2 tablespoons sugar
Juice of 2 limes
3 tablespoons rice-wine vinegar
5 tablespoons safflower oil
1 pound country-style bread, crust removed and cut into 1/2-inch cubes
3 tablespoons olive oil
1 English cucumber, halved lengthwise and cut into 1-inch pieces
1 pint cherry tomatoes, halved
1 tablespoon fresh ginger, very finely chopped (optional)
1/4 cup fresh cilantro, coarsely chopped
1/4 cup fresh mint leaves, coarsely chopped
1 jalapeno, seeds removed and finely chopped
2 cups arugula
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl, whisk together sugar, lime juice, vinegar, and 3 tablespoons safflower oil; set vinaigrette aside.
  • In a large bowl, toss bread cubes with olive oil until well coated. Spread bread cubes in an even layer on a baking sheet. Transfer to oven until golden and toasted, about 10 minutes.
  • Transfer toasted bread cubes to a large bowl and add cucumber, tomatoes, ginger (if using), cilantro, mint, basil, jalapeno, and arugula. Drizzle vinaigrette over top, and season with salt and pepper; toss to combine.

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the tomatoes, oil, garlic and oregano in a 10-inch pie plate and toss to combine. Season with salt. Roast for 10 minutes. Stir in the bread cubes and roast, stirring halfway through, until the tomatoes are juicy, about 10 minutes more. Drizzle with olive oil and serve warm.

Fattoush is a classic Lebanese dish. It is often eaten by itself as a starter or light lunch. Saumac is an essential ingredient. It is a spice that is made from the dried, powdered berries of the sumac tree. It was my first time trying Saumac and I really enjoyed it, next time I would add one more teaspoon of the Saumac. This was used as a side salad for Recipe #218539 . This recipe comes from a book called "The Lebanese Cookbook" by Hussien Dekmak

Steps:

  • Dice the tomatoes into 1-inch pieces. Set aside.

Steps:

  • Heat oven to 425 degrees. Line a large sheet pan with parchment paper or foil. In a large bowl, toss the squash with 2 tablespoons olive oil. Season well with salt, black pepper and red-pepper flakes (if using) and toss again. Spread the squash in an even layer on the sheet pan and roast until it begins to brown in spots, 10 to 15 minutes.
  • While the squash roasts, in the same bowl (no need to wipe it out), toss the bread with the remaining olive oil and season with salt and pepper. After the squash has roasted for 10 to 15 minutes, remove from the oven and turn the squash pieces over. Add the bread to the sheet pan. Roast 10 to 15 minutes more, turning the bread halfway through, until the croutons are golden and crisp and the squash is tender.
  • While the squash and croutons roast, whisk together the tahini, lime juice, honey and 2 tablespoons water. Season to taste with salt.
  • Arrange the squash and croutons on a platter or in a bowl and drizzle with the dressing. Scatter with the herbs, if using.

This is so good--even if you have NEVER liked egg salad--ever. It's healthful with the shredded lettuce--quick and tasty and inexpensive for kids. It would probably be a great appetizer or finger sandwich--served on toast rounds with thinly sliced cucumber too.

2 hard-boiled eggs
2 tablespoons vegan mayonnaise or 2 tablespoons mayonnaise
1/2 teaspoon red wine vinegar (to taste)
2 tablespoons dried celery flakes
2 tablespoons minced sweet onions (vidalia)
1/2 cup shredded and chopped romaine lettuce
1/4 cup finely chopped silken tofu, if desired

Steps:

