Beef and Grape-Tomato Kebabs image

If you like, substitute rib-eye tenderloin for the less-expensive sirloin. The skewers can be assembled in the morning and left to marinate all day in the refrigerator.

1 1/2 pounds sirloin steak (about 1 1/4 inches thick)
24 grape tomatoes
2 tablespoons olive oil, plus more for grill
2 tablespoons grainy mustard
1 tablespoon red-wine vinegar
1 tablespoon dried thyme leaves, crumbled
Coarse salt and ground pepper

Steps:

  • Slice beef into cubes (see Cook's Note). Assemble 4 long skewers, alternating 5 beef cubes (threaded perpendicular to the cut) with 6 grape tomatoes on each. Arrange skewers in a nonmetallic dish.
  • In a small bowl, whisk together oil, mustard, vinegar, and thyme. Pour marinade over skewers; turn to coat. Cover and let stand at least 2 hours in the refrigerator, turning periodically.
  • Heat grill to high and lightly oil grates.
  • Season skewers with salt and pepper and place them on grill. Cover grill and cook, turning occasionally, until grill marks are visible and meat is cooked to desired doneness, 1 to 2 minutes per side for medium rare.

3 tablespoons finely chopped shallot
3 tablespoons red-wine vinegar
2 teaspoons Dijon mustard
1/2 teaspoon sugar
1/2 cup plus 3 tablespoons extra-virgin olive oil, divided
2 pounds (1/2-inch-thick) boneless chuck blade steaks (sometimes called chicken steaks) or steak tips, gristle trimmed if necessary and meat cut into 2-inch pieces
1 pound small tomatoes such as Campari or Baby Roma (about 2 inches wide)
3/4 pound okra, trimmed, leaving tops intact
Equipment
16 (12-inch) metal skewers

Steps:

  • Marinate steak:
  • Whisk together shallot, vinegar, mustard, sugar, 1 tsp salt, and 3/4 tsp pepper. Add 1/2 cup oil in a slow stream, whisking until emulsified.
  • Toss steak with 1/2 tsp salt, then marinate in a sealed bag with 6 Tbsp vinaigrette, chilled, turning bag occasionally, at least 2 hours. Chill remaining vinaigrette.
  • Make kebabs:
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas).
  • Meanwhile, toss tomatoes and okra with remaining 3 Tbsp oil and 1/4 tsp salt. Thread tomatoes onto 3 or 4 skewers. Thread okra crosswise onto pairs of parallel skewers, leaving small spaces between pieces. Put on a tray.
  • Thread steak onto remaining skewers, leaving small spaces between pieces (discard marinade). Put on another tray.
  • Oil grill rack, then grill steak skewers, covered only if using a gas grill, turning once, about 5 minutes total for medium-rare (about 8 minutes if using steak tips). Transfer to a platter. Drizzle with some of remaining vinaigrette while hot and let stand 5 minutes.
  • Grill tomato and okra skewers, covered only if using a gas grill, turning occasionally, until tomatoes just begin to wilt and okra is tender, 8 to 10 minutes total. Transfer to platter with steak and serve with any remaining reserved vinaigrette.

2 cups tomato juice
½ cup butter
¼ cup finely chopped onion
⅓ cup ketchup
1 teaspoon dry mustard
1 teaspoon salt
½ teaspoon paprika
½ teaspoon ground black pepper
1 clove garlic, minced
1 tablespoon Worcestershire sauce
1 dash hot sauce
2 pounds beef sirloin, cut into 1 inch cubes
½ pound fresh mushrooms, stems removed
1 pint cherry tomatoes
1 large onion, quartered
1 large green bell pepper, cut into 1 inch pieces

Steps:

  • In a saucepan over low heat, mix the tomato juice, butter, onion, ketchup, mustard, salt, paprika, pepper, garlic, Worcestershire sauce, and hot sauce. Simmer for 30 minutes, remove from heat, and allow to cool.
  • Preheat grill for medium heat.
  • Thread the sirloin cubes, mushrooms, cherry tomatoes, onion quarters, and green pepper pieces onto skewers, alternating as desired. Drizzle some of the sauce over the kabobs.
  • Oil the grill grate. Arrange kabobs on the grill. Grill 10 minutes, or until meat is cooked through, occasionally turning kabobs. Baste with sauce during the last 5 minutes.

½ cup lemon juice
1 tablespoon salt
1 tablespoon onion powder

8 large large scallops
2 yellow squash, cut into 4 large chunks
2 zucchinis, cut into 4 large chunks
1 (8 ounce) package portobello mushroom caps, cut into large chunks
4 bamboo skewers, soaked in water for 60 minutes
½ cup fresh basil
2 large tomatoes, cored
1 (12 ounce) package microwaveable broccoli in cheese sauce
1 ½ cups cooked brown rice
1 slice American cheese, cut into 4 strips

Steps:

  • Whisk orange juice, lemon juice, salt, onion powder, garlic powder, black pepper, and sugar together in a large bowl to dissolve seasoning into the liquid. Add scallops, yellow squash, zucchinis, and portobello mushroom to the mojito marinade; toss to coat.
  • Cover bowl with plastic wrap and refrigerate 8 hours to overnight.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Thread onto a skewer a piece of mushroom, yellow squash, zucchini, and a scallop, respectively. Repeat so there are two of each item on the skewer; repeat with remaining skewers. Sprinkle fresh basil evenly over the skewers.
  • Carefully remove tomato insides with a spoon; discard tomato insides.
  • Pour broccoli with cheese sauce into a microwave-safe bowl; cook in microwave until broccoli is tender and the sauce is melted, 3 to 5 minutes.
  • Stir broccoli with cheese sauce and rice together in a bowl; spoon into the hollowed-out tomatoes. Place 2 strips American cheese atop the mixture in a crossing pattern.
  • Cook the skewers in preheated oven until the scallops are cooked through, 25 to 30 minutes. Remove from oven to a plate; cover with aluminum foil to keep warm.
  • Reduce oven heat to 350 degrees F (175 degrees C).
  • Bake tomatoes in the oven until the cheese is bubbling, 5 to 10 minutes. Serve with the skewers.

1 pound skinless salmon
24 cherry tomatoes
1 cup lightly packed fresh basil
1/2 cup olive oil
1 clove garlic
Salt and pepper

Steps:

  • Heat grill to high. Cut swordfish and salmon into 24 cubes (about 1 1/2 inches each); thread against the grain on 8 skewers, alternating with tomatoes.
  • In a blender, puree basil, oil, and garlic until smooth. Season with salt and pepper. Reserve half.
