Homemade Tomato Sauce image

This homemade tomato sauce is made with fresh tomatoes, slowly cooked with onion, green pepper, basil, garlic, and red wine until rich and flavorful.

10 ripe tomatoes
2 tablespoons butter
2 tablespoons olive oil
1 onion, chopped
1 green bell pepper, chopped
2 carrots, chopped
4 cloves garlic, minced
¼ cup Burgundy wine
¼ cup chopped fresh basil
¼ teaspoon Italian seasoning
2 stalks celery
1 bay leaf
2 tablespoons tomato paste

Steps:

  • Bring a large pot of water to a boil. Prepare a large bowl of ice water.
  • Plunge whole tomatoes in boiling water until skin starts to peel, about 1 minute. Remove with a slotted spoon and place in ice bath. Let rest until cool enough to handle, then remove peels and squeeze out seeds.
  • Chop 8 tomatoes and puree them in a blender or food processor until smooth. Chop remaining 2 tomatoes and set aside.
  • Heat butter and oil in a large pot or Dutch oven over medium heat. Add onion, bell pepper, carrot, and garlic; cook and stir until onion softens, about 5 minutes. Pour in pureed tomatoes, then stir in chopped tomatoes, wine, basil, and Italian seasoning. Place celery stalks and bay leaf in the pot and bring to a boil. Reduce heat to low, cover, and simmer for 2 hours.
  • Stir in tomato paste; simmer for an additional 2 hours. Discard celery and bay leaf and serve.

I found this in our daily paper, (a Matt Preston recipe) and am posting it here to make soon. I used to love the old fashioned home made sauce my Mum and Nan used to make so am wanting to try soon as I am able. This will be great served on some meat pies for winter although the recipe states that this is not an overly sweet sauce. Yield will depend on size of bottles used.

2 1/2 kg ripe tomatoes
400 g onions, peeled
10 g cloves, whole
10 g allspice berries, whole
10 g paprika (dulce)
1 garlic clove, roughly crushed
1/2 cinnamon stick
50 g salt
2 cups of clear white malt vinegar
1 1/2 cups sugar

Steps:

  • Roughly chop onions and tomatoes. Save the seeds and juice to use in the sauce. Put all the tomatoes and onions in a wide-mouthed heavy bottomed saucepan, with all the other ingredients (except the sugar and vinegar). Simmer gently for an hour until the tomatoes are nice and soft.
  • Add the sugar and vinegar and cook until it tastes suitably saucy and thickens up. To test this you can always put a dollop on a plate and see how much liquid seeps out of the cooked tomato mush. If it's only a little then the sauce is done. Taste and adjust the seasoning if required.
  • Pass through a coarse sieve so that you remove the bigger bits of skin and whole spices. Collect the sauce in a clean, sterilised bowl or jug. To help work the sauce through the sieve roll the round bottom of a ladle over the sauce in the sieve.
  • Bottle sterilised bottles and seal.

This is the best selling, fabulous tasting, world famous Tomato Relish as made by the "Boonooroo Brown Paper-bag Ladies" This is REALLY like granma used to make. If I buy "cooking tomatoes" and they are very pale, I add a small tub of tomato paste. You can add garlic, or herbs to this recipe, but I dont find it needs it. I always double this recipe, cause I am constantly being asked for it :) I use good quality brown vinegar, but the my fellow Bag Ladies use the generic stuff.

1 1/2 kg ripe tomatoes (peeled and chopped)
500 g brown onions (peeled and chopped)
2 tablespoons salt
2 cups sugar
3 teaspoons curry powder
1/4 teaspoon chili powder
1 tablespoon dry mustard
2 cups malt vinegar

Steps:

  • skin tomatoes, cut in cubes, place in bowl.
  • Peel onions, chop finely, place in separate bowl. Sprinkle each with one tablespoon salt and leave overnight.
  • Next day place tomatoes , and the onions together in a saucepan.and their liquid.
  • Add sugar, stir over low heat until sugar has dissolved, increase heat, bring to boil, boil, 5 minutes
  • Combine curry, chilli and mustard, mix to smooth paste with a little vinegar, add remaining vinegar, add to saucepan and stir to combine thoroughly. Bring to boil and boil uncovered for 50 to 60 minutes, or until thick.
  • If necessary, (and it probably is ) thicken with 3 tablespoons of cornflour mixed with a little vinegar.
  • Pour into hot sterilized jars and seal.

½ cup extra virgin olive oil
1 ½ tablespoons freshly ground black pepper
1 teaspoon chili seasoning mix
1 teaspoon salt
1 tablespoon minced onion
1 tablespoon dried oregano
1 tablespoon garlic powder
1 teaspoon finely minced fresh parsley
1 teaspoon white sugar

Steps:

  • In large saucepan over low heat, combine tomatoes, olive oil, pepper, chili seasoning, salt, onion, oregano, garlic powder, parsley and sugar. Simmer 1 hour. Serve.

  • Meanwhile, blanch tomatoes in a saucepan of boiling water until skins to start to curl and look like they are going to slide off (5-20 seconds; do not overcook). Transfer to an ice bath immediately.
  • Peel and discard skin from tomatoes and coarsely chop flesh, removing as many seeds as possible. Add tomatoes to a wide saucepan, sprinkle with sugar and 2 tsp sea salt flakes and cook over medium heat, stirring occasionally, until reduced by a quarter (40-45 minutes). Remove from heat, gradually whisk in infused oil, and season to taste. Tomato sauce will keep refrigerated in an airtight container for 5 days, or frozen for 3 months.
