  • In a bowl, cream the butter until fluffy. Slowly mix in the flour, salt and cayenne pepper. Stir in cheese and cereal. Shape into 1-1/2-in. balls and place on ungreased baking sheets. Bake at 350° for 15-17 minutes or until lightly browned. Serve warm or cold.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup whipping cream
1/3 cup finely chopped toasted walnuts, divided
1/4 cup ATHENOS Crumbled Blue Cheese
1/2 cup fig jam
48 sprigs fresh thyme

Steps:

  • Heat oven to 400ºF.
  • Spoon 2 tsp. Parmesan onto parchment-covered baking sheet; spread to form 1-1/2-inch circle. Repeat to make 12 circles on each of 4 prepared baking sheets. (You will have 48 circles.)
  • Bake 5 min. or until cheese is melted and lightly browned. Cool completely on baking sheets.
  • Meanwhile, beat whipping cream in large bowl with mixer on high speed until soft peaks form; spoon into separate bowl. Beat cream cheese in same large bowl with mixer until creamy. Add 1/4 cup nuts; mix well. Stir in blue cheese. Gently stir in whipped cream.
  • Transfer Parmesan crisps carefully from baking sheets to platter. Spoon or pipe scant 1 tsp. cream cheese mixture onto each crisp; top with 1/2 tsp. jam. Finely chop remaining nuts; sprinkle over Parmesan crisps along with the thyme.

3 jalapenos, sliced into thin rounds
3/4 cup freshly grated Parmesan cheese
3/4 cup freshly grated pecorino cheese
3/4 cup freshly grated manchego cheese

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with silicone baking mats or parchment paper.
  • Sprinkle the jalapeno slices around one of the prepared baking sheets in a single layer. Bake for 7 to 9 minutes; this will remove some of the moisture from the jalapeno and help ensure your cheese crisps live up to the crisp in their name. Transfer to a bowl.
  • Meanwhile, mix the cheeses together in a medium bowl.
  • Using a tablespoon measure, spoon mounds of the cheese mixture onto the lined baking sheets, 1 to 1 1/2 inches apart from each other. Press a jalapeno slice into the center of each mound. Bake until golden and crisp, 10 to 12 minutes.
  • Allow the crisps to cool slightly before handling, then serve. Or let cool completely and store in an airtight container.

2 cups all-purpose flour
2 cups crisp rice cereal
½ teaspoon salt
2 dashes Worcestershire sauce
1 pinch garlic powder
¼ teaspoon cayenne pepper
freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine cheese, butter or margarine, flour, crispy rice cereal, salt, Worcestershire sauce, garlic powder, cayenne pepper, and black pepper. Mix well and form small balls out of the dough (the dough will yield approximately 55 balls). Flatten each ball of dough with your fingertips until the dough is very thin and arrange the discs on a cookie sheet.

2 green onions, sliced
1 tablespoon minced fresh cilantro
1 dash vegetable oil

1 large thin flour tortillas (12 inches or larger) or 2 medium thin flour tortillas (7-8 inches)
4 ounces cheddar cheese, grated
4 ounces monterey jack cheese, grated

Steps:

  • Preheat the oven to 400°.
  • Combine the salad topping ingredients in a small bowl.
  • Bake the tortilla for 4-5 minutes directly on the oven rack; remove the tortilla from the oven and place it on a baking sheet or pizza stone.
  • Sprinkle the cheese on and return to the oven; bake until the cheese melts completely, another 4-5 minutes.

Steps:

  • Heat the oven to 375°.
  • Shred the block of cheese lengthwise (longer shreds work better) using a box grater with holes about 1/4-inch wide.
  • Place in a medium bowl.
  • Sprinkle with the flour; toss gently with a fork to coat the cheese.
  • Sprinkle with the red pepper, toss again.
  • Place a silicone baking mat or a sheet of parchment paper on a 16 1/2-by-11 1/2-inch sheet pan.
  • Scatter half of the cheese evenly over the mat.
