1 cup tamarind puree (page 32)
5 dried chilies, soaked
3 shallots
1 tablespoon soy sauce
1/2 cup jaggery, palm sugar or 1/2 cup light brown sugar
7 garlic cloves
1 tablespoon fermented soybeans (page 10)
1 tablespoon vegetable oil
1 cup shredded jicama
2 tablespoons oyster sauce
20 spring roll wrappers, sheets
2 cups shredded lettuce
2 cups boiled bean sprouts
1 cup crispy pork rind, coarsely chopped
2 tablespoons fried shallots (page 34)
4 oz/ 100 grams roasted pork, thinly sliced
20 cooked shrimp, halved lengthwise (prawns)

Steps:

  • To Make the Sauce:.
  • Pound all the ingredients together in a mortar with a pestle until smooth. (Alternatively, combine the ingredients in a food processor and pulse to form a smooth paste.) Heat the sauce in a wok over medium heat, bring to a boil, then reduce the heat and simmer until thickened. Remove from the heat and cool.
  • To Make the Spring Rolls:.
  • Heat the oil in a wok over medium head. Add the jicama and oyster sauce and sauté for 30 seconds. Remove from the heat and set aside to cool.
  • Soften a spring roll wrapper in warm water and lay out on a work surface. Put a little of the lettuce, bean sprouts, pork rind, fried shallots, and jicama in the center of the wrapper. Add a little sauce and top with a slice of roasted pork and 2-3 shrimp slices. Fold the bottom of the wrapper up and over the filling. fold the left and right sides in to create a package. Roll the package up toward the top and brush a little water on the top edges of the wrapper to stick the package together. Repeat until you have used up all the fillings. Cut the rolls in half and serve with the remaining sauce.

6 spring roll wrappers (available in Asian markets)
12 medium shrimp, cooked and shelled
1 cup shredded leaf lettuce
⅓ cup chopped cilantro
½ cup peeled, seeded, chopped cucumber
1 medium carrot, julienned
1 tablespoon light soy sauce
1 tablespoon white-wine vinegar or rice vinegar
3 tablespoons mirin
¼ teaspoon grated ginger root

Steps:

  • In a bowl of cool water, soak a wrapper until limp. Lay wrapper out flat. Place 1/6 of each ingredient down middle of wrapper, starting with lettuce. Fold over each end and tightly roll the wrapper around the contents, as if making a burrito. Moisten at seam; press to close.
  • Lay on plate, cover with moist paper towel and refrigerate until ready to serve. Then slice in two and serve with Quick Thai Dipping Sauce, below, or peanut sauce.
  • To make the Quick Thai Dipping Sauce, combine all ingredients in a small bowl.

4 to 6​ spring roll wrappers
1 cup water
3 large lettuce leaves, torn into strips
1 cucumber, sliced into thin strips
1/2 cup bean sprouts
2 green onions, chopped
1 carrot, grated
1 cup cooked rice vermicelli, or bean thread noodles
1 tablespoon soy sauce
8 to 12 fresh leaves fresh cilantro (do not chop)
8 to 12 fresh basil leaves (do not chop)

Steps:

  • Gather the ingredients.
  • Combine all the ingredients, except the water, spring roll wrappers, and cilantro and basil leaves. Reserve.
  • Place the water in a shallow pan.
  • Dip the spring roll wrappers in the water until pliable, one at a time. Fill each wrapper with 2 to 3 tablespoons of the vegetable filling.
  • Place two or three basil and cilantro leaves on top and wrap your spring rolls .

1 package spring roll rice wrappers (, found in the Asian foods section at the grocery store)
1 package vermicelli rice noodles (, found in the Asian foods section at the grocery store)
2 mangos (, peeled and sliced into thin strips)
1 large carrot (, peeled and shredded or sliced into thin strips)
1 large English cucumber (, peeled and thinly sliced)
1 pound small, cooked shrimp (, deveined, tails removed, or substitute chicken)
1 bunch fresh mint leaves
1 bunch fresh basil leaves
1 bunch fresh cilantro
3/4 cup sweet chili sauce
1/3 cup peanut butter (, smooth or crunchy)
1/2 teaspoon low-sodium soy sauce
1/2 teaspoon hoisin sauce

Steps:

  • Cook vermicelli noodles in boiling water, for just a few minutes, according to package instructions. Drain and rinse with cold water.
  • Gather all topping ingredients together, including chopped veggies, herbs, cooked shrimp.
  • Add about 1 inch of water to a large, deep dish, or pie pan. Place one rice wrapper into the water and let soak for just 10-15 seconds. It should still feel pretty firm as you remove it and lay it on your counter or plate.
  • (It will soften up as you add the filling ingredients, but If you let it soak for too long it will get too soft and will tear when you roll it up.)
  • Layer 1-2 slices of each veggie, a few shrimp, a few leaves of each herb and a pinch of noodles on the 1/3 of the spring roll that is closest to you.
  • Fold the sides of the spring roll in over the ingredients. Then pull the side closest to you up and over the ingredients, sealing everything together tightly, and rolling it up like a burrito.

100 g glass noodles (soaked and cut into 2 cm / 1 in lengths)
100 g bean sprouts
100 g minced chicken
30 g carrot (grated)
30 g baby corn (thinly sliced)
¼ cup spring onion / green onion (or Asian chives)
1 tbsp garlic (chopped)
2 tbsp fish sauce
3 tbsp oyster sauce
1 tsp sugar
2 tbsp vegetable oil (for the filling)
4 cups canola oil (for deep frying)
5-6 spring roll pastry or rice paper wrapper
water (for sealing the rolls)

Steps:

  • Heat the vegetable oil in a large wok over medium heat. Add the garlic and cook until fragrant, then add the chicken mince and stir fry until cooked through (around 2-3 minutes).
  • Add the bean sprouts, carrot, baby corn and spring onion and mix thoroughly.
  • Add the fish sauce, oyster sauce and sugar and stir.
  • Finally add the glass noodles and stir through until ingredients are evenly mixed and the liquid has mostly evaporated.
  • Lay out one spring roll pastry or wrapper on a clean surface (smooth side down). If using a square wrapper, have one of the corners facing towards you.
  • Place a scoop of filling in one corner of the wrapper. Fold the bottom corner of the wrapper up and over the filling, pressing in firmly to remove any air pockets. Keep rolling up to the centre of the wrapper.
  • Rub water over the top edges of the wrapper, then fold in the left and right sides and keep rolling up tightly.
  • Heat the canola oil in the wok over a medium heat, ready to deep fry. Slide each spring roll into the wok slowly to avoid splashing. Deep fry until golden brown, around 4-6 minutes.
  • Transfer to a strainer or place on kitchen paper towel to drain the oil.
  • Serve with your chosen dipping sauce such as nuoc mam cham.

  • Place 1 tablespoon of mixture on egg roll skin, roll like a cigar. Fry in hot oil, until brown and crispy. Serve with your favorite dipping sauce.
