1 seedless orange, peeled, chopped
1/4 cup green onion slices
1/4 cup BAKER'S ANGEL FLAKE Coconut
2 Tbsp. KRAFT Lite Ranch Dressing
1 Tbsp. chopped seeded jalapeño pepper
3 pork tenderloins (1 lb. each), grilled

Steps:

  • Mix all ingredients except pork until well blended.
  • Serve over hot sliced pork.

Marinated pork chops are grilled to perfection and topped with a spicy salsa starring pineapple, mango, and applesauce.

1 clove garlic, minced
1 teaspoon chili powder
¼ teaspoon cayenne pepper
1 pod cardamom seeds
½ teaspoon water, or as needed
1 teaspoon vegetable oil
¼ cup rice wine vinegar
½ cup sugar
1 mango - peeled, seeded, and chopped
¼ teaspoon salt
½ teaspoon cilantro
2 teaspoons lemon juice
1 fresh jalapeno pepper, minced
1 ½ cups unsweetened applesauce
3 pineapple rings, chopped
1 pinch white pepper
⅓ cup soy sauce
⅓ cup rice wine vinegar
6 pork chops

Steps:

  • With a mortar and pestle, mash together the garlic, chili powder, cayenne, and cardamom seeds. Mix in enough water to form a paste.
  • Heat the oil in a saucepan over medium heat. Stir in spice paste, and cook until it begins to bubble, about 30 seconds. Stir in vinegar; cook without boiling for 2 minutes. Stir in sugar until it dissolves. Mix in mango, salt, cilantro, lemon juice, and jalapeno; simmer 20 minutes. Stir in applesauce and pineapple; simmer 10 minutes more. Season with white pepper. Place in a bowl, cover, and refrigerate until ready to use.
  • To prepare marinade, mix 2/3 cup of the salsa with soy sauce and 1/3 cup vinegar. Place pork chops in a large resealable plastic bag, and pour marinade over chops. Seal tightly, and place in the refrigerator for 1 hour.
  • Prepare grill for medium-high heat. Drain marinade from bag, and heat in a saucepan until boiling.
  • Lightly oil grill grate. Place pork chops on the hot grill. Cook 10 minutes, or to desired doneness, turning once and basting occasionally with the boiled marinade.
  • Warm remaining salsa over medium-low heat. Serve pork chops topped with the salsa.

2 teaspoons ground coriander
2 teaspoons ground cumin
1 1/2 teaspoons garlic powder
1 teaspoon kosher salt
3/4 teaspoon ground ginger
1/2 teaspoon ground turmeric
3/4 medium pineapple, peeled cored, and cut into small dice (about 2 cups)
4 large radishes, trimmed and cut into small dice (about 3/4 cup)
1/2 medium orange bell peppers (about 2/3 cup) or 1/2 medium yellow bell pepper, cut into small dice (about 2/3 cup)
1 small jalapeno, cut into small dice (optional)
3 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice, more to taste
kosher salt
fresh ground black pepper
6 boneless chicken breasts (pounded lightly to about 3/4 inches thick) or 6 turkey breast cutlets
1 1/2 tablespoons canola oil or 1 1/2 tablespoons vegetable oil

  • MAKE THE SPICE RUB:.
  • In a small bowl, mix the brown sugar, coriander, cumin, garlic powder, salt, ginger, and turmeric.
  • MAKE THE SALSA:.
  • In a medium bowl, mix the pineapple, radishes, bell pepper jalapeno, cilantro, lime juice, and 1/4 teaspoons each kosher salt and pepper.
  • Let stand while you grill the meat.
  • Before serving, adjust the lime juice, salt, and pepper to taste.
  • PREPARE THE FIRE AND THE MEAT:.
  • Build a hot charcoal fire or heat a gas grill with all burners on high for at least 10 minutes.
  • While the grill heats, lightly coat both sides of the pork chops, chicken breasts, or turkey cutlets with the oil and rub with the spice rub.
  • Clean the hot grate with a wire brush; oil the grate.
  • Grill the meat (uncovered for charcoal; covered for gas) over direct heat on the hottest part of the grill, taking care not to crowd the meat.
  • Cook until the meat forms impressive grill marks on one side, 2 to 3 minutes.
  • Turn and continue to grill (uncovered for charcoal; covered for gas) until the meat is just firm to touch and just cooked through, 1 to 2 minutes for turkey cutlets; 3 to 4 minutes for pork chops and chicken breasts, depending on their thickness. (If grilling pork, watch out for flare-ups.)
  • Transfer to a serving platter and let rest for 5 minutes.
  • Serve with the paired salsa spooned alongside or over the meat.

