Absolutely Delicious Green Bean Casserole from Scratch image

No cans here! Fresh mushrooms, onion, and herbs with frozen green beans, sour cream, and cheddar cheese make this a delightfully tasty twist on the traditional casserole. I developed this recipe, longing for a 'no cans' version of the classic dish. I made this one year for my husband's family at Christmas time, and now they ask for it every year! My husband asks me to make it for dinner throughout the year.

2 (12 ounce) packages frozen French cut green beans
8 ounces crimini mushrooms, quartered
3 tablespoons butter
1 small onion, halved and thinly sliced
1 tablespoon chopped fresh parsley
2 tablespoons all-purpose flour
½ teaspoon lemon zest
½ teaspoon salt
1 pinch ground black pepper
½ cup milk
1 cup sour cream
½ cup shredded Cheddar cheese
1 (2.8 ounce) can canned French fried onions

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place green beans into a saucepan and fill with about 1/2 inch of water. Bring to a boil and steam until beans are tender but still bright green, about 5 minutes. Drain and toss with the mushrooms. Set aside.
  • Melt the butter in a large skillet over medium heat. Add the onion and parsley; cook and stir until onion is tender. Whisk in flour until blended, then mix in the lemon zest, salt, and pepper. Gradually whisk in milk, stirring constantly, so that no lumps form and then stir in sour cream. Warm over medium heat until the sauce begins to bubble. Dump in the green beans and mushrooms, stirring to coat.
  • Remove from the heat and toss briefly with some of the Cheddar cheese and French fried onions, saving some of each to sprinkle over the top. Spoon into a 1 1/2 quart casserole dish and top with the reserved onions and cheese.
  • Bake in the preheated oven until the cheese melts, about 15 minutes.

2 lb green beans, trimmed
8 tablespoons unsalted butter, 1 stick, divided
2 medium white onions, thinly sliced
1 ½ lb cremini mushroom, sliced and stemmed
5 cloves garlic, sliced
3 tablespoons all purpose flour
1 cup milk
½ cup heavy cream
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 cup chicken broth, or vegetable broth
½ cup grated parmesan cheese
1 cup fried onion

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • In a large pot of salted boiling water, blanch the green beans for 3 minutes, until tender and bright green. Drain and transfer to a 9x13-inch (23x33 cm) baking dish.
  • Melt 4 tablespoons of butter in a large pan over high heat. Add the onions and cook for 8 minutes, until softened and translucent.
  • Add the mushrooms and cook for 5 minutes, until browned. Add the garlic and cook just until fragrant, about 1 minute.
  • Transfer the vegetable mixture to the casserole dish with the green beans. Wipe out the pan.
  • Melt the remaining 4 tablespoons of butter in the same pan. Add the flour and stir to combine. Cook until a golden brown roux forms, for 5 minutes.
  • Add the milk, heavy cream, salt, pepper, chicken broth, and Parmesan cheese, and stir to combine. Reduce the heat to medium-low and cook until the sauce is thickened, about 10 minutes.
  • Pour the sauce evenly over the vegetables in the casserole dish and toss until everything is well coated. Cover with foil.
  • Bake for 20 minutes, then remove the foil and bake for another 10 minutes.
  • Top the casserole with the fried onions, then serve.

This is NOT your usual plain green bean casserole. This is a recipe that started with my great-aunt and has been passed around our family for years. People tasting it for the first time ALWAYS want the recipe!

1 (10 ounce) can condensed cream of mushroom soup
3 ounces processed cheese (i.e. Velveeta®), cubed
1 tablespoon real bacon bits
1 (4 ounce) can mushroom stems and pieces, drained
2 (15 ounce) cans cut green beans, drained
1 (2.8 ounce) can French-fried onions

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Heat the undiluted cream of mushroom soup in a saucepan over medium heat. Stir in the processed cheese and bacon, and continue stirring until completely melted. Remove from the heat, stir in the mushrooms, then the green beans until evenly coated. Pour the mixture into a casserole dish, and top with the fried onions, leaving a 1 inch margin around the sides.
  • Bake for 25 to 30 minutes in the preheated oven, until heated through and bubbly. Check near the end of cooking to make sure the onions aren't getting too brown.

This doesn't have any cream but it is so good that I will eat it cold. It's sweet, tangy, and includes bacon. I shamelessly asked Pat, my mother-in-law, for the recipe before we had even left the table. I wrote it down on the first piece of paper I could find...the back of an envelope. It's now tucked away in one of my personal cookbooks. The first time I made it, I did it exactly as she told me...after that though, I started playing around with it...hope you like it enough to do the same.

1 (28 ounce) can green beans, french cut, drained
1 (28 ounce) can green beans, regular cut, drained
1 (28 ounce) can yellow beans, drained
1 yellow onion, sliced, thinly
10 slices bacon
6 tablespoons bacon drippings
6 tablespoons white sugar
6 tablespoons apple cider vinegar

Steps:

  • Put all the beans inside of a deep casserole dish, evenly distribute the thinly sliced onions on top and set aside.
  • In a sauce or saute pan, fry the bacon -- and save the drippings from it. Don't fry the bacon in the microwave because you will lose the drippings that you will need later to make the dressing.
  • Put the fried bacon on paper towels to drain. After it has become crispy, crunch the bacon into little pieces and put ontop of the bean mixture.
  • Meanwhile, drain all the bacon fat from the pan except for 6 tablespoons. I do this by pouring all the bacon drippings (without scraping any bacon bits from the pan) into a heat-proof bowl and then I measure out 6 tablespoons of the fat to put back into the pan.
  • Add the sugar and vinegar to the bacon drippings.
  • Heat this mixture to a light boil for about 2 minutes.
  • Pour this mixture over the beans in the casserole dish. You can immediately bake OR if you have the time, cover it and let it marinade overnight in the refridgerator.
  • If you have let it marinade overnight, take it out of the refridgerator about 1 hour before baking so it can return to room temperature.
  • Bake, uncovered at 350 degrees for 45 minutes.
