the boil. Cook the spaghetti according to the package instructions, then drain.
Combine the spaghetti with the cream of chicken soup, pulled chicken, chicken stock, adobo sauce, seasoned salt, poblano pepper, bell pepper, onion and 1 1/2 cups of the pepper jack in a large bowl. Add salt and pepper to taste, then stir.
Transfer the mixture to a 13-by-9-inch casserole dish and top with the remaining 1 cup pepper jack. Bake until bubbly, about 45 minutes. Garnish with cilantro leaves before serving.