1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
1 medium onion, chopped
1 medium green pepper, chopped
3 garlic cloves, minced
1 cup chicken stock
1 can (20 ounces) pineapple tidbits, drained
1 cup honey barbecue sauce
1/2 cup packed brown sugar
2 finely chopped chipotle peppers plus 2 teaspoons adobo sauce
2 tablespoons reduced-sodium soy sauce
Hot cooked rice

Steps:

  • Sprinkle pork with salt and pepper. In a large skillet, heat oil over medium-high heat. Add pork; cook until browned, 4-6 minutes. Remove., In same skillet, cook onion and pepper until softened, 2-4 minutes. Add garlic; cook 1 minute. Return pork to pan; stir in chicken stock. 1 ripe mango, peeled and sliced 1/4 inch thick
2 teaspoons olive oil
¼ cup finely chopped red onion
2 tablespoons finely chopped red bell pepper
1 jalapeno pepper, finely chopped
1 lime, juiced
2 teaspoons white sugar
½ teaspoon salt
½ teaspoon ground ginger

Steps:

  • Preheat an outdoor grill for high heat. In a mixing bowl, toss mango slices with oil to coat.
  • Lightly oil grate, place mango slices on grill. Cook for 4 minutes on each side, until nicely browned with grill marks.

1 can (10 ounces) frozen nonalcoholic pina colada mix, thawed and divided
4 bone-in pork loin chops (15 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup chicken broth
1 tablespoon lemon juice
1 tablespoon lime juice
1/8 teaspoon cayenne pepper
2 tablespoons cold butter
SALSA:
2 medium kiwifruit, peeled and finely chopped
1/2 medium banana, finely chopped
1/2 medium ripe avocado, peeled and finely chopped
2 teaspoons lime juice
1 teaspoon minced fresh cilantro
1 teaspoon minced fresh basil

Steps:

  • Place 3/4 cup pina colada mix in a shallow dish. Add pork; turn to coat. Refrigerate at least 1 hour., Drain pork, discarding marinade. Sprinkle with salt and pepper. Grill, covered, over medium-high heat, or broil 4 in. from heat, until a thermometer reads 145°, about 6-8 minutes on each side. Let stand 5 minutes., Meanwhile, in a small saucepan, combine broth, remaining pina colada mix, lemon juice, lime juice and cayenne. Bring to a boil; cook, uncovered, until liquid is slightly thickened, 10-12 minutes. Remove from heat. Whisk in butter, 1 tablespoon at a time, until creamy. If needed, return pan briefly to very low heat to soften the butter. (Do not allow butter to melt completely or sauce may separate.), Mix salsa ingredients. Slice pork chops; serve with salsa and sauce.

1 1/4 pounds trimmed pork tenderloin
1 teaspoon extra virgin olive oil
2 teaspoons Cajun or blackened seasoning, or more to taste
Olive oil spray
1 tablespoon honey
1 1/3 cups papaya mango, pineapple, or any other tropical salsa, preferably fresh (I used Trader Joe's Papaya Mango Salsa)

Steps:

  • Preheat the oven to 350°F.
  • Rub the tenderloin evenly with the olive oil. Then rub the Cajun seasoning evenly over it. Let it stand for 15 minutes.
  • Heat a large ovenproof nonstick skillet over medium-high heat. When the pan is hot, lightly mist it with spray. Cook the tenderloin until it is just browned all over, 4 to 5 minutes. Remove it from the heat. Using a pastry brush or your fingers, rub the honey evenly over the tenderloin. If one end is very narrow, tuck it under to make it an equal thickness with the rest of the tenderloin. Transfer the pan to the oven and cook the tenderloin (uncovered) until there is just a hint of pink inside or a meat thermometer reaches 155°F, l6 to l8 minutes.
  • Remove the tenderloin from the oven and immediately place a sheet of foil loosely over it (not over the whole pan). Allow it to sit for 10 minutes. Transfer the tenderloin to a cutting board. Holding your knife at a 45-degree angle, slice it into thin slices. Serve immediately with salsa.
