Try this quick and tasty tomato and chilli soup recipe that will warm you through and fill you up - just what the doctor ordered.

2 kgs fresh tomatoes (halved)
1 tbsp olive oil
1 tsp salt
1 tbsp sugar
1 chilli (deseeded (keep the seeds in if you want extra heat))
2 tsp garlic granules
750 ml vegetable stock
3 tbsp tomato puree
Handful basil (optional)
100 ml double cream

Steps:

  • Place the tomatoes, skin side up, on a large non-stick baking tray and drizzle with olive oil and salt. Cook on 200 C/gas mark 6 for approximately 15 minutes until the skins start to turn brown.
  • Remove the tomatoes from the oven and, using a pair of tongs, pinch the top of the skin and gently lift the skins from the tomatoes and discard. If the skins do not come off easily place back in the oven for a further 5 minutes.
  • Evenly sprinkle sugar over the tomatoes and then add the tomatoes along with any juices to a blender. Add the chilli and garlic granules and blend to a smooth consistency.
  • In a large saucepan, add your blended tomatoes, vegetable stock, tomatoes puree and chopped basil. Bring to the boil and simmer gently for 10 minutes. When it is nearly ready, add the cream and salt and pepper to taste.

Steps:

  • Brown onion and ground beef in large stock pot.
  • Add the seasonings and bring to a boil.
  • Reduce heat and simmer.
  • I like to simmer this for at least an hour, then taste test.
  • The trick is to let it simmer to mix the flavors.

Steps:

  • 1) Preheat oven at 180c. Place fresh tomatoes and sliced red onion on a baking tray, drizzle with oil and season with salt and pepper. Roast in the oven for 35 minutes.
  • 2) Empty the tinned tomatoes into a large pan then add the cooked tomatoes and onion, paprika, balsamic vinegar and chilli flakes then blend with a hand blender until smooth.
  • 3) Place on the hob, bring to the boil then gently simmer for 10 minutes. Add the cream and season with salt and pepper to taste.
  • 4) Finish with cream and a handful of chopped fresh parsley.

After some looking at different recipes, I thought I would experiment with making an Indian Tomato Soup, as I once had in a restaurant. This comes close. Warning! Indian Chili powder is much spicier than your ordinary store-bought.

2 tablespoons olive oil
1 onion, chopped
2 bay leaves
1 tablespoon all-purpose flour
1 tablespoon ginger-garlic paste
1 teaspoon garam masala
½ teaspoon ground turmeric
1 tablespoon Indian chili powder
½ cup water, or as needed
1 (28 ounce) can tomato puree
1 tablespoon white sugar
salt to taste
⅓ cup heavy cream or half-and-half

Steps:

  • Heat oil in a large saucepan over medium heat; stir in onions and bay leaves, and cook about 5 minutes until the onions begin to soften. Add flour, ginger-garlic paste, garam masala, turmeric, and Indian chili powder. Cook and stir until fragrant, about 1 minute.
  • Pour the water into the pan, and bring to a boil while scraping the browned bits of food off of the bottom with a wooden spoon. Pour in the tomato puree and thin with additional water to desired consistency. Add sugar and salt; cook until sugar is dissolved and soup is hot, about 5 minutes.
  • Remove bay leaves and serve with cream if desired.

1 tbsp olive oil
1 large onion, finely chopped
1 garlic clove, crushed
1 tbsp tomato purée
1 tsp mild chilli powder
½ tsp ground cumin
400g can chopped tomatoes
500ml vegetable stock
400g can mixed beans, drained and rinsed
1 red pepper, cut into chunky dice
tortilla chips, to serve
4 limes wedges, to serve

Steps:

  • Heat the oil in a deep saucepan and fry the chopped onion over a medium heat until tender. Add the garlic and tomato purée, stirring for 1-2 mins until combined. Sprinkle in the spices and cook for another 1 min.
  • Tip in the chopped tomatoes, half fill the can with water, and add to the pan. Pour in the stock and simmer on a medium heat for 10-15 mins, uncovered. Season, then whizz using a hand blender until smooth. Add the beans and red pepper, and cook for another 15 mins until the pepper is tender.
  • Serve in bowls topped with a small pile of tortilla chips and a lime wedge.

3 cups 2% milk

2 tablespoons extra-virgin olive oil
1 small yellow onion, peeled, halved, and sliced into 1/4-inch-thick slices
1 teaspoon red pepper flakes (or to taste ( we started with 1/2 teaspoon)
2 (28 ounce) cans whole tomatoes
1 1/2 cups water
1/4 cup loosely packed fresh basil leaf
kosher salt
fresh ground black pepper
creme fraiche, for garnish (optional)

Steps:

  • Heat the olive oil in a large saucepan over medium heat until shimmering. Add the onions and red pepper flakes and cook, stirring occasionally, until the onions are translucent and very tender, about 10 minutes.
  • Stir in the tomatoes and their juices, plus the water, and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the flavors have melded, about 30 minutes. (If you're in a hurry, you can skip the simmer time -- just add a bit less water.)
  • Add the basil, season with salt and pepper, remove from the heat, and let cool briefly, about 5 minutes.
  • Set a fine-mesh strainer over a large, heatproof bowl.
  • Using a blender, purée the soup in batches until smooth, removing the small cap from the blender lid (the pour lid) and covering the space with a kitchen towel (this allows steam from the hot soup to escape and prevents the blender lid from popping off).
  • Pour the blended soup through the strainer, pressing on the solids with a rubber spatula or ladle; discard the solids. Taste the soup and season with additional salt and pepper as needed.
  • Return the soup to the saucepan and reheat on medium low until hot.
  • If you choose, serve topped with a tablespoon of crème fraîche.

35 fresh tomatoes, peeled, seeded and chopped
3 fresh hot chile peppers, seeded and chopped
4 red bell peppers, cored, seeded and cut into 2-inch pieces
1 large onion, chopped
2 cups apple cider vinegar
⅓ cup fresh lime juice, or amount to taste
1 cup white sugar
1 cup packed brown sugar
1 tablespoon salt, or amount to taste

Steps:

  • Place the tomatoes in a large pot over medium heat, and simmer 1 hour. Skim off any excess liquid or foam. Stir in the chile peppers, bell peppers, onion, vinegar, lime juice, white sugar, brown sugar, and desired amount of salt. Reduce heat to low, and simmer 3 to 5 hours until liquid reduces and thickens. Adjust seasonings to taste.
  • Remove chili sauce from heat, and skim off any foam. Pour into hot, sterilized jars, leaving 1/4 inch headroom. Adjust lids. Process for 10 minutes in a boiling-water bath.
