LASAGNA WITH COTTAGE CHEESE
Lasagna with Cottage Cheese is a classic Midwestern noodle casserole. Layers of rich meat sauce, pasta, creamy filling and cheese will have the whole family coming back for seconds!

- Make the Meat Sauce: In large high-sided skillet, cook beef, sausage, garlic and onion over medium-high heat 10 to 12 minutes or until meat is cooked through, breaking up meat with back of spoon and stirring occasionally. Remove and discard any excess fat in pan.
- Stir in tomato sauce, tomato paste, oregano and salt; heat to simmering over medium-high heat. Reduce heat to medium-low and cook 30 minutes, stirring occasionally. Remove from heat and let cool slightly.
- Meanwhile, make the Cheese Filling: Place eggs in large bowl and whisk until smooth. Add cottage cheese, Parmesan cheese, parsley, salt and pepper; stir until well combined.
- Prepare noodles according to package directions; drain.
- Preheat oven to 375 degrees F. Spray 10 x 16-inch lasagna pan or large baking dish with nonstick spray. Arrange 1/4 of noodles in bottom of dish. Spread noodles with 1/4 of Cheese Filling. Arrange 1/4 of mozzarella cheese slices over Cheese Filling (you can rip the cheese slices into halves or thirds to arrange them easier). Spread 1/4 of Meat Sauce over mozzarella cheese slices. Repeat layers 3 more times.
- Transfer to oven and bake 45 to 60 minutes or until edges are bubbly. Let rest 15 minutes before serving topped with additional Parmesan cheese and basil, if desired.

- Add the marinara sauce. Bring to a gentle simmer for 10 to 15 minutes to allow the flavours to mend. Remove from heat and set aside until ready to assemble.
- For the cheese, in a large mixing bowl add the cottage cheese, eggs, mozzarella, parmesan and parsley. Stir until well combined. Season to taste with salt and pepper. Refrigerate until ready to use.
- Finish with a final layer of sauce and a generous sprinkle of mozzarella cheese.
- Bake for 45-50 minutes, until the noodles are cooked throughout and the cheese is bubbly.
- Let set 15 minutes before slicing and serving.
COTTAGE CHEESE LASAGNA

Steps:
- Melt butter in skillet.
- Add onions and minced garlic and saute until tender.
- Add ground chuck and cook until meat is browned.
- Add tomatoes, tomato paste, salt, pepper, oregano and sugar.
- Simmer one and one half hours until the meat sauce is thick.
- Cook lasagna noodles in boiling salted water until they are tender, approx 10 minutes.
- Rinse in cool water until the noodles are cooled enough to handle.
- Drain.
- Lightly grease 13x9" pan.
- Place a small amount of meat mixture on bottom of pan.
- Arrange 1/3 of the noodles on top of meat mixture.
- Cover noodles with 1/3 of meat mixture, 1 cup cottage cheese, and 1/3 each of Cheddar cheese and Parmesan cheese.
- Repeat layers twice, using remaining 1 cup of cottage cheese on middle layer.
- Top layer only has meat sauce and cheeses.
- Bake at 350°F for 30-40 minutes.

I know, not another lasagna recipe. This is a delicious change from the usual recipe. My husband loves it because of the cream cheese and pepperoni in it. I don't remember were I got it but, have had it for years. Hope you will try it.

- Combine the cream cheese, cottage cheese, sour cream, and eggs; stir well. Spoon a small amount of meat sauce into a lightly greased baking dish.

- Brown ground chuck with onion. Drain off grease and add allspice and garlic. Saute for 3 minutes. Add salt, pepper, fennel, cinnamon, oregano, and basil. Stir until meat is well coated. Stir in tomato paste until meat is well coated. Stir in tomato sauce and water. Simmer covered for 2 hours.
- Boil 18 of the noodles for 5 minutes just to soften. Drain and rinse with cold water. Lay flat on layered paper towels so the noodles do not stick together.
- Mix together ricotta cheese, egg, and ½ cup parmesan cheese.
- Spray a 15 x 11 baking dish with cooking spray. Spread a small amount of sauce on bottom just to keep the noodles from sticking. Then layer in this order: 6 noodles, 1/3 of meat sauce, ½ of ricotta cheese mix, 1/3 cup of parmesan (sprinkle to cover), 1/3 of shredded cheese mix, 6 noodles, 1/3 of meat sauce, ½ of ricotta mixture, 1/3 cup of parmesan cheese(sprinkle to cover), 1/3 of shredded cheese, 6 noodles, 1/3 of meat sauce, 1/3 shredded cheese mix, and 1/3 cup parmesan cheese (sprinkle to cover).
- Cover loosely with aluminum foil and bake at 350 degrees for about 45 minutes until bubbly. Remove foil and continue baking for 15 additional minutes or until the cheese on top browns slightly.
