Egg sparks the taste of this pleasantly sweet cooked dressing from Mary Bloom of Titusville, Pennsylvania. She serves it warm over greens tossed with bacon bits, tomato and more. "Besides lettuce, it's also good over fresh spinach or cabbage," she adds.

- In a microwave-safe bowl, combine the eggs, sugar and water. Microwave, uncovered, on high for 45 seconds. Stir in vinegar; cook for 1 to 1-1/2 minutes or until a thermometer reads 160°. , Meanwhile, in a salad bowl, combine greens, onion, bacon, tomato and cucumber. Drizzle with warm dressing; toss to coat.

- Combine the shallots, lemon zest and juice, mustard, anchovy paste and the hard-boiled egg and egg yolk in a blender, then slowly stream in the olive oil. Season with salt and pepper.
GREENS WITH HOT BACON DRESSING
Growing up in a German community, I ate this salad often. It's an old traditional dish-I recall my grandmother talking about her mother making this recipe. - In a salad bowl, toss spinach, lettuce, celery and onion; set aside. In a large skillet, cook bacon until crisp; remove with a slotted spoon to paper towels to drain. Discard all but 2 tablespoons drippings. In a small bowl, beat egg; add water and mix well. Add to the drippings. Combine vinegar, sugar, cornstarch, salt and pepper; add to skillet. Bring to a boil; stirring constantly. Remove from the heat; pour over salad. Add bacon. Toss and serve immediately.

- To make the dressing, mix the garlic, lemon juice and zest, olive oil and some seasoning together. Bring a large pan of water to the boil, then add the broccoli and greens, and cook for about 5 mins until tender. Drain well, then toss through the dressing and serve.

THE BEST NO OIL WARM EGG DRESSING OVER GREENS
Now this is a fairly classic dressing. But I love it served warm over my favorite salad greens. A mix of crunchy iceberg, romaine and red leaf are my favorites - it is really all about the dressing. Toppings ... I prefer fresh slices of tomato, crumbles of bacon and thin slices of onion to me are a must, but olives, cucumbers, peppers, or pretty much anything you want is great with this salad. This dressing is a bit sweeter rather than tangy, but no oil, and a completely different taste that most people haven't had. However, once most people try this, they want it over and over. And kids absolutely love it.

- Salad Greens -- Prepare your greens. Whatever you like. Tomato, bacon and onion are my favorites, but any of your favorites will work. This is about the dressing.
- Dressing -- I make this in a small tupperware container or small microwavable bowl. Add all the ingredients and mix well. Heat on medium (power 4 or 5) for 30 seconds and stir well. Then heat again on medium power same thing just 30 seconds at a time and mix well. You do not want do scramble the eggs. Just a couple of times in the microwave to heat up the dressing is all you need. It should be served warm NOT boiled.
- Serve -- Toss with the greens and ENJOY! One of my favorite dressings, and so easy.
NO-RAW-EGG CAESAR SALAD DRESSING
So many folks worry about using raw eggs in salad dressings, so this dressing is a real find. Even better, it's absolutely delicious--and is so easy to make. Thanks to Bonnie Stern for this one.

- You can prepare this dressing by hand with a whisk and some elbow grease, but it's easier to use a blender or food processor.
- Put all ingredients except oils and parmesan in bowl of food processor or blender (or in a bowl) and combine well.
- With food processor (or blender) running, slowly dribble in oils--or slowly whisk in oils, if making by hand.
- You could use either all olive oil or all canola oil, but I prefer to use both.
- Lastly, blend in the parmesan.
- Taste; adjust seasonings as you wish (you may want to add salt, but the anchovy paste and worcestershire do provide the recipe with a fair amount of saltiness).
- Either use right away, or refrigerate; it thickens when chilled, however, so you may have to give it a little whisk to loosen it up if you've stashed it in the fridge (it makes a great dip when thickened, though).
- This dressing makes enough to dress one large caesar salad.

- Wash greens and drain. Pat dry with paper towels. Place in salad bowl or on salad plates.
- Beat mustard and mayonnaise. Add oil in very thin stream, beating constantly with wire whisk. Dressing should remain thick.
- Beat in vinegar in thin stream; dressing should be thinner but still creamy.
- Add herbs, salt and pepper to dressing.
- Put garlic through press and beat in. Serve dressing over greens.
