TOASTED PUMPKIN SEED BISCUITS

Toasted Pumpkin Seed Biscuits image

These golden-brown biscuits make a perfect accompaniment to soups and salads.

Provided by Martha Stewart

Categories     Bread Recipes

Number Of Ingredients 9

2 tablespoons shelled pumpkin seeds
2 cups all-purpose flour
1 teaspoon coarse salt
4 teaspoons baking powder
1/2 teaspoon cream of tartar
1 tablespoon sugar
8 tablespoons (1 stick) unsalted butter, chilled and cut into bits
2/3 cup plus 1 tablespoon buttermilk
1 egg white

Steps:

  • In a small skillet over medium-high heat, coast the pumpkin seeds, shaking the pan frequently until they are golden brown and begin to pop, about 6 minutes. Set aside.
  • Heat the oven to 400 degrees. Line an 11-by-17-inch baking sheet with parchment paper, and set aside.
  • In a large bowl, combine the flour, salt, baking powder, cream of tartar, and sugar. Using your fingers or a pastry cutter, cut the butter into the flour mixture. Combine until the mixture resembles coarse meal. Carefully mix in the buttermilk just until it is incorporated. The mixture should appear crumbly.
  • Turn out the dough onto a lightly floured clean work surface. Lightly press the dough together to form a 3/4-inch-thick disk. Using a 2-inch-round biscuit cutter, cut out 12 biscuits, and transfer them to the prepared baking sheet. Using a pastry brush, lightly coat the tops of each biscuit with egg white, and sprinkle with the reserved pumpkin seeds. Bake until golden brown, about 12 minutes. Serve warm.

Provided by Sophie Godwin - Cookery writer

Categories     Afternoon tea, Dessert, Snack, Treat

Time 32m

Yield makes 10

Number Of Ingredients 11

120g butter , softened
75g light brown sugar
75g golden caster sugar
1 medium egg
1 tsp vanilla extract
130g plain flour
3 tbsp cocoa powder
½ tsp bicarbonate of soda
50g toasted pumpkin seeds
150g dark chocolate , cut into chunks
pinch of flaky sea salt

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line two baking sheets with parchment. Cream the butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, cocoa powder, bicarb, chocolate, pumpkin seeds and ¼ tsp salt.
  • Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading. Add a pinch of flaky sea salt before baking. Bake for 10-12 mins or until firm at the edges but still soft in the middle - they will harden a little as they cool.