  • To cook eggs:.
  • Put in a steamer and follow steamer instructions OR.
  • Place desired number of eggs [4-8] in pot.
  • Cover with water by 1 inch.
  • Bring to boil.
  • Remove from heat and cover immediately.
  • Let stand 12-13 minutes.
  • Spoon out one egg at a time into cold water, then refrigerate.
  • To assemble the egg salad:.
  • Toast bread, if desired.
  • Chop peeled egg with knife and then mash with fork OR process in mini-chopper. I like my cooked egg white to be very finely chopped, mashed really.
  • Add mayo to taste.
  • Add splashes of red wine vinegar to taste.
  • Add celery flakes as desired.
  • Add minced sweet onion to taste.
  • Add more shredded and chopped lettuce to taste.
  • Mix to bind.
  • Add freshly ground pepper if desired.
  • Add salt if you think it needs it.
  • This is better chilled and can be served just by itself as a salad OR on lightly toasted bread for a sandwich.
  • If you peel and leave an onion in the refrigerator for days, it makes it taste much sweeter.
  • You could add pickle juice, minced pickle, mustard or dry mustard, sweet relish, capers as desired as well as paprika for color.

WARM BREAD SALAD



Warm Bread Salad image

This is, quite possibly, the bread salad to end all bread salads. Judy Rodgers, the legendary chef and bread lover, developed it to serve alongside roast chicken, but it's perfect paired with any roast meat. Bread chunks are mixed with a sharp vinaigrette, softened currants, toasted pine nuts and lightly cooked scallions and garlic. Everything is piled into a roasting pan then slid into the oven just before the chicken comes out and stays in while the chicken rests (if you're not making it with chicken, heat the oven to 450, turn it off and pop the salad in for 15 minutes). At the last minute, toss the bread mixture with arugula and vinaigrette. Top with your meat of choice (or not) and dig in.

1 tablespoon dried currants
1 tablespoon red wine vinegar
2 tablespoons pine nuts
8 to 10 ounces slightly stale ciabatta or other open-textured white bread
8 tablespoons extra virgin olive oil
1 1/2 tablespoons Champagne vinegar or white wine vinegar, approximately
Salt and coarsely ground black pepper
3 garlic cloves, slivered
1/4 cup thinly sliced scallions
4 tablespoons lightly salted chicken stock or lightly salted water
4 cups arugula leaves or mustard greens, rinsed and dried

Steps:

  • Place currants in a small dish, add red wine vinegar and 1 tablespoon warm water, and set aside. Heat broiler. Place pine nuts in small baking dish, and toast under broiler until very lightly colored. Set aside.
  • Cut bread into three or four large chunks. Closely trim off most of the crust and reserve, if desired, to toast and use for bread crumbs or to float in soup. Brush bread all over with 2 tablespoons olive oil. Briefly broil bread chunks, turning until crisp and golden on surface. Remove from oven, trim off any charred tips, and tear chunks into irregular pieces, from 2-inch wads to large crumbs. You should have 4 cups. Place in wide metal, glass or ceramic salad bowl.
  • Whisk 1/4 cup olive oil with 1 1/2 tablespoons Champagne vinegar. Season with salt and pepper. Drizzle 1 1/2 tablespoons of this dressing over bread and toss.
  • Place one tablespoon olive oil in a small skillet. Add garlic and scallions, and cook, stirring constantly, over low heat until softened but not colored. Add to bread and fold in. Drain currants and fold in. Add pine nuts and fold in. Drizzle salad with stock or water, and fold in. Taste a couple of pieces of bread. Add a little more vinegar, salt and pepper if necessary. Toss well, and transfer to a 4-cup baking dish. Tent lightly with foil. Do not wash salad bowl. Set salad aside until about 30 minutes before serving time.
  • Heat oven to 450 degrees. Place bread salad in oven, turn off heat, and leave for 15 minutes. Return salad to bowl. Add greens, remaining vinaigrette, and enough of remaining olive oil so bread is not dry. Toss again. Serve with grilled or roasted meat.

