2 medium zucchini
1 egg
1 tablespoon of low carb ranch dressing, jalapeño ranch dressing or mayonnaise
1 cup almond flour
1/2 teaspoon garlic salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 cup parmesan cheese

Steps:

  • Prehat oven to 400 degrees
  • Slice two zucchini into fry shapes (as shown in video)
  • Pat the zucchini dry
  • Set up your breading station by setting up two shallow bowls and a baking sheet with a silicone baking sheet or sprayed well with cooking spray.
  • In the first bowl combine the egg and the ranch dressing, mix until completely combined
  • In the second bowl combine the almond flour, spices and paremsan, mix well.
  • Dredge the zucchini in the egg then the almond flour crust and place on the pan.
  • Lightly spray the breaded zucchini fries with cooking spray to help crisp them.
  • Bake 15 minutes, turn carefully with a fork and bake for 10 minutes more or until golden brown and crisp.
  • Dip in ketchup or ranch dressing!

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • Trim the ends off the zucchini then cut them in half widthwise. Cut each half into roughly 1/2-inch-thick fries.
  • In a shallow dish, whisk together the flour and garlic powder with 1 teaspoon salt and 1/2 teaspoon pepper.

1/2 tsp garlic powder (optional)

Steps:

  • Pre-heat oven to 425F. Line a baking sheet with aluminum foil or parchment paper and lightly grease with oil. Set aside.
  • Combine 2 eggs in a small shallow bowl and set aside. Combine the breadcrumbs and parmesan cheese in another bowl and set aside. Prepare zucchini by trimming the ends and cutting into 1/2 inch strips or slices.

Steps:

  • Cut the zucchini into 3-inch by 1/2-inch strips.
  • In a medium bowl, thoroughly combine the cheese, breadcrumbs, and salt.
  • Whisk the eggs in a separate bowl.
  • Working in batches of around 4 to 5 zucchini sticks, dip them in the beaten eggs and coat them completely, letting any excess egg drip back into the bowl.
  • Roll the egg-coated sticks in the Panko mixture, patting well to ensure they are completely covered.
