Steps:
- Make a simple syrup by stirring together and bringing 2/3 cup sugar and 1/3 cup water to a boil until the sugar dissolves; set aside to cool.
- Make the sour mix by briskly stirring together the 2 1/4 cups water, lemon juice, 1/4 cup sugar, and egg white; set aside.
- Combine the ice cubes, tequila, Cointreau, lime juice, 1 ounce of the simple syrup, and 1/2 cup of the sour mix in a pitcher; stir vigorously to infuse the ice, 8 to 15 seconds.
- Run a lime wedge along the rim of an 8-ounce glass. Spread the kosher salt onto a plate and dip the glass rims in the salt to coat; add ice if desired. Strain the mixture from the cocktail shaker into the glass to serve.

TOP SHELF MARGARITAS
These top shelf margaritas use smooth Camarena silver tequila, a hint of Grand Marnier and a lime-forward sour mix for a top shelf margarita that is hard to beat. Note that the measurements for the syrup are by weight.

Steps:
- Bring water and sugar to a boil. Cool to room temperature.
- Add freshly squeezed lime and lemon juice.
- Strain and chill until cold
- Rim your glasses with lime juice and then kosher salt or your favorite rimmer (optional but recommended)
- Fill your glass/es with crushed ice. All the way to the top.
- Stir together the tequila, orange liqueur and sour mix. Start with the lesser amount and add more to taste as needed.
- Pour over the crushed ice in the glass/es and enjoy slowly.

TOP SHELF SPARKLING MARGARITA JELL-O®
For grown-ups only. This recipe is my closest attempt at duplicating the awesome flavor of a cold margarita. It's sweet, tart, salty, and packs a punch. Garnish each serving with a lime wedge. You seriously only need one of these.

Steps:
- Stir lime gelatin, lemon gelatin, and boiling water together in a bowl until fully dissolved. Chill in refrigerator for 15 minutes.
- Stir tequila, triple sec, orange liqueur, and sweetened lime juice into gelatin mixture. Gently stir in sparkling water. Ladle mixture into 24 small cups. Sprinkle each serving with lime zest. Refrigerate until set, at least 4 hours. Sprinkle each serving with margarita salt before serving.

VEGA MARGARITA
Steps:
- Make a vertical slice into the lime wedge pulp so that it sits nicely on the rim of a cocktail glass and slide it around the rim to lightly coat it in lime juice. Dip the rim of the glass in sea salt, if using, and tap off any excess. Reserve the lime wedge.
- Add the tequila, lime juice, Grand Marnier, agave and a handful of ice cubes to a cocktail shaker. Cover and shake vigorously for 15 seconds.
- Fill the garnished glass with ice cubes and strain the margarita directly into the prepared glass. Garnish with lime the wedge.

- In a small shallow bowl or rimmed saucer combine the lime zest and salt and mix well. Run the lime slice around the rim of a stemmed, wide mouthed glass to moisten it, then turn the glass upside down and press the rim in the salt mixture. Set glass aside.
- In a cocktail shaker combine all remaining ingredients and shake well to chill. Strain into the prepared glass and serve immediately.

- Blend until very slushy.