Steps:

4 large tomatoes (about 2 1/4 pounds), halved horizontally
8 3/4-inch-thick crusty country-style bread slices (each about 5x3 inches)
1/3 cup red wine vinegar
1 teaspoon minced canned chipotle chili*
1 garlic clove, minced
1/2 red onion, chopped
1/2 cup chopped fresh cilantro

Steps:

  • Preheat barbecue (medium-high heat). Brush 2 tablespoons oil over cut sides of tomatoes. Grill tomatoes, cut side down, just until grill marks show but tomatoes are still slightly firm, about 2 minutes. Turn tomatoes over; grill 2 minutes longer. Transfer to baking sheet. Cool slightly. Brush 2 tablespoons oil over both sides of bread slices. Grill until golden, about 2 minutes per side. Transfer to sheet with tomatoes. Cool slightly.
  • Whisk vinegar, chipotle chili and garlic in medium bowl. Gradually whisk in remaining 4 tablespoons oil. Season vinaigrette with salt and pepper.
  • Cut grilled tomatoes into 3/4-inch pieces. Cut bread into 1/2-inch pieces. Combine tomatoes, bread and onion in large bowl. Toss to blend. Let stand until bread absorbs most of tomato juices, about 30 minutes. Add vinaigrette and cilantro and toss to blend. Season salad to taste with salt and pepper.

1/2 cup (1 stick) unsalted butter
2 garlic cloves, minced
8 ounces day-old Italian bread, cut into 3/4-inch-thick slices
6 dead-ripe meaty tomatoes, cored, seeded, and cut into quarters
1/4 cup minced red onion
1/3 cup fruity extra-virgin olive oil
2 tablespoons balsamic vinegar
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh tarragon
1/2 teaspoon kosher salt
7 or 8 grindings black pepper

Steps:

  • 1. Place a small saucepan over medium heat and add the butter. When it's about half melted, throw in the garlic and cook for 3 to 4 minutes, allowing the garlic to take on a little bit of color. Remove from the heat and brush this mixture on both sides of each slice of bread.
  • 2. Oil the grill racks. Preheat your grill using all burners set on high and with the lid closed for 10 to 12 minutes.
  • 3. Place the bread on the grill, close the lid, and cook, turning once, until well marked. Careful here; depending on the moisture content of the bread, this could happen as quickly as 2 minutes (or about 1 minute on each side), but it usually takes about 4 minutes. Place the tomatoes on the grill, close the lid, and cook for a few minutes per side.
  • 4. Remove the bread to a cutting board, cut into 3/4-inch cubes, and place in a large mixing bowl. Add the tomatoes, onion, olive oil, vinegar, herbs, salt, and pepper. Toss gently with your hands to combine. Taste and adjust the seasonings if you desire. Serve at room temperature.

1 whole chicken (about 3 1/2 pounds)
1 cup shelled green peas (from 1 pound in pods), or 1 cup frozen peas, thawed
1 cup sugar snap peas, trimmed
Coarse salt and freshly ground pepper
1/4 cup plus 3 tablespoons extra-virgin olive oil
3 tablespoons fresh lemon juice
1/2 loaf rustic bread, such as pugliese, cut into 1 1/2-inch cubes (5 packed cups)
1 cup pea shoots, for serving

Steps:

  • Preheat oven to 450 degrees. Let chicken stand at room temperature 30 minutes.
  • Meanwhile, in separate batches, blanch fresh peas and snap peas (or just snap peas, if using frozen green peas) in a medium pot of salted boiling water until bright green and just tender, 3 to 4 minutes. Transfer to an ice-water bath; let cool completely. Drain. Slice snap peas in half on the bias.
  • Pat chicken dry and transfer to a large ovenproof skillet. Rub all over with 1 tablespoon oil. Season with salt and pepper. Roast until chicken is golden and a thermometer inserted into thigh (avoiding bone) registers 160 degrees, about 45 minutes. Transfer to a cutting board and let rest 10 minutes before carving. Loosely tent with foil to keep warm.
  • Skim fat from skillet; discard. Whisk lemon juice and 1/4 cup oil into skillet, then season with salt and pepper.
  • Heat broiler. Arrange bread on a rimmed baking sheet and toss with remaining 2 tablespoons oil. Season with salt and pepper. Broil, tossing occasionally, until toasted, about 2 minutes.
  • In a large bowl, combine toasted bread with both peas. Drizzle with lemon dressing and toss to coat. Arrange bread salad on a platter and top with chicken and pea shoots; serve.
