HOTDISH (TATER TOT CASSEROLE)
Hotdish is an easy, one-dish dinner often served in Minnesota at such large gatherings as family reunions, potlucks or church suppers. Don't be turned off by its humble appearance; the combination of cream of mushroom soup, corn, green beans, beef and a delightful crispy potato topping (the more taters, the better!) is universally likeable.

Steps:
- Preheat the oven to 350 degrees F.
- Add the oil to a large skillet over medium heat. Add the onions and cook until soft and beginning to brown, about 15 minutes. Add the beef to the onions and cook until the meat is brown, stirring and scraping the bottom of the skillet to release the yummy brown bits, about 10 minutes. Season with salt and pepper.
- Transfer the beef and onion mixture from the skillet into a 9-by-13-inch baking dish. Scatter the green beans and corn evenly on top. Spread the cream of mushroom soup over top and top with frozen potato tots. Bake uncovered for 1 hour; the potato tots should be golden brown. Serve.

Steps:
- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package.
- Meanwhile, in 12-inch skillet, cook beef and onions over medium-high heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
- Stir in tomato sauce, tomatoes, garlic powder, salt and pepper; heat to a simmer over high heat. Remove from heat; stir in pasta and 1 cup of the cheese. Pour into baking dish.
- Cover dish with foil. Bake 20 to 25 minutes or until bubbly around edges. Sprinkle with remaining cheese. Bake uncovered 5 to 7 minutes longer or until cheese is melted.

Steps:
- Preheat the over to 400°F.
- Spray 9x13 cake pan with cooking spray.
- Put the ground meat in the bottom of the pan, spreading it evenly. Press it down.
- Spoon 2 cans of soup on top of the meat, spreading it evenly.
- Put the frozen potato nuggets on top of the soup, spreading them evenly.
- Do not cover the pan with anything.
- Put the pan in the oven and bake for 25-30 minutes.
- Take the pan out and sprinkle the cheese on top of the potatoes.
- Bake for additional 10 minutes.

BUSY DAY HOTDISH
Steps:
- Preheat the oven to 400 degrees F. Butter a 9-by-13-inch glass or ceramic baking dish.
- Heat a medium Dutch oven over medium heat. Add the butter, and once it melts, add the beef and sprinkle with 1 teaspoon salt. Cook, crumbling with a wooden spoon, until browned, 4 to 5 minutes. Add the bell pepper and scallions (saving a handful of the greens for garnish) and cook until the vegetables begin to wilt, 2 to 3 minutes. Add the paprika and several grinds of pepper, then stir to coat the beef in the spices. Stir in the corn.
- Sprinkle the flour over the beef and stir to incorporate. Cook and stir until the flour begins to toast, about 2 minutes. Add the broth and cream gradually while stirring. Bring to a simmer and cook until the sauce thickens, 3 to 4 minutes. Stir in the parsley, mustard, dill and thyme. Pour the mixture into the prepared baking dish. Arrange the curly fries in a tight layer over the top. Sprinkle with the cheese. Bake until the cheese and fries are crispy and the sauce is bubbly, about 40 minutes. Sprinkle with the reserved scallion greens and serve hot.
TOO EASY HOT DISH
I cannot take credit for this recipe, but I have made it many, many times. It is always a HUGE hit. ...and it IS too easy! I love to read, and a favorite "Murder Lite" author is Joanne Fluke. This recipe appeared in her book APPLE TURNOVER MURDER. As stated in the recipe, you can use any meat you have on hand. I have used ground chicken, ground turkey, ground beef, ground pork, and even ground sausage. I use a lot of spices in mine because my family likes spicy foods (not necessarily hot, spicy) I have also used more cheese than the recipe calls for (up to 1/4 cup). I usually top it with Parmesan Cheese before baking. Ms Fluke publishes many, many good and fun recipes in her books, and the characters become good friends.

Steps:
- Spray a 9 inch x 13 inch cake pan with non-stick cooking spray. (I have also just lightly greased my pan with cooking oil or shortening.)
- Put the meat in the bottom of the pan; spread it out as evenly as you can. Spread it out with your hands or the back of a spatula.
- Add the two cans of cream of anything soup on top of the meat. Spread the soup evenly. (Use the soup fully condensed; DO NOT DILUTE.)
- Put the frozen potatoes on top of the soup in a single layer and spread out evenly.
- Spread cheese evenly over the potatoes.
- Place, uncovered in a 400 degrees F. oven. Bake for 35 - 40 minutes, or until the potatoes on top are browned and crispy. (If you use a glass pan, it may bake a little faster.)
- NOTE: I season the meat before I add it, and I season my potatoes before adding them. I don't usually add much salt, but I do add a little to the meat and potatoes. We like LOTS of garlic, so I add garlic and onions to the meat.
TOO EASY VEGETABLE BEEF HOT DISH

MARIANNE'S HOT DISH
This is a twist on Tater Tot® hot dish. This is an easy recipe to personalize. You can use any ground meat or a mixture of beef and pork. I often use smoked Gouda cheese, Havarti cheese, and I bet Swiss cheese would be good, too. The vegetable can be easily switched to any vegetable you like (string beans, broccoli, or mixed veggies). I would use fresh or frozen rather than canned if you can.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef, onion, and garlic in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer ground beef mixture, using a slotted spoon, to a 2-quart casserole dish; retain drippings in the skillet.
- Spread cream of mushroom soup over ground beef mixture.
