Thai red rice has a firm texture and a nutty flavor giving this dessert a unique flavor and appearance. Be sure to stir often throughout the cooking process so the pudding doesn't get stuck to the bottom of the pot.

1/2 cup red rice (Thai)
1/2 cup long grain white rice
3/4 cup brown sugar
1/4 teaspoon salt
3 tablespoons rose water
1/4 teaspoon ground cardamom
3 cups water
3 cups milk
1 (15 ounce) can coconut milk
1/2 cup half-and-half
1/4 cup golden raisin
1 tablespoon lemon zest
2 tablespoons ground pistachio nuts (optional)

Steps:

  • In a large saucepan combine both rices, sugar, salt, 3 cups water, and 3 cups milk. Bring it to a boil and then let it simmer over low heat until half the liquid has evaporated. This will take about 30-40 minute.
  • Now add in the rose water, ground cardamom, and the can of coconut milk. Continue simmering another 30-40 minute The mixture should be fairly thick.
  • Now add in the lemon zest and 1/2 cup half and half. Check the sweetness and add more sugar if you feel it is necessary. Stir until the mixture is creamy and remove from the heat.
  • Garnish with ground pistachio nuts if desired.

Thai rice pudding is delicious and nutritious. This simple recipe uses coconut milk, brown sugar, and warm spices, but there is a fun mango sauce option.

2 cups Thai sweet rice
3 1/2 cups water
1/2 teaspoon salt
1 can (13 1/2 ounces) coconut milk
3/4 to 1 cup sugar (palm, brown, or white, to taste)
1 teaspoon vanilla
1 teaspoon cinnamon (ground)
1/4 teaspoon nutmeg (ground)
1/4 teaspoon cloves (ground)
Optional: whole star anise (for garnish)
Optional: cinnamon sticks (for garnish)
Optional: crushed peanuts (for garnish)
Optional: toasted coconut (for garnish)

Steps:

  • Gather the ingredients.
  • Place the rice in a large pot and add 2 cups of the water. Allow it to soak for 10 to 30 minutes.
  • Once this time has passed, add the remaining 1 1/2 cups of water and the salt. Stir well.
  • Place the pot over high heat. As soon as the water comes to a boil, reduce the heat to medium-low and cover 3/4 of the pot so the lid is sitting askew, allowing some of the steam to escape.
  • Boil the rice for 15 to 20 minutes, or until all the water has been absorbed.
  • Turn off the heat, but keep the pot on the burner. Place the lid on tight and allow the rice to "steam" for 5 to 10 minutes.
  • Remove the lid and add the coconut milk, stirring until well mixed. You may have to break up the rice a little with a spoon or fork as the lower temperature allows the rice to stick together.
  • Turn the heat back on low and, while gently simmering, add 3/4 cup to 1 cup sugar. Start with the lesser amount and taste, adding more if needed.
  • Add the vanilla, cinnamon, nutmeg, and cloves.
  • Taste the pudding for sweetness. Add more sugar to enhance the sweetness or more coconut milk if the pudding is too sweet. The rice will eventually absorb most of the coconut milk, creating a very thick rice pudding.
  • In the following step, you have two options: add coconut milk to the entire batch to make a thinner pudding that can be easily scooped into bowls, or serve the thick pudding in individual serving bowls and pour coconut milk , cream, or the milk of your choice around it.
  • Garnish each serving by sprinkling extra cinnamon or nutmeg on top. Decorate it with cinnamon sticks, whole star anise, crushed peanuts, or toasted coconut if desired.

Commonly served for breakfast in parts of Southeast Asia, this dish also makes a great dessert. Chinese black rice, sometimes called forbidden rice, works well, but if you live near a Southeast Asian market you can use this same method with the more traditional Thai black sticky rice.

1 cup black rice
1/2 cup sugar
1 (13 1/2- to 15-oz) can unsweetened coconut milk, stirred well

Steps:

  • Bring rice, 3 cups water, and 1/4 teaspoon salt to a boil in a 3- to 4-quart heavy saucepan, then reduce heat to low and simmer, covered with a tight-fitting lid, 45 minutes (rice will be cooked but still wet). Stir in sugar, a scant 1/4 teaspoon salt, and 1 1/2 cups coconut milk and bring to a boil over high heat, then reduce heat to low and simmer, uncovered, stirring occasionally, until mixture is thick and rice is tender but still slightly chewy, about 30 minutes.
  • Remove from heat and cool to warm or room temperature, stirring occasionally, at least 30 minutes. Just before serving, stir pudding and divide among 8 bowls. Stir remaining coconut milk and drizzle over pudding.

An authentic black rice pudding recipe that tastes just like the one our favorite Thai restaurant serves.

1 cup black sticky rice
4 cups cold water
13 tablespoons sugar
1/8 teaspoon salt
1/2 teaspoon lime juice
1 (14 ounce) can coconut milk
1/4 teaspoon salt

Steps:

  • Rinse the rice in a sieve under cold running water.
  • Place rice in a bowl and add enoough cold water to cover the rice at least 1 inch.
  • Let rice stand overnight or at least 8 hours. (Don't skip this step!).
  • Drain rice.
  • In a heavy saucepan, combine the rice and the 4 cups water. Cover pan and bring to a boil. Lower heat and maintain a gentle simmer until all the liquid is absorbed and rice is tender but not mushy. This takes 1 1/2 to 1 3/4 hours. The texture of the pudding should be very thick but still spoonable. Toward the end of cooking, be sure to stir occasionally to prevent any scorching or sticking. If the rice looks as though it is too dry, add a little more water.
  • Remove from the pot and stir in the sugar and salt. Let cool slightly. Then add the lime juice.
  • For Coconut sauce:.
  • In medium saucepan,combine the coconut milk and salt. Simmer, stirring until the liquid has thickened slightly, 15-20 minutes.
  • Pour into a small bowl and let cool.
  • To serve, spoon rice pudding into individual bowls. Spoon coconut sauce over each serving and let each person stir it into the rice as they eat. Can be eaten cold but warm is best.

¾ cup white rice
1 (13.5 ounce) can coconut milk
¼ cup white sugar
¼ teaspoon salt
½ cup milk
1 egg, beaten
1 tablespoon extra-virgin coconut oil
½ teaspoon vanilla extract
½ teaspoon coconut extract
1 wedge fresh pineapple

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.
  • Combine rice, coconut milk, sugar, and salt in a pot; cook and stir until thickened and creamy, about 20 minutes.
  • Beat milk and egg together in a bowl. Spoon 1 to 2 tablespoons rice mixture into milk mixture and beat to warm and temper milk mixture. Slowly pour milk mixture into rice mixture while constantly beating; cook, stirring constantly, until pudding is heated through, 2 to 3 minutes.
  • Remove pot from heat and stir coconut oil, vanilla extract, and coconut extract into pudding; refrigerate until chilled, about 1 hour. Garnish pudding with pineapple wedge.
